Pistachio crusted chicken with avocado lime sauce/salsa? Anyone have recipe?

I had made from recipe in a book – I cannot locate recipe and wondered if anyone has made something similar – it was delicious.

I do not have the recipe extracted from the book, but I do have my own recipe for this that I make. It may not be exactly like the one you made, but it is a versatile recipe (I will show how else you can use it as other chicken recipes), and it’s delicious!

PISTACHIO CRUSTED CHICKEN W/AVOCADO SALSA

FOR THE CHICKEN

1 lb. of boneless skinless chicken breasts
4 large egg whites (beaten)
flour for dredging
kosher/sea salt
fresh ground black pepper
1 Tablespoon chopped fresh sage leaves
2 Tablespoons chopped fresh thyme leaves
The zest of one lemon
1 c.pistachios (chopped finely, or put in a food processor)

Get three pie plates:

In the first one put flour.

In the second one: Put the beaten egg whites.

In the third one: Put the pistachios, lemon zest, thyme and sage.

Salt and pepper both sides of the chicken breast, dredge in flour, dip in egg white and coat in the pistachio mixture.

Drop in a skillet that is heated with a few drizzles of olive oil and brown on both sides. Put the chicken breasts in a baking dish and bake at 350 degrees for 20 minutes.

(HERE IS THE VARIATION)…. in that third pie plate, on a night when you are not in the mood to cook pistachio crusted chicken, you can put flaked coconut. On another night, you can put Italian bread crumbs and bake in the oven with some mozarella cheese on top and serve with marinara. This is a good staple recipe to have to do lots of different things.

AVOCADO SALSA

3 large, ripe avocados
1/2 cup of finely chopped fresh cilantro
the juice and zest of 1 small lime
kosher/sea salt and fresh ground pepper to taste
1 splash of jalapeno sauce (if you like it spicy, this is optional)

Mash together to desired consistency and serve on pistachio chicken.

Add a wooden spoon, spatula, and your favorite cookie recipes written on recipe cards. Wrap the completed gift in a cello bag, tied at the top with curly ribbon. If desired, tie a decorative cookie cutter in with the ribbon and add a gift card.

Barbecue Theme

This is a particularly nice idea for men on Father’s Day, birthdays, or anniversaries. It’s also a nice gift to take if you are invited as a guest to a barbecue or housewarming party. Use a container that can double as a cooler such as a metal or plastic basin, tray, or a pail. An unbreakable tray with an edge works well, too. Include gifts items such as bbq tools, an apron, an oven mitt, cookbook, or citronella candles. Barbecue sauces, marinades, rubs, hot sauce, and cans of soda or beer are all necessary items for a cookout.

Mexican/Southwestern Theme

Anyone who enjoys spicy food would be more than happy to receive an assortment of Mexican food items. The best tip I can gift you in creating this theme gift basket is to make it spicy and make it colorful. Place an assortment of spices, dry or canned beans, rice, bags of chips, and jars of salsa in a basket or a colorful bowl or serving tray. Add some fresh fruit such as avocados, lemons, limes, and pineapple. You may want to add a cookbook for Mexican food or beverages. Line the container with bright colored terry towels and top off your gift basket with some fresh peppers. Don’t forget the makings for margaritas.

Does anyone have a recipe for avocado pie? I posted this before, rec’d answers then my pc crashed .?

I tried it at a Mex rest and it was very good!
One recipe I glanced at before had cr. cheese too, can you find that one for me?

INGREDIENTS:
1 (9 inch) prepared graham cracker crust
2 avocados – peeled, pitted and pureed
1/2 cup lemon juice
1 (5 ounce) can sweetened condensed milk

DIRECTIONS:
In a medium mixing bowl combine avocado, lemon juice, and condensed milk. Blend well and pour into graham cracker crust. Chill before serving. Garnish with whipped topping.

FLUFFY LIGHT MEAT LOAF

Ingredients

1 lb. Ground beef

1 can (6 oz.) tomato paste

1/2 c. Oatmeal

3 Tbs. Finely chopped green pepper or celery

2 Tbs. Bran

2 Tbs. Wheat germ

1 sm. Onion, finely chopped

1 Tbs. Freshly chopped parsley

1 Egg, lightly beaten

1/4 Tsp. Finely chopped garlic

1/2 Tsp. Salt

1/4 Tsp. Freshly ground pepper

Chili sauce

Directions

Preheat oven to 350 degrees. Combine all loaf ingredients, using your hands. Form into loaf and place in 9 X 5 X 3 loaf pan cover with layer of chili sauce (or ketchup if desired) bake 50 minutes to 1 hour. (Do not over bake since part of the secret of fluffiness is shorter cooking time.) Serve the meat loaf sliced and hot. Serves 4. Variation: Half ground veal and half ground beef can be used for the meat loaf – lower in calories.

CHICKEN SALAD PICANTE

Ingredients

4 ea. Breasts, chicken, halves, broiler/fryer, boned, skinned

1/2 c. Dressing, bottled, ranch, fat free (works well with similar chicken salad recipes as well)

2 Tbs. Sauce, picante

1 Tsp. Chili powder, divided

1/4 Tsp. Salt

1 Tbs. Oil, vegetable

4 c. Greens, salad, mixed, torn into bite-sized pieces

1 med. Avocado, peeled, halved, pitted, cut into horizontal slices

1 med. Onion, red, thinly sliced into rings

2 med. Tomatoes, cut in 8 wedges each

2 Tbs. Cilantro, chopped, OR

2 Tbs. Parsley, chopped

Directions

In a small bowl, mix together salad dressing, picante sauce, and a 1/2 Tsp. of chili powder; set aside. Mix the remaining 1/2 Tsp. of chili powder with the salt and sprinkle the mixture over the chicken. Heat the oil to a medium-high temperature in a fry pan. Add chicken and cook, turning, about 8 minutes or until brown and fork tender. Remove the chicken to a cutting board and cut horizontally into 1/2-inch slices.  Place one-fourth of the lettuce on each of four serving plates. On each plate, arrange one sliced chicken breast half over the lettuce. Place avocado, onion, and tomatoes around the chicken. Drizzle 2 Tbs. of dressing over each salad. Sprinkle salad with cilantro or parsley, if desired (works well with many light recipes). Source: Chicken Cookery – 1994. LIGHT PUMPKIN PIE

Ingredients

3 Beaten eggs

1/2 c. Firmly packed brown sugar

1 Tbs. Honey

1 Tsp. Ground ginger

1 Tsp. Cinnamon

1 9-inch deep-dish frozen pie, shell, thawed

1 can (16 oz.) pumpkin

6 pkg. Envelopes low-calorie sweetener

1 Tsp. Nutmeg

1 1/2 c. Nonfat milk

Whipped topping

Orange peel

Directions

Preheat oven to 350 F. 2. In a medium bowl, combine all but milk.

Gradually stir in milk. Spoon mixture into pie shell and bake for 70-80 minutes or until knife inserted halfway between centre and edge comes out clean. Let cool, then garnish each slice with 2 Tbs. of whipped topping and grated orange peel.

Avocado Canapes Stuffed with Goat Cheese

10 pine nuts
4 Tablespoons fresh goat cheese
1 1/2 Teaspoons finely chopped roasted red bell pepper
Coarse salt and freshly ground pepper
Juice of 1 lime
1 Teaspoon olive oil
1 avocado peeled, halved, seeded, and very thinly sliced lengthwise (about 20 slices)

Preheat oven to 350 degrees;. Place pine nuts on a baking sheet; bake until golden brown and fragrant, about 5 minutes. Chop nuts; set aside.

Arrange five 8-by-8-inch sheets plastic wrap on work surface. Be sure they are smooth and free of wrinkles.

In a small bowl, stir together pine nuts, goat cheese, and red bell pepper; season with salt and pepper. Set aside.
Place 4 overlapping slices of avocado on each piece of plastic wrap. Combine lime juice and 1 teaspoon olive oil in a small bowl; brush mixture on avocado.

Working with one avocado portion, top with 1 tablespoon goat cheese mixture; bring together corners of plastic wrap, and twist tightly, shaping the avocado into a ball. Continue to twist until plastic wrap breaks, releasing canape. Repeat with remaining avocado

Fasting has many health benefits, that have been confirmed over the centuries by both Muslim and non-Muslim scientists:

Consuming excess food at Iftar or Suhoor will create many health problems, and most importantly, this lifestyle contradicts the essential requirements for fasting and the spirit of Ramadan…

 

Allah SWT said in the Quraan “Eat and drink, but do not be excessive – indeed, He (Allah) does not love the excessive.” We are taught to eat small moderate meals, and this does not apply only in Ramadan, this rule should be applied for all months of the year.

 

So what can we do this Ramadan to  gain all these health benefits, and to follow the Quraan and profit Mohamed PBUH Sunna and advices? The answer is, keep it SIMPLE, and plan for your meals in advance! Let’s look at some ideas on planning for healthy meals in Ramadan.

 

SUHOOR

Suhoor is a very important meal during Ramadan, it is important to choose the kind of food that will give our bodies the necessary nutrients to get through the day. Make it a light Suhoor and have small amount of the following food:

Green salad with extra virgin olive oil.

Raw Almonds for energy.

Goat cheese, goat milk or goat yogurt.

Humus and Beans.

Whole Grains bread.

Fresh Fruits juice, 

Green juice.

Drink lots of Water.

 

IFTAR

1- Dates, It is Sunna of Prophet Muhammad, PBUH to break your fast on 3 Dates, I will share some of the health benefits of dates soon inshaa Allah.

2- Drink Water, and it even better if you add sea salt and lemon to your water. 

3- Fresh Fruits Juice, it is a great sources of energy and natural sugars.

4- Homemade Vegetable/Green Soup, green soup help maintain water and mineral balance in your body.  

 

DINNER

Your dinner should be well-balanced to maintain good health, sustain an active lifestyle and attain the full benefits of Ramadan. Your dinner should contain food from each food group, Fruits, Raw Vegetables, Quality meat, Fish, Good Fat and Good Carbohydrates.

 

70% of your meal should be Raw Vegetables and Fruits, which is water rich food, it have more nutrition, more minerals and vitamins. 

Vegetables: tomatoes, carrots, beets avocados, red peppers, cucumber, green paper, english cucumber, green onion, celery, lettuce, parsley, broccoli.

Leafy greens: kale, chard, swiss chard, spinach, collard green, mix green, and all dark green vegetables.

Vegetables sprouts, they are 10 to 30 times more nutritious than all vegetables: clover, wheat grass, sunflower greens, Mung Bean sprouts, Sunflower sprouts.

Whole Fruits: Apples, berries, oranges, bananas, grapes…

 

10% Protein: Quality meat or fish.

Buy meat from good and local source, shop for meats that are guaranteed to be from grain-fed, free-range animals which have not been given antibiotics or hormones. You may pay a little more for it, but trust me, you will save money in the long run with fewer trips to doctors.

Lamb, Goat meat, Salmon, Tuna and all see food are better choices, but don’t buy Farm raised see food.

Beans are also a good source of protein, minerals, vitamins, and good source of dietary fiber, as well. 

 

10% Good Fats and Oils: 

Omega 3 fatty acid, you can find it in almonds, walnuts, flex seeds, soy beans, salmon, tuna, olive oil, flax seed oil and fish oil.

 

10% Good Carbohydrates:

Carbohydrates are good source of energy, Whole Grains breads and pasta, Potatoes, nuts, seeds, beans.

 

Eating healthy is very easy and simple, you just need to practice it, and Ramadan is the best time to to that.

Simple Recipes for Skin Care

Puffed Eyes

Cut avocado into slices and place it under each eye and relax with it for next 20 minutes. The changes would be remarkable.

Eye Cream

Make an eye cream by mixing 5 drops of almond oil in 3 ripe slices of avocado. Blend this mixture and dab it around your eyes. Keep it for five minutes then rinse.

Another method of making the eye cream is by using 1/4 cup avocado oil with 1/4 cup aloe vera gel. You could also use apricot kernel, grape seed or sesame oil.

Facial Mask

This facial mask is useful for dry skin. Mash half avocado and apply it leisurely on your face. Keep it for 15 minutes and then rinse it off with warm water.

Make a paste of ½ ripe avocado mixed with 1 tsp vegetable oil. Apply this paste on a washed and clean face. Leave it for 15 to 20 minutes. Rinse it with warm water. This masque is very good for dry skin.

Harry’s Easy Salsa at Home

3 Roma tomatoes, chopped

1 medium onion, chopped

Just a little cilantro – Unless you like cilantro a lot, then add more

Pinch of fresh basil

2 cloves garlic

Juice from a whole lime

1 tomatillo, chopped

1 jalapeno pepper with the seeds out – Unless you like it hotter, then leave the seeds in.

Salt and pepper as you like it ;-)

Mix all the ingredients in your food processor and process until finely chopped. Makes about 2 cups of yummy fresh salsa.

Taco Bell Green Sauce?

So I heard about secret Taco Bell green sauce. I ordered it, but the cashier said that she had never heard of it. They put avocado ranch sauce on. It’s nothing special. Is this the famed secret green sauce?

I live in Canada so I think perhaps it might be an American thing.

i have been eating green sauce at taco bell for 15 years. i always order a been burrito with green sauce. no it is not avocado ranch it is more like that bottled green taco sauce. el paso or pace, i cant remember who makes it. the taco bell in your area must not have it. that sucks because it is good. yes it may be an american thing. i am in california

LIGHT PUMPKIN PIE

Ingredients

3 Beaten eggs

1/2 c. Firmly packed brown sugar

1 Tbs. Honey

1 Tsp. Ground ginger

1 Tsp. Cinnamon

1 9-inch deep-dish frozen pie, shell, thawed

1 can (16 oz.) pumpkin

6 pkg. Envelopes low-calorie sweetener

1 Tsp. Nutmeg

1 1/2 c. Nonfat milk

Whipped topping

Orange peel

Directions

Preheat oven to 350 F. 2. In a medium bowl, combine all but milk.

Gradually stir in milk. Spoon mixture into pie shell and bake for 70-80 minutes or until knife inserted halfway between centre and edge comes out clean. Let cool, then garnish each slice with 2 Tbs. of whipped topping and grated orange peel.

My son’s school lunch got him suspended! Why?

I know that the school corporation has a wellness policy, so I pack him nutritious food grown locally. I packed him a tofu and avocado sandwich with some carrots. He gets milk from the lunchroom.

He was sent home with the half-eaten lunch and was told that it was “inappropriate for school.” Now, I know that it is healthier than the next kid’s lunch, but I’m shocked that they would discriminate against healthiness! Oh, he ate the sandwich, but here is what they sent home:

I am outraged. I can’t believe he has to stay home because I packed him a healthy lunch. I’m strongly considering going to the school board or just giving up and home schooling him. What should I do?

I had the exact same thing happen. My daughter had cookery at school and they were to make chilli con carne. We went out shopping for the mince beef, onions, spices, rice and of course some lovely fresh red chillis.

My daughter went off to school as usual but by 11am she was back home in tears. Apparently the teacher had objected to one of her ingredients,

FLUFFY LIGHT MEAT LOAF

Ingredients

1 lb. Ground beef

1 can (6 oz.) tomato paste

1/2 c. Oatmeal

3 Tbs. Finely chopped green pepper or celery

2 Tbs. Bran

2 Tbs. Wheat germ

1 sm. Onion, finely chopped

1 Tbs. Freshly chopped parsley

1 Egg, lightly beaten

1/4 Tsp. Finely chopped garlic

1/2 Tsp. Salt

1/4 Tsp. Freshly ground pepper

Chili sauce

Directions

Preheat oven to 350 degrees. Combine all loaf ingredients, using your hands. Form into loaf and place in 9 X 5 X 3 loaf pan cover with layer of chili sauce (or ketchup if desired) bake 50 minutes to 1 hour. (Do not over bake since part of the secret of fluffiness is shorter cooking time.) Serve the meat loaf sliced and hot. Serves 4. Variation: Half ground veal and half ground beef can be used for the meat loaf – lower in calories.

CHICKEN SALAD PICANTE

Ingredients

4 ea. Breasts, chicken, halves, broiler/fryer, boned, skinned

1/2 c. Dressing, bottled, ranch, fat free (works well with similar chicken salad recipes as well)

2 Tbs. Sauce, picante

1 Tsp. Chili powder, divided

1/4 Tsp. Salt

1 Tbs. Oil, vegetable

4 c. Greens, salad, mixed, torn into bite-sized pieces

1 med. Avocado, peeled, halved, pitted, cut into horizontal slices

1 med. Onion, red, thinly sliced into rings

2 med. Tomatoes, cut in 8 wedges each

2 Tbs. Cilantro, chopped, OR

2 Tbs. Parsley, chopped

Directions

In a small bowl, mix together salad dressing, picante sauce, and a 1/2 Tsp. of chili powder; set aside. Mix the remaining 1/2 Tsp. of chili powder with the salt and sprinkle the mixture over the chicken. Heat the oil to a medium-high temperature in a fry pan. Add chicken and cook, turning, about 8 minutes or until brown and fork tender. Remove the chicken to a cutting board and cut horizontally into 1/2-inch slices.  Place one-fourth of the lettuce on each of four serving plates. On each plate, arrange one sliced chicken breast half over the lettuce. Place avocado, onion, and tomatoes around the chicken. Drizzle 2 Tbs. of dressing over each salad. Keep in mind, I’m only 12 so this may not sound too tasty. I just want to get some opinions. Make it and try it out if you want.

Cubed avocados
1/2 cup of balsamic vinger
tsp. salt
tsp. pepper
tsp. sugar
half a lemon juice and zest
1/2 tbs of chopped cilantro

blend all above ingredients until smooth

toast a piece of focatia bread and butter. then cut it in half.

grill a chicken breast, then cut it into slices. spread the sauce on both pieces of bread, then lay the chicken slices in between.

Raw foodist: What do you crave?

Whether it be a food that is allowed in your diet and you eat a lot of, for example- avocados.

Or a food you really want but is not technically a raw food.

The first thing of thought of when I saw the title of this was avocados, then I clicked into your question and you show avocado as an example. Anyway, I do crave them with cottage cheese and vine ripe tomato’s, I top them with fresh ground pepper and garlic salt….yummy!

My biggest problem when I first learned about raw back in 2007 stemmed from information overload. There was just so much advice out there about raw foods and so many different educators…all providing very different guidelines for living the raw lifestyle. And all I wanted to know was which raw diet was best and what I had to do to implement it!

Fortunately for me, I stumbled upon the healthiest diet of all rather quickly. Fortunately for you, I can explain what that diet is just as quickly, with 3 easy guidelines! So let’s get started…

#1: Eat More Sweet Fruit

I want you to think back to a time when you ate some delicious fruit. Maybe it was an exotic mango, a perfect peach, or a juicy orange. Whatever it was, I’m sure it was scrumptious, sweet, and satisfying. And the best part? No guilt! In fact, you probably felt pretty happy with yourself for choosing such a healthful snack over greasy chips or fatty cookies. Now imagine experiencing that satisfaction, both with yourself and your food, every single day… Pretty sweet, huh? How can you experience this? By simply eating a diet based on raw, sweet fruit.

Fruit is full of water-soluble fiber, packed with essential vitamins and nutrients (not too mention the oh-so-popular antioxidants and phyto-nutrients), calorically dense and water-rich, and provides easy to digest healthy sugar in its simplest form.

#2: Don’t Forget Your Veggies!

But it isn’t all about the sweet stuff. A well-rounded, healthy raw diet also incorporates moderate amounts of mineral-rich vegetables. These include tender leafy greens like romaine and non-sweet fruits like tomatoes and zucchini. Not only do these foods provide some extra variety (and maybe a nice break from all the sweetness) in your diet, they also provide higher levels of necessary minerals than their fruity friends.

#3: Hold It On the Fat

Although many raw foodists eat and promote a fatty diet that rivals any standard cooked diet, this is *not* optimal. While raw overt fats like avocados and nuts are healthier than their cooked versions, too much fat in a diet still results in many health issues, including but not limited to heart disease, arthritis, and even depression.

This is certainly not the makings of the best raw diet. The best raw diet does contain these healthy raw fats, but in a limited quantity. For optimal nutrition, the bulk of your calories should come from low fat sweet fruit, not fat.
