in spite of being high in fat, is avocado a healthy food?

what are its nutritional values?
be careful what you put here, because it may make me want to eat guacamole all day every day :) )

Thanks

Don’t make Guacamole, thats not real good for u, but plain old Avacado is. Put it on a salad, cut it in 1/2 and put cottage cheese in it. That makes a great lunch. They are good for u. I do not know the nutritional values, but the Dr. told me to eat them when I was on a diet. I had 3 a week.

AVOCADO BANANA BERRY SMOOTHIE

You can throw just about anything in a smoothie to enhance its flavor such as honey, tofu, jams, any combination of fruits, peanut butter, juices, etc., but keep in mind it will effect the nutritional values.

Half a ripe avocado

1 to 1 1/2 frozen bananas

4 to 5 frozen or fresh strawberries

Splash non-fat soy or other nut milk

Pinch cardamom

Pinch allspice

Whatever else strikes your fancy. . . Nuts, fruits, spices, etc throw all ingredients

into a blender and blend until desired texture is reached.

I prefer it smooth, but some like a chewable drink. Very, very delicious! Serves: 1.

Good to Know:

Avocado is rich in magnesium that reduces risk of excess belly fat, high blood pressure, high cholesterol and high blood sugar- the symptoms of metabolic syndrome.

One Avocado delivers a whooping 11 grams of fiber.

1/4 avocado = 4 grams

raw avocado chocolate mousse

raw avocado chocolate mousse
What would go well/be the best way to enjoy this raw chocolate mousse (Jennifer Corbleet Raw Food Made Easy)?

It is mejool dates, sweeterner, vanilla, mashed avocado, cocoa and water mulched up.

I’ved tried it and it makes a good chocolate mousse but it’s a bit plain on it’s own.

She has a recipe for Chocolate Tart with strawberries, putting the chocoate mousse in an almond or coconut crust and fresh strawberries over the top.

I also recently made a cashew coconut pudding recipe from 2 cups cashews, water, dates and dried coconut. It feels like it needs something to go with it.

If I made the chocolate mousse tart with strawberries and used the cashew coconut pudding on it would that taste good? Or would the Chocolate mousse tart with strawberries taste better just on its own?

Any other better ideas of how to make chocolate mousse better/more interesting?

I like to have raspberries with chocolate mousse, I think the flavors go great together. Perhaps you could put some nuts or chocolate chips in it when you make it, or tiny bits of orange? Another idea would be to make a pie with the mousse for filling, or perhaps you could put it in crêpes?

Also, I think the Chocolate Tart sounds tasty, and I think it would taste nice with the pudding.

Christmas is a time when we think of family get-togethers and abundance. It is memory lane for most of us, enjoying friends, memorable times and good comfort, traditional foods. But the weeks after the holidays are usually weight gains, health problems from too many sweets and food.

Today white sugar, white flour, dairy products, trans and saturated fats, refined cars and excess calories are on the “no-no” list … and with the holiday times it feels as if the cakes, cookies and candies will become obsolete. And we begin to feel deprived and panic stricken. After all, it is a long-time tradition.

One answer is to make some raw food desserts and take them to get-togethers and family meals. Use nuts, dried fruits, and avocadoes instead of white flour and white sugar. They have a lot of flavor, looks and are good for you. Oh yes … and they are easy to put together. Jenny Cornbleet has a book out called “Raw Food Made Easy for 1 or 2 People”. In it there are desserts – cakes, cookies, fruit crisps, pies, tarts, puddings, mousses, shakes, and ice cream recipes all raw – for holidays and all meals. Guess what? They taste better than their sugar laden counterparts.

One recipe is for a “Flourless Chocolate Cake with Raspberry Sauce” which calls for 1 1/2 cups raw walnuts, dash of salt, 8 pitted medjool dates, 1/4 cup unsweetened cocoa or carob powder, 1/2 tsp vanilla extract, and 2 tsp water. For the raspberry sauce you use 1 cup fresh or frozen raspberries (thaw and drain if frozen) with 1/4 cup pitted medjooy dates, soaked for 30 minutes and drained. Place the walnuts and salt in a food processor with the S blade and process until finely ground. Add dates, cocoa powder, and vanilla … process until mixture becomes sticky. Add water and process briefly. Transfer to a serving plate and form a 5 inch round cake. Place the raspberries and dates in a blender and mix until smooth, pouring over the cake just before serving.

You do not have to give up all your comfort foods, just find a healthier recipe for it. You will find the dessert to be much tastier. But should you choose to nibble on a few old foods, do so in moderation, do not go overboard, and remember to wait and let your stomach digest properly before the next meal.

Can someone freeze guacamole dip?

I have like way to many very rips avocados
can i make dips and freeze it ? Do you have a recipe?

Here is info on freezing. Freezing a dip would depend on the ingredients you use. It needs to be a recipe with just lemon or lime juice and dry ingredients. If you use many of the other usual ingredients for guacamole, they won’t freeze well.

Freezing Avocados

You can freeze mashed fresh, ripe avocados if you want to have an “emergency supply” of avocados on hand for guacamole.

To freeze, mash the avocados with a fork. Add one teaspoon lime or lemon juice per avocado and mix well. The best way to freeze the prepared mashed avocados is to use a freeze-weight zip lock bag. Fill the bag with the mashed avocado. Remove the air from the bag and then zip closed and freeze.

Thaw the frozen avocados in the refrigerator or place the container in a bowl of cool water to accelerate thawing.
______________________________

Freezing Guacamole
You can freeze mashed avocados but it best not to freeze guacamole with other ingredients such as tomatoes or tomatillos. Those ingredients tend to get mushy and watery when thawed. So if you want to have an “emergency supply” of avocados on hand for guacamole then start by simply freeze fresh, ripe avocados.

avocado gelato

The world is full of ice cream lovers. With flavors ranging from Strawberry, Chocolate Chip, Vanilla, Pistachio, all the way up to Avocado, it is not hard to see why ice cream has become one of the most popular treats the world over.

Imagine having the power to create a fresh bowl of your favorite Strawberry and Mango ice cream, made out of fresh strawberries, mangoes and cream; or a delightful chocolate and mint gelato; or even a raspberry sorbet made out of fresh raspberries. Imagine indulging in a huge bowl of ice cream without ever feeling guilty about all the calories that you had just consumed. All this and more is possible with your very own ice cream maker. An ice cream maker makes the perfect gift for any occasion, whether it is for your friend, your officemate, or even yourself.

There are different ice cream makers to choose from, considering how much you are willing to spend on an ice cream maker, what type or model you want, and how long you are willing to wait for your ice cream. When choosing an ice cream maker for yourself or for that lucky person, you have to keep in mind that there are two types of ice cream machines for home use out in the market today. One is the manual type and the other, the electric type.

The manual machine is obviously harder to use compared to the electric type. It is a lot cheaper than the electric ice cream maker, but it requires a whole lot of elbow grease. It consists of two bowls, an inner bowl and an outer bowl, and a hand-cranked mechanism that turns a paddle, which in turn, goes through the ice cream mixture. The difficult part about using the manual ice cream maker is that you have to constantly turn the hand-cranked mechanism in order to achieve your desired ice cream consistency. A mixture of salt and ice contained in between the inner and outer bowls freezes the ice cream mixture. After a short period of time, the ice melts and you end up with salty water that you have to replace with another batch of salt and ice. In short, a manual ice cream machine is time consuming, messy, and not to mention difficult to operate.

If you want to enjoy hassle-free ice cream, the best thing to do, other than buying ice cream from the store, is to get yourself an electric ice cream maker. All you have to do is plug the machine in an outlet, press a few buttons (depending on the model) and in a few minutes, you have delicious ice cream. When you do decide to buy an electric ice cream maker, you have the option of choosing one of three types of electric ice cream makers. One is a counter-top machine, which requires the machine’s bowl to be placed in a freezer prior to use. Another, a freezer-unit machine, which is placed inside your refrigerator’s freezer as it operates. Lastly, a bigger, more expensive machine that has a built-in freezing mechanism that doesn’t require its bowl to be pre-chilled and does not have to be placed in your refrigerator’s freezer.

If you can afford it, an electric ice cream maker is the best choice. But if you don’t have the luxury of splurging on an electric model, a manual machine works just as well. You’ll just have to develop the skills to operate it.

If the word “lunch” has become synonymous with “sandwich”, it’s time to get out of your rut! There are lots of low carb lunch possibilities.

Salads

We’re all familiar with the old fashioned chef salad –cut up cold cuts, cheese, and hard-boiled egg on a green salad (usually iceberg). But meal salads have become much more popular in restaurants and at home, in a variety limited only by the imagination.

Low carb “meal salad” tips:

  • Use lots of dark green salad greens, which are much richer in nutrients than the traditional iceberg lettuce. Now that bagged greens are in every grocery store, salad making has never been more convenient.
  • If you are using bottled dressings, check the label for carbs. Many “light” dressings have sugar added to make up for the loss of flavor when oil is reduced.
  • Choose dressings with oils high in monounsaturated fats, such as olive oil.
  • It is very easy to make dressings yourself – it literally can take less than a minute. Whip up an oil-based one in the bottom of the bowl, put the salad on top, and toss. For a creamy dressing, just mix some of your favorite herbs and spices into some mayonnaise. Thin down with water or lemon juice.

Examples of Salads include:

  • Greek salad (put extra protein on, such as hard boiled eggs, chicken, or seafood)
  • Chicken (cooked without breading, of course) atop salad greens, chopped snow pea pods, chopped red pepper, and walnuts
  • Low carb cole slawwith chicken, pecans, and bits of apple
  • Tuna salad with greens, tomato and avocado
  • Salmon on top of greens, blanched green beans, mushrooms, and sprouts
  • Chicken with greens, cucumbers, pecans, and crumbled blue cheese
  • Steak with greens, thinly sliced red onions, green pepper, and mushrooms

Roll ups and Wraps

There are three basic kinds of low carb roll ups:

  1. Lettuce: Roll “mushy” stuff, such as tuna, salmon, egg, or chicken salad up in a large lettuce leaf, along with anything else that sounds good (as long as you don’t overload it). (A similar alternative is to use the “protein salad” as a dip, and use celery, Bell pepper, cucumber, etc as dippers.)
  2. Meat: Roll cheese and veggies up in a slice of roast beef, ham, etc.
  3. Low Carb Tortillas: Roll whatever you want up in a low carb tortilla and make a “wrap”. My husband eats hot dogs this way.

Soups

Soups are very versatile, and can provide a vehicle for leftover meats and vegetables. Most soup recipes can be low carb if you just take out the starch (noodles, rice, potatoes). There are a few low carb canned soups, but the vast majority are not – you have to read labels carefully. Make up a big pot of soup and freeze portions.

Leftovers

The easiest lunch of all – just make extra at dinner and have it for lunch the next day!

More Advices:

  • Pack lunches the night before and store them in the refrigerator overnight.
  • Purchasing lunch foods in larger containers instead of single-serve packages costs less.  Buy yogurt and applesauce in larger containers and spoon it into a smaller container for lunch.  Buy quality bulk bin items, including fresh-ground peanut butter, nuts, dried fruits, and granola.
  • Test out new lunch box recipes at home before they make it into the lunch pail.
  • Watch the temperature. Harmful bacteria grow best between 40 degrees F and 140 degrees F, so it’s important to keep perishable foods outside this danger zone as much as possible.
