Some of the food sources of fatty acids are fish and shellfish, flaxseed (linseed), soya oil, canola (rapeseed) oil, hemp oil, chia seeds, pumpkin seeds, sunflower seeds, leafy vegetables, and walnuts.

Essential fatty acids play a part in many metabolic processes, and there is evidence to suggest that low levels of essential fatty acids, or the wrong balance of types among the essential fatty acids, may be a precursor in a number of illnesses.

Plant sources of omega-3 do not contain eicosapentaenoic acid and docosahexaenoic acid. This is thought to be the reason that absoption of essential fatty acids is much greater from animal rather than plant sources.

EFA content of vegetable sources varies with cultivation conditions. Animal sources vary widely, both with the animal’s feed and that the EFA makeup varies markedly with fats from different body parts.

The primary source of omega6 fatty acids in the diet is linoleic acid from the oils of seeds and grains. Sunflower, safflower and corn oil are particularly rich sources of linoleic acid, which is at the root of the omega6 fatty-acid family. Evening primrose oil and borage oil are high not only in linoleic acid, but the omega6 derivative gamma-linolenic acid (GLA). Avocado is 15-20% oil (mainly monosaturated), but also high in linoleic acid. (Avocado has the highest fat content and the highest fiber content of any fruit.)

Alpha-linolenic acid, the primary dietary source of omega3 fatty acids in the diet, is frequently found in green leaves. The leaves and seeds of the perilla plant (widely eaten in Japan, Korea and India) are the richest plant source of alpha-linolenic acid, although linseed oil is also a rich source. Fish oil contains very little alpha-linolenic acid, but is rich in the omega3 derivatives EPA and DHA. Fish are at the top of a food chain based on phytoplankton (algae) that manufacture large amounts of EPA and DHA. Nonetheless, fish can be high in toxic mercury.

It has been suggested that thousands of years ago the diet of human hunter-gatherers consisted of approximately equal parts of omega3 and omega6 essential fatty acids. However, Since the beginning of agriculture ten thousand years ago there has been a steady increase in omega6 at the expense of omega3 fat in the human diet. This process accelerated about 50 years ago as cattle began to be fed increasingly on grains rather than grass. Recommendations by nutritionists to eat margarine rather than butter (polyunsaturated rather than saturated fats) increased the trend toward omega6 and trans fat consumption. Currently, the ratio of omega6 to omega3 fatty acids in the American diet is 7to1 or more. There are good reasons to believe that this imbalanced essential fatty acid ratio has led to increased cancer, heart disease, allergies, diabetes and other afflictions.

The low death rate from coronary heart disease among Greenland Eskimos led scientists to suspect that high fish consumption might be protective. A 20-year study of 852 middle-age Dutch men showed that coronary artery disease was more than 50% lower among the men who consumed at least 30 grams of fish per week, when compared with men who did not eat fish. A 30-year study of over 2,100 Chicago men showed a 62% risk of coronary heart disease and 56% risk of sudden myocardial infarction for men who ate at least 35 grams of fish daily, compared to those who ate none.

Fish oil has been shown to lower LDL-cholesterol by about 13%, to lower blood pressure, and to dramatically lower blood triglycerides. The effect on triglycerides, in particular, appears to be due to EPA and DHA, because flaxseed (ie, linseed oil, which is over 50% alpha-linolenic acid) did not lower triglycerides. More careful analysis has established that DHA alone has no effect on blood triglycerides, but that EPA alone is capable of lowering blood triglycerides by about 30%.

Although most fish oils are high in EPA and DHA, there are some fish oils which are not. Flounder, swordfish and sole are particularly low in EPA and DHA. Fish oils having the highest levels of EPA and DHA include mackerel, herring and salmon. Some fish, such as cod and haddock, store most of their fat in the liver, therefore the liver oils of these fish should be taken rather than the fillet.

Optimum dietary benefit from fat for most people would come from a program of reduced total fat, reduced saturated and unessential fat, and increased proportions of omega3 (relative to omega6) essential fats. A high omega3 oil like perilla oil might be a simple remedy for young people, and the best remedy for smokers. But as most people age, they will benefit most from CLA, GLA, and DHA supplementation combined with antioxidants (especially vitamin E) to protect these polyunsaturated essential fats from oxidation.

Fats are an important component of membranes in our hearts, brains, immune cells and most of the other tissues of our bodies. Since we need these fats, it is important to ensure that we have the right kind of fats, that we have enough of them and that we protect them with antioxidants.

1.     Omega 6 Fats: This type of fat is found in corn oil and soybean oil and the amount we use has increased over the years because we eat more processed foods. Go check a few boxed foods in your kitchen cupboard and you will likely find soybean oil in the ingredient list. Too much omega-6 fat can increase inflammation.

2.      Omega 3 Fats: There are 3 omega-3 fats – DHA, EPA and ALA.  The first two are found in fatty fish such as tuna, salmon, trout, mackerel, and herring. ALA is the plant source of omega-3 and is found in flax seed and walnuts.  Omega-3 fats help reduce inflammation.  If you can eat fish high in omega 3 twice a week you can get a good base amount for heart health. If you don’t like fish then you can take fish oil capsules. Remember to read the dosage directions on your supplement bottle. If your doctor recommends 1000mg or 1gram fish oil daily, that actually means 1000mg EPA/DHA. What you need to do is add the EPA and DHA amounts. Most bottles have about 300mg of these once you add them together so that means you need 3-4 pills to get 1000mg of omega-3. You also want to buy a brand you feel has good quality. Since supplements are not regulated you have no guarantee what is actually in the bottle. Flax seed is a grain and can be purchased as seed or milled. You need to eat the ground form to get the health benefits because the body can not break down the seed form. Once it is ground be sure to keep it refrigerated. Add 1-2 tablespoons to cereal, yogurt, or any dish you are having. You will get the benefit of the omega-3 and the fiber! 

3.     Monounsaturated fats are also anti-inflammatory and good for our heart and cholesterol. The Mediterranean Diet is high in monounsaturated fats and includes regular intake of foods like olive oil, canola oil, avocados and nuts. Eating these good fats can lower blood pressure, cholesterol and reduce risk for diabetes.

4.     Trans fats are not good for our health. Some trans fats are naturally found in animal foods but most of our excess trans fats are from processed fat in packaged foods. Stick margarine is the classic example of trans fats. When stick margarine is made, oil is processed to become solid. This process is called hydrogenation and you will often see the words “partially hydrogenated” on ingredient labels. The chemical process of making oil turn solid creates trans fats which have been found to raise artery clogging cholesterol (LDL) and lower artery cleaning cholesterol (HDL).  Trans fat amounts are required to be on labels by FDA and you want to try to keep your intake as close to zero as possible. The simplest way to keep trans fat intake low is to eat less processed food.

5.     Saturated fats can also raise cholesterol.  Just think of saturated fat as solid fat like lard or butter.  Whole and 2% milk, cheese and fatty meats are also high in saturated fat. Some snack foods and bakery products are high in saturated fats as well. Check the labels and try to keep saturated fat less than 20 grams daily.  You do not need to quit eating cheese and eggs. My recommendation is to choose small portions of less processed cheese. I personally don’t like fat-free cheese for the taste or texture. Eggs have a little saturated fat but are also a very good protein source. They have gotten a bad reputation over the years due to their higher cholesterol content. Reducing processed foods will do much more for your health than cutting out the eggs.

There are four categories of fat, which you have probably seen on food labels: monounsaturated fat, polyunsaturated fat,  saturated fat, and trans fat. Of these, monounsaturated and polyunsaturated are the “good fats,” while saturated fat and trans fat are generally considered “bad fats.”

Monounsaturated fats can lower blood blood pressure, reduce the risk of diabetes, and improve your cholesterol levels, lowering unhealthy LDL cholesterol and raising healthy HDL cholesterol.

Sources of monounsaturated fat in the diet include many common nuts like almonds and peanuts; vegetable oils like olive oil and canola oil; and avocados. While all of these foods are technically high in fat, they can actually help you lose weight and improve your health.

Polyunsaturated fats, meanshile, can guard against heart disease, lower bad cholesterol, and boost the immune system, among other benefits.

Common sources of trans fats include deep-fried foods such as french fries and potato chips, along with some cookies at crackers.

The problem for dieters is that many foods that contain necessary healthy fats also include unhealthy saturated fats. Therefore, you should not over-indulge even in foods containing monounsaturated and polyunsaturated fats.

At the same time, do not avoid fatty foods altogether – make sure to eat moderate amounts of foods containing healthy fats such as fish, nuts and seeds, and vegetable oils.

Herbal skin care cleanses the impurities, rejuvenates by providing nourishment, relaxes the facial muscles by messaging with herbal oils, and hydrates the skin.

Apple Mask For Normal Skin -1 apple – quartered, cored, 2 Tbls. honey and 1/2 tsp. ground sage. Chop apple in food processor. Add honey and sage to apple. Mix well.Refrigerate for 10 minutes. Pat mixture onto face with a light tapping motion, tapping until honey feels tacky. Leave on for 30 minutes. Rinse.

Herbal Bath – This bath herb blend is perfect for relaxing at the end of a long day. The valerian contributes to a nice, sleepy, calming effect.

Cucumber Avocado Facial Mask – ½ cup chopped cucumber, ½ cup chopped avocado, 1 egg white and 2 tsp. powdered milk. Apply 2 tablespoons of the cucumber avocado mask to your face and neck in circular upward motions. Leave the mask on for 30 minutes, or until dry. To remove the mask simply rinse your face and neck with warm water, followed by a cold water rinse. Finally, pat dry your face and neck.

Green Tea Toner – teaspoon powdered green tea and 1/2 cup witch hazel Mix green tea with witch hazel until thoroughly mixed. Apply toner mixture with cotton pad to face. Do not rinse.

Grapefruit and Citrus Mask for Oily Skin -½ grapefruit, ½ lemon juice, ½ cored apple, 1-2 egg whites, 30 to 40 seedless grapes. Take the ingredients together in a blender and mix. Apply evenly on face and neck and leave for twenty minutes. Thoroughly rinse off with lukewarm water. Grapefruit cleans the pores while lemon juice acts as an astringent. The egg whites tighten the facial skin. This face pack clarifies the face and controls extra oil. Use this pack at least once a week.

Almonds mayonnaise scrub – 1/4 C. almonds, 1/8 tsp. mayonnaise. Grind almonds in blender until they form fine almond meal. Whirl in mayonnaise. Gentle rub scrub onto your face, and leave in place 10 minutes. Rinse. Use a toner thereafter. Shelf Life: Refrigerate for 2-3 weeks.

Hair Shine – Stir 1 teaspoon honey into 4 cups (1 quart) warm water. Blondes may wish to add a squeeze of lemon. After shampooing, pour mixture through hair. Do not rinse out. Dry as normal.

Sun Salvation – juice from 1/2 lime (or lemon), 1 TB honey (optional) and 1/4 C olive oil. Shake ingredients together in small container, store in fridge, should last a few days. Apply to face and neck, leave on, blot off later. Orange juice can also be used. Make sure to wear sunscreen if you’re in the sun after using citrus acid on skin, because it makes skin photo sensitive.

Fruity Lip Gloss – 1 Table spoon solid shortening , 1 Table spoon fruit-flavored powdered drink mix , 35 mm film container. Mix shortening & drink mix together in a microwave safe bowl till smooth! Place in microwave on high for 30 seconds until mix becomes a liquid! Pour into clean film container, or any other small airtight container! Place mix into fridge for 20-30 minutes or till firm!
