Whether gathering to watch your favorite sports team, a night of board games, or a party with friends, food is always an important part of the occasion.  These recipes feature quick and easy foods so you can enjoy great snacks without a lot of trouble.  Recipes include a Very Quick and Easy Shrimp Appetizer which is just about as easy as food can get.  The Veggie Stuffed Mushrooms will please the vegetarians in the group but all will enjoy them.  The Turkey and Cheese Wraps will satisfy those who prefer sandwich-type food.

VERY QUICK AND EASY SHRIMP APPETIZER

8-oz block cream cheese
1/4 cup seafood cocktail sauce
1/3 cup tiny frozen cooked shrimp, thawed
Assortment of party crackers

Place the block of cream cheese on a serving plate. Pour the cocktail sauce over the top of the cream cheese. Top the cocktail sauce with the shrimp. Place an assortment of party crackers around the cream cheese block.

VEGGIE STUFFED MUSHROOMS

1 lb (approx 20) large white mushrooms
1/2 cup finely chopped broccoli
1/4 cup finely chopped or grated carrot
1 tbsp finely chopped onion
1/2 cup crushed seasoned croutons
1/2 cup shredded cheddar cheese
1/8 tsp salt
2 tbsp butter, melted

Preheat oven to 400 degrees.

Clean mushrooms and cut a thin slice off the stem and discard it. Remove the stems from the mushrooms and chop enough stems to make a fourth of a cup. Place chopped stems in a small mixing bowl.

Place mushrooms, cap side down, in a deep baking dish. With the stems in the mixing bowl, combine the broccoli, carrot, and onion. Stir in the crushed croutons, salt, and cheese. Add the butter and mix well. Spoon the vegetable mixture evenly into the mushroom caps. Bake at 400 degrees for 15 to 20 minutes or until the stuffing is light golden brown. Serve warm.

TURKEY AND CHEESE WRAP

1/4 cup mayonnaise
1/2 tsp chili powder
4 whole wheat wraps
2 cups alfalfa or bean sprouts
1/2 lb cooked turkey, cut into strips
4-oz cheddar cheese, cut into strips
1 small red onion, cut in half from top to bottom then sliced into thin slices
1 firm ripe avocado, cut into thin strips

In a small bowl, mix the chili powder into the mayonnaise. Spread 1 tablespoon of the mixture onto each of the four wraps. Layer over the mayonnaise mixture on each wrap, 1/2 cup of the sprouts, 1/4 of the turkey strips, 1/4 of the cheese strips, 1/4 of the red onion, and 1/4 of the avocado. Roll up the wraps and enjoy!   Cut the wraps in half for appetizer or snack portions.

People love Italian food.�From Pasadena, California to its Sister City Xicheng (shee-chung) District, Beijing, Peoples Republic of China, Italian Restaurants are universal. What is it about Italian food that we love?

Americans are addicted to the combination of tomato and cheese. That tangy tomato sauce brightens and lightens the heaviness of cheese. �Or perhaps what we love is the traditional flavors we’ve come to recognize as Italian; herbs like rosemary, oregano, marjoram and thyme. Even though pizza doesn’t really count as authentic “Italian”, it’s almost everyone’s favorite.

This menu is from a high-end restaurant. As you can see, pasta and cheese are there, but with refinements, and most fine Italian cuisine features seafood. �Many such restaurants make their own bread daily from scratch. Another thing we like about dining a la Italiano is the serving style called “family”. �This is much more hospitable for families with children, as the food is placed in the center of the table in containers which encourage people to serve themselves, and is reminiscent of eating at home. The portions are usually large, geared to serve 2 or groups of 4 or more. Here is another example of an Italian restaurant menu:

Baked Pasta Specialties:

Chicken Cannelloni – Stuffed with chicken sausage, provolone, ricotta, and fresh sage, smothered with Romano and marinara, and baked to perfection.

Lasagna �- Nine layers of lasagna noodles stuffed with our homemade meat sauce and a savory combination of ricotta, mozzarella, provolone, and romano cheeses, baked in made fresh daily marinara.

Roasted Specialties – Served with roasted potatoes and fresh vegetables

Porchetta Rustica – Herb roasted boneless pork loin topped with a rustic red wine sauce that blends balsamic vinegar, blueberries, capers and hazelnuts.

Tuscan Chicken & Vegetables – �Rosemary marinated bone-in chicken.

Fresh Salmon with Pesto – Sun-dried tomatoes, pesto cream sauce and pine nuts, served with vegetables

Entrees -

Chicken Saltimbocca with prosciutto and artichokes

Chicken Marsala with fresh mushrooms

Chicken Parmigiana with prosciutto

Tired of diets that don’t work? Sick of trying to figure out what to eat — and how to easily prepare it — to stay healthy? Want to finally look and feel better? It’s really not that hard. Here are 5 quick tips that can work for you.

Tip number 1: Sneak in more produce.

How? Make sure each meal contains lots of color as darker hued fruits and vegetables provide the vitamins, minerals, fiber, and phytochemicals your body needs to stay healthy and strong, protect against the effects of aging, and reduce the risk of disease.

How much? Aim for at least one serving at every meal and snack. For example, have a banana with cereal or toast and peanut butter in the morning. Or add blueberries (or any other kind of berry full of antioxidants!) to yogurt with flax seed. Have a bowl of cottage cheese with pineapple and nuts. For lunch, include an orange, pear, grapes, or a peach or any other fruit you can easily throw in a bag and carry. Add lettuce and tomato or spinach or avocado to sandwiches. Have a cup of soup with beans and lots of veggies. For a snack, have apple with cheese, or raisins or other dried fruit (apricot, etc.) with pretzels or nuts, or celery and carrots with hummus. At dinner, start off with a salad or melon, then have steamed broccoli, a baked sweet potato, or stir-fried green beans with your meal. Make a pizza topped with peppers and mushrooms. Be creative! It’s easier than you think!

A serving is one medium-sized whole fruit, half a cup of fresh, frozen, or canned produce, one cup of leafy greens, or a quarter cup of dried fruit.

Tip number 2: Use smaller plates.

Studies consistently show that people — including nutritionists! — unknowingly eat more when given a bigger plate. Using smaller plates, therefore, can help you better control how much you consume.

Tip number 3: Choose whole grains (complex carbohydrates), lean meats and fish (for protein), and healthier fats (poly- and monounsaturated).

Whenever possible, pick whole grains over highly processed grains, cereals, and sugars. Get your grains from foods such as whole wheat, rye, or oat bread, brown rice, whole-grain pasta, and other less familiar grain sources like quinoa, spelt, and bulgur. For protein, make lean choices, such as round or loin steaks and roasts, extra lean ground beef, skinless chicken or duck, and lean roasted turkey. Include fish in your diet, which is rich in omega-3 fatty acids. Vary your meals with vegetarian options like chili with beans, baked beans, rice and beans, veggie burgers, stir-fried tofu, or pea or lentil soup. Cook with oils instead of butter for healthier fats. Limit trans and saturated fats.

Tip number 4: Don’t obsess over calories. And don’t feel bad about satisfying your cravings!

Instead of counting every calorie you consume, pay more attention to your hunger cues. Your body knows what you need! If you’re hungry, eat; when you’re full, stop. If you have a craving for a particular food, don’t deny yourself. You’ll only binge later on. Instead, try satisfying your hunger pang with what you want in small amounts. Or simply opt for healthier selections. Go for hot chocolate instead of a candy bar. For a salty hankering, snack on baked chips instead of fried chips, and have them with salsa or guacamole.

Tip number 5: Don’t skip out on exercise.

It’s a no-brainer. In order to lose weight and keep it off, in addition to improving your diet, it’s juts as important to stay physically active. Get into a routine that you enjoy. When you don’t have time for a formal workout, try to squeeze in at least three 10-minute chunks of physical activity. (Be sure to check with your doctor before starting any exercise routine.)

Will this help me lose wieght, if that’s all I change? If so, how long do you think it’ll take for me to see results? I’m 5′6” and weigh 140 pounds, and I’m not very active. VERY QUICK AND EASY SHRIMP APPETIZER

8-oz block cream cheese
1/4 cup seafood cocktail sauce
1/3 cup tiny frozen cooked shrimp, thawed
Assortment of party crackers

Place the block of cream cheese on a serving plate. Pour the cocktail sauce over the top of the cream cheese. Top the cocktail sauce with the shrimp. Place an assortment of party crackers around the cream cheese block.

VEGGIE STUFFED MUSHROOMS

1 lb (approx 20) large white mushrooms
1/2 cup finely chopped broccoli
1/4 cup finely chopped or grated carrot
1 tbsp finely chopped onion
1/2 cup crushed seasoned croutons
1/2 cup shredded cheddar cheese
1/8 tsp salt
2 tbsp butter, melted

Preheat oven to 400 degrees.

Clean mushrooms and cut a thin slice off the stem and discard it. Remove the stems from the mushrooms and chop enough stems to make a fourth of a cup. Place chopped stems in a small mixing bowl.

Place mushrooms, cap side down, in a deep baking dish. With the stems in the mixing bowl, combine the broccoli, carrot, and onion. Stir in the crushed croutons, salt, and cheese. Add the butter and mix well. Spoon the vegetable mixture evenly into the mushroom caps. Bake at 400 degrees for 15 to 20 minutes or until the stuffing is light golden brown. Serve warm.

TURKEY AND CHEESE WRAP

1/4 cup mayonnaise
1/2 tsp chili powder
4 whole wheat wraps
2 cups alfalfa or bean sprouts
1/2 lb cooked turkey, cut into strips
4-oz cheddar cheese, cut into strips
1 small red onion, cut in half from top to bottom then sliced into thin slices
1 firm ripe avocado, cut into thin strips

In a small bowl, mix the chili powder into the mayonnaise. Spread 1 tablespoon of the mixture onto each of the four wraps. Layer over the mayonnaise mixture on each wrap, 1/2 cup of the sprouts, 1/4 of the turkey strips, 1/4 of the cheese strips, 1/4 of the red onion, and 1/4 of the avocado. Roll up the wraps and enjoy!   Cut the wraps in half for appetizer or snack portions.

I was wondering, A friend of mines aunt made a Mexican Shrimp cocktail that had avocados, shrimp, and oysters and onions. Does anyone have a receipe for this or something similar? I have checked on allreceipes.com and the food network website but nothing came up.

To make a good mexican shrimp cocktail you need to buy a good brand of mexican hot sauce,like valentinas. You can use it as is or water it down. Cut up some cucumbers,onions,avocados. Then add shrimp and cilantro to taste. You can add oystersor any other seafood to it.

I have recently bin to several party’s and at each there was a dip can you Pleas tell me wot it is ?

it had 3 layers the 1st and base is red refryed beens ( wot is that and how do u make it ) then a layer of avocado , then a layer of Cream cheese . Wot is the name for this dip and how do i make it .

You can buy cans of refried beans in the supermarket. Mash the avocado with a little lemon or lime juice to stop it going brown. If the cream cheese is fairly solid mash with a little cream or full cream milk to make thinner/softer.

If you’re planning a Hawaii wedding reception, you can do it economically, and still have a gorgeous reception, whether you’re inviting 5 or 150 guests. Having your reception at a restaurant is what I recommend because it can be accomplished so easily.

One of the best places to have a wedding reception in Hawaii has got to be the Hau Tree Lani Restaurant where Robert Louis Stevenson is said to have often relaxed under the beautiful, old banyan tree that now covers the dining room patio like a canopy.

The Hau Tree Lanai is a stunning place to dine at sunset. My wife and I had our reception there, and I can vouch for it’s food, excellent service, and romantic atmosphere. I really enjoyed eating outdoors with a spectacular sunset for a back drop.

The best time to plan your Hawaii wedding reception is at 5:30 p.m. when the kitchen opens and the sun is just starting to light up the sky with orange and pink and purple hues. I recommend having your wedding ceremony around 3:00 p.m. because it’s cooler at that time of the day in Hawaii.

We got married in the summer time, so there was really no danger of getting rained out. For people with parties larger than 15, or who want to get married during the rainy season (November through March), the Hau Tree Lanai also has a special banquet room over looking the beach which will seat up to 150 people—and I’m told you can rent it for only 150 bucks!

A lot people think that planning a reception is difficult and that the cost is astronomical. But it doesn’t have to be that way. The Hau Tree Lanai is a great choice, but there are other economical and beautiful restaurants where you can have your Hawaii wedding reception.

I found the Hau Tree Lanai a few days before the day of our wedding, and the manager was able to accommodate us as there were only 15 people in our party. We were lucky because some couples reserve the Hau Tree Lanai for their wedding reception as much as two months in advance. Of course, the smaller your wedding party, the easier it is for the Hau Tree Lanai or any restaurant to accommodate you.

If you have a very small party you can just order right off the menu. For my Hawaii wedding reception the manager and I worked out a short menu for our guests that the kitchen could handle, but would still give our guests plenty of choices.

For $50 to $75 per person, The Hau Tree Lanai will prepare you and your guests a complete dinner with a set menu including:

– Bread and Butter

– Appetizer or Salad

– Entree (4 or 5 different choices)

– Dessert

– Coffee or Tea

That’s basically what we did. And we served our guests champagne at $30 a bottle. There’s about 5 glasses per bottle of champagne, so I think we went through 4 or 5 bottles. There was enough champagne to go around, as I remember.

We selected the following entrees for our guests to choose from:

– Avocado Crab Stuffed Mahi Mahi

– Chicken Hawaiian Monarch

– Jumbo Scampi Sans Souci

– Mango Marinated Pork Chops

– New York Steak With Butter Sauce

A 17% gratuity is added to your bill. With the champagne, the tax, and the gratuity, I remember my bill came to an even grand ($1,000). That was for 15 people. As you can see, if you’re planning your wedding reception in Hawaii, it doesn’t have to cost you an arm and a leg.

The Hau Tree Lanai is located at the edge of a beautiful white sand beach named Sans Souci Beach. The restaurant is part of The New Otani Kaimana Beach Hotel, a 20 minute walk from Waikiki Beach. It’s a convenient location for people getting married in a park or on a beach near by.

Our limousine ferried my wife and I and several of our honored guests to the Hau Tree Lanai Restaurant. When we walked into the outdoor beach-front dining room, our long banquet table was prepared with pink table clothes and flowers in vases on the table.

The sun was setting and the waiters began pouring champagne. A great time was enjoyed by all. Our dinner party reception lasted about two and a half hours and that included cutting the wedding cake. The Hau Tree Lanai is very friendly, and truly a romantic and economical place to have your Hawaii wedding reception.

VERY QUICK AND EASY SHRIMP APPETIZER

8-oz block cream cheese
1/4 cup seafood cocktail sauce
1/3 cup tiny frozen cooked shrimp, thawed
Assortment of party crackers

Place the block of cream cheese on a serving plate. Pour the cocktail sauce over the top of the cream cheese. Top the cocktail sauce with the shrimp. Place an assortment of party crackers around the cream cheese block.

VEGGIE STUFFED MUSHROOMS

1 lb (approx 20) large white mushrooms
1/2 cup finely chopped broccoli
1/4 cup finely chopped or grated carrot
1 tbsp finely chopped onion
1/2 cup crushed seasoned croutons
1/2 cup shredded cheddar cheese
1/8 tsp salt
2 tbsp butter, melted

Preheat oven to 400 degrees.

Clean mushrooms and cut a thin slice off the stem and discard it. Remove the stems from the mushrooms and chop enough stems to make a fourth of a cup. Place chopped stems in a small mixing bowl.

Place mushrooms, cap side down, in a deep baking dish. With the stems in the mixing bowl, combine the broccoli, carrot, and onion. Stir in the crushed croutons, salt, and cheese. Add the butter and mix well. Spoon the vegetable mixture evenly into the mushroom caps. Bake at 400 degrees for 15 to 20 minutes or until the stuffing is light golden brown. Serve warm.

TURKEY AND CHEESE WRAP

1/4 cup mayonnaise
1/2 tsp chili powder
4 whole wheat wraps
2 cups alfalfa or bean sprouts
1/2 lb cooked turkey, cut into strips
4-oz cheddar cheese, cut into strips
1 small red onion, cut in half from top to bottom then sliced into thin slices
1 firm ripe avocado, cut into thin strips

In a small bowl, mix the chili powder into the mayonnaise. Spread 1 tablespoon of the mixture onto each of the four wraps. Layer over the mayonnaise mixture on each wrap, 1/2 cup of the sprouts, 1/4 of the turkey strips, 1/4 of the cheese strips, 1/4 of the red onion, and 1/4 of the avocado. Roll up the wraps and enjoy!   Cut the wraps in half for appetizer or snack portions.

I was wondering, A friend of mines aunt made a Mexican Shrimp cocktail that had avocados, shrimp, and oysters and onions. Does anyone have a receipe for this or something similar? I have checked on allreceipes.com and the food network website but nothing came up.

To make a good mexican shrimp cocktail you need to buy a good brand of mexican hot sauce,like valentinas. You can use it as is or water it down. Cut up some cucumbers,onions,avocados. Then add shrimp and cilantro to taste. You can add oystersor any other seafood to it.

i really want to make a nice avocado dip to go with tostitos chips. i have an onion, an avocado, a lime, stuff like that, but i have no clue where to start. any ideas?

i have a lot of ingredients and spices, but nothing too fancy please

Would you believe it, I just turned off Rachel Ray who was making an avocado dip. She was using smashed garlic and sour cream, lemons/limes and mixing them together. Now I don’t know if she did, but you may want to splash some hot sauce in also. I think you’ve got it made! Enjoy!

Why is it so hard to be vegetarian?

I made up my mind to become a vegetarian 2 months ago and it’s been so hard! Like I cut down on meat, fish, and pretty much anything that comes from animals including dairy and eggs. So pretty much all I eat is fruits, vegetables, nuts, beans, avocados, and whole wheat bread foods. But it’s been so hard! Like I don’t care if I eat meat or not but yogurt and ice cream and all that good stuff…it’s hard. Especially me, I’m such a sweet tooth. I don’t know am I doing something wrong? Am I making a smart choice?

Assortment of party crackers

Place the block of cream cheese on a serving plate. Pour the cocktail sauce over the top of the cream cheese. Top the cocktail sauce with the shrimp. Place an assortment of party crackers around the cream cheese block.

VEGGIE STUFFED MUSHROOMS

1 lb (approx 20) large white mushrooms
1/2 cup finely chopped broccoli
1/4 cup finely chopped or grated carrot
1 tbsp finely chopped onion
1/2 cup crushed seasoned croutons
1/2 cup shredded cheddar cheese
1/8 tsp salt
2 tbsp butter, melted

Preheat oven to 400 degrees.

Clean mushrooms and cut a thin slice off the stem and discard it. Remove the stems from the mushrooms and chop enough stems to make a fourth of a cup. Place chopped stems in a small mixing bowl.

Place mushrooms, cap side down, in a deep baking dish. With the stems in the mixing bowl, combine the broccoli, carrot, and onion. Stir in the crushed croutons, salt, and cheese. Add the butter and mix well. Spoon the vegetable mixture evenly into the mushroom caps. Bake at 400 degrees for 15 to 20 minutes or until the stuffing is light golden brown. Serve warm.

TURKEY AND CHEESE WRAP

1/4 cup mayonnaise
1/2 tsp chili powder
4 whole wheat wraps
2 cups alfalfa or bean sprouts
1/2 lb cooked turkey, cut into strips
4-oz cheddar cheese, cut into strips
1 small red onion, cut in half from top to bottom then sliced into thin slices
1 firm ripe avocado, cut into thin strips

In a small bowl, mix the chili powder into the mayonnaise. Spread 1 tablespoon of the mixture onto each of the four wraps. Layer over the mayonnaise mixture on each wrap, 1/2 cup of the sprouts, 1/4 of the turkey strips, 1/4 of the cheese strips, 1/4 of the red onion, and 1/4 of the avocado. Roll up the wraps and enjoy!   Cut the wraps in half for appetizer or snack portions.
