I’ve been using avocados for guacamole and as sushi filling, but really would like to make some salad with it. Thank you for your recipes!

I kinda make this version of a chicken cajun cobb salad. I love avocado also. It is great in salad.
2 chicken breasts that I cook in non stick skillet and I sprinkle plenty of cajun seasoning on both sides.
I bag of Romaine or better yet spring greens. (I never use plain iceberg lettuce.)
1 tomato diced up
a few thin slices of red onion (I use most of an onion)
1 avocado or even 2
1 cup of cheddar cheese ( I use sharp cheddar)
Croutons ( I make my own by grilling crusty bread with butter and cajun seasoning on both sides and let sit a few minutes)
Put your greens on a platter and start putting your other ingredients in rows on top of the greens. I like either a fresh made ranch (I make the buttermilk version of Hidden Valley only)
or a good poppyseed dressing. A red french would work ok too.
This will serve a few people and it tastes great.

History of Salsa

The word “salsa” is the Spanish word for sauce. The salsas that many of us think of are salsa frescas or salsa cruda, fresh sauces served as a condiment aside a Mexican meal. These uncooked sauces might be pureed until smooth, semi-chunky, or the uniformly chopped pico de gallo (my favorite).

The Chile – Tomato Combination

The making of of a sauce by combining chiles, tomatoes, spices and other ingredients like squash seeds and even beans has been documented back to the Aztec culture..

We have Spanish-born Bernadino de Sahagun to thank for the detailed culinary history of the Aztec culture. His extensive writings documented every food common to the culture. This is an excerpt from Sahagun’s writings about the food vendors in the large Aztec markets:

“He sells foods, sauces, hot sauces, fried [food], olla-cooked, juices, sauces of juices, shredded [food] with chile, with squash seeds, with tomatoes, with smoke chile, with hot chile, with yellow chile, with mild red chile sauce, yellow chile sauce, sauce of smoked chile, heated sauce, he sells toasted beans, cooked beans, mushroom sauce, sauce of small squash, sauce of large tomatoes, sauce of ordinary tomatoes, sauce of various kinds of sour herbs, avocado sauce. (Sahagun, translated 1950 -1982).

Ingredients Then and Now

The paragraph above refers to many of the ingredients in our modern-day salsas.

Large tomatoes – We believe this references is to a large red tomato similar to what we eat to day.

Ordinary tomatoes – most likely this reference is to the tomatillo or tomate verde.

Smoked chiles – The chipotle or smoked jalapeno was a staple in the Aztec diet.

Avocado – cultivated by the Aztecs the avocado was an important source of fat and protein and was used in a sauce similar to what we call guacamole.

Two Delicious Salsa Recipes:

2 c fresh plum tomato, diced

1 c fresh green tomato, diced

1/2 c fresh green bell pepper, diced

1/4 c fresh purple onion, chopped.

1 tbsp jalapeno pepper, finely chopped

1 tbsp fresh cilantro, finely chopped

1 clove fresh garlic, minced

1/4 tsp salt.

1/8 tsp coarsely ground pepper.

2 tbsp fresh lime juice

1 tbsp olive oil.

Directions:

Combine all ingredients in a bowl. Stir well. Serve at room temperature or chilled. Serve with corn or flour tortilla wedges, poultry, or fish.

Yield: 3 cups (approx 6 calories per tbsp).

Mango Salsa

2 medium ripe mangoes

1 small cucumber, peeled, diced (it says seeded, but I’ve never bothered)

1 ripe tomato

juice of 1 lime (lemon works, too!)

pinch of salt

1/2 – 1 small fresh chile pepper, minced, or Tobasco or other hot pepper

sauce to taste (I have always used Tobasco)

1 Tablespoon chopped, fresh cilantro (It says optional, but I don’t really

think so)

Peel and chop the mangoes. In a large bowl, mix together the mangoes,

cucumber, tomato, lime juice, salt, chile or tabasco, and cilantro. Let

salsa sit for 10 minutes to allow the flavors to blend before serving. Mango

salsa keeps refrigerated for 2 or 3 days.

The diet is based on the rationale that taking in less carbohydrates in meals can help in the reduction of weight. This is because the water content in the body is flushed off when the body uses it as an alternative source of energy.

The same goes with the fat cells, which are temporarily used for energy in lieu of the missing carbohydrates. As you well know, both fats and carbohydrates are potential sources of energy. Zone Diet – Developed by Dr. Barry Sears, a researcher at the Boston University School of Medicine and the Massachusetts Institute of Technology, the zone diet is a diet plan that focuses on the ideal state of the body and the mind. This is a state of mind where the body will feel refreshed and at its peak of energy and performance. The term zone was borrowed from what athletes would often call the zone peak of performance wherein they achieve their bodies’ optimal degree of performance.

Dr. Sears, who has studied lipids and its role in the development of chronic diseases in then body, conceptualized the diet after the death of his father due to a heart attack in 1970. But the concept was still raw, not until 1982 when Nobel Prize jury gave a research grant to the study of the relationship of hormones called eicosanoids and the development of certain set of diseases that include diabetes, heart problem and even cancer.

In 1995, the doctor completed his research and compiled it in a book entitled, “Enter The Zone.” It became an international bestseller, topping lists worldwide. To date, it has sold more than four million copies. The book was so successful that Dr. Sears published 10 more books about the subject.

Despite this, critics still point out that the theory has not much merit as there are no scientific evidence about it. Although the zone diet is indeed effective in reducing the pounds. Some in fact continue to lose 1.5 pounds every week. There have even been people who have not lost any pounds with other diets but have lost with the zone diet.

The diet encourages the consumption of grilled meats, a lot of fruits and of course veggies. People who are under the program will have some meals that are composed of one slice of meat and two-thirds fruits and veggies. The diet is primarily composed of 40 percent carbohydrate, 30 percent protein and 30 percent fats in the form of monosaturated fats such as those found in fruits such as avocado, guacamole and macadamia nuts.

Carbohydrates are taken in through fruits, veggies and whole grains. Sometimes pasta, rice and breads are permitted but only small portions. The protein on the other hand are taken in through lean cuts of meat and poultry such as chicken and turkey. Fishes may also be eaten as well as soy products.

Does this sound like a good recipe or a disaster?

I cut up some chicken breast and browned it in a non-stick pan with some garlic, salt, and pepper. I’m going to slice an avocado in half, scoop out the pulp, mash it up with some chopped tomatoes and a little cilantro (dried, because I don’t have fresh on hand).
I want to mix that with the chicken and spoon it into the avocado shells. Put a little shredded cheese on the top and bake it till the top is browned.

Do you think those ingredients would go good together or should I call Pizza Hut? lol
I’ve already cut up and cooked the chicken but I think I’ll do as you suggest Darren, and leave the avocado mixture uncooked.

This sounds good actually, but you may want to think twice before cooking avocado. When avocado is heated, it gets a really strange and unpleasant consistancy. It has a relatively high fat content for being a fruit, so it sort of melts and gets all weird.

My suggestion is to keep the chicken breasts whole, and pan-fry them with the garlic, etc until golden brown. Transfer them to the oven and finish cooking. Then, serve them with the mashed avocado, tomato, seasonings, cilantro and chopped onion (a basic guac) on top. Sounds delish!

Serve it with a nice salad and youve got an amazing dinner.

Fast Lunch Ideas

If you are a working man, you know how important lunch is. You can’t function without a good lunch. A good lunch is the difference between feeling great during the afternoon and feeling worn out. Many times we skip on lunch. We don’t either eat the right things, or don’t eat at all. I know several people who don’t eat any lunch at all. Especially women, they think they can skip this meal and not have to worry about it. I’m the type of person who can’t skip a meal. Maybe one of the reasons is that I can’t turn down a good meal. Though, if I don’t eat, I can feel it. Nothing will make you feel like shit quicker than skipping a meal. We all know what it feels like.

What do you do? You don’t have time to fix a good lunch before you go to work. Or do you? Of course you do. If you are in a relationship, you have more than enough time. One thing I would suggest is that you alternate fixing each others lunch. One day you fix both of your lunches, while the next day have her fix both of them. This will give you time to do the other things that you need to do.

You can also fix your lunch before you go to bed at night. By doing this, you don’t have to rush yourself. Which, will make your day that much better. I hate having to rush in the morning. What kinds of things should you fix? Here we will go into some simple things to fix.

Tuna and Bell Pepper Pocket

3 (6-ounce) cans drained, solid white tuna (in water) ½ cup chopped bell peppers ¼ cup chopped celery ¼ cup sliced onions 8-12 lettuce leaves (preferably green) 2 medium-size sliced tomatoes (8-12 slices total) 3 tbsp. fat-free Italian dressing 1 tbsp. dried oregano 1 tbsp. black pepper 4 (6-inch) pita breads Combine tuna, green peppers, celery and onions in a bowl. In another bowl, combine dressing, black pepper and oregano, pour it over the tuna mix and stir. Refrigerate for a few hours. When serving, put 2-3 tomato slices and 2-3 lettuce leaves in each pita bread. Add tuna mix to pitas. There’s enough for 4 servings.

I love this. I don’t think there is a better easier lunch item than this.

Black Bean Salad ½ (8-ounce) can drained black beans 1 (15-ounce) can drained whole kernel corn 4 chopped green onions ½ chopped green bell pepper 3 diced tomatoes ½ avocado peeled, pitted and diced ½ (2-ounce) jar pimentos 2 tbsp. lemon juice 3 ounces fat-free Italian salad dressing ¼ tsp. garlic salt Combine Italian dressing, black beans, green onions, corn, bell pepper, avocado, pimento, tomatoes, and lemon juice in a bowl. Add and toss pepper, salt and garlic. Store in Tupperware and refrigerate. Offers up three delicious servings for that big appetite of yours.

This is another great one.

Smoked Chicken Sandwich ½ (8-ounce) loaf sourdough bread ¼ tbsp. vinegar 2 tbsp. chopped parsley 1/8 cup low-fat mayonnaise or fat-free salad dressing ¼ cup chopped bell peppers (you can’t go wrong with bell peppers) ½ small onion thinly sliced ½ medium sized tomato sliced 8 (1-ounce) slices low-fat mozzarella cheese 2 cloves minced garlic 8 (1-ounce) slices lean chicken 1 tbsp. black pepper Slice the loaf of bread horizontally. Remove some soft bread from inside each half. Stir mayonnaise and vinegar together. Add parsley, bell peppers, black peppers, and garlic to the mix. Let stand for 15 minutes. Layer the bottom of the loaf with 4 slices of chicken and cheese, then layer with half of the onions and half of the tomatoes. Spread half of the mayonnaise concoction and repeat the entire process from the start with the remaining ingredients. Close the sandwich with the second bread shell and chill until it’s ready to serve. When serving, cut loaf into 3 wedges (secure loaf with wooden sticks for a better cut). Makes 3 servings. There you have some easy lunch ideas.

Diet for Gaining Muscle?

Hi, well im planning to do a weight training diet in order to gain muscle over the Summer. I will be going to the gym everyday but I need to plan a diet out. Im 19 years old and weight about 140 so I need to gain weight and what i’ve read is that Im suppose to eat more calories than my body can take. I plan to eat Avocados, Nuts, Soybeans, cheese, Fruits, CHICKEN, Vegetables, Oatmeal, and red meats. I wanted to know if theres anyway I can cook chicken without using oil and if there any recipe sites or books I can follow so i can know what to cook and so i can create different meals everyday. Also I would like to know anyplaces I can buy these items cheap

i was in the same boat as you a few years back….. kinda when i was your age.

I would recommend getting on a 5 day workout regime
day 1. legs
day 2. back
day 3. chest
day 4. shoulders
day 5. arms

When it comes to diet what I can tell you is that I gained about 20 lbs of muscle mass over the course of a year by staying religous with my workouts and heavy on the diet…. It sounds like you are a pretty lean guy so you wouldnt have to worry about getting fat, especially when working out (You need to stay religious with both the diet and excercise, get disciplined).

Your diet should try to be free of empty calories but with your body type you can cheat on that. The real key is when you think you cant eat any more… eat!

My diet consisted of… 4 egg whites and a full egg for breakfast with oatmeal on top. As I left for class i took either a yogurt shake or “mass gainer” shake with me for the walk… I made sure I didnt go for more than 2 hours without eating something (even as small as a apple). Lunch was some form of fatty dairy with either one or 2 chicken breasts and potatoes. Snacked through the day on whatever, lifted, got back and ate dinner (you should try to avoid eating before lifting heavy or it is going to end up all over the floor, if you arent close to puking or havent puked then you arent pushing yourself). Dinner was usually a steak, or heavy meat salad (chicken salad or tuna salad). Big point is eat constantly, and even when you dont think you are hungery… EAT!!!

I knew it was working for me when my appetite came back after not eating for 2 hours and when i started to break a sweat by walking to class. Funny thing was that after not seeing some friends for a year or two they all start passing around rumors that you are on roids, the real payoff is knowing through hard work and discipline (not to mention a $100+ a week grocery bill) you were able to shape yourself into something so great that most people think you cheated!!! It sounds weird but it is a great feeling….

Internationally acclaimed Oaxacan chef Pilar Cabrera (NY Times, Bon Appetit) has expanded the roster at her well-known downtown Oaxaca cooking school, Casa de los Sabores (House of Flavors).  Effective June, 2009, indigenous Zapotec chef Reyna Mendoza joins Pilar’s team, offering a new dimension to the already stellar selection of options available to intrigued foodies, those with a keen interest in Mexican cuisine, as well as chefs from around the globe seeking to add to their existing menus.

 

A native of Teotitlán del Valle, Reyna brings her knowledge, skill and experience to Casa de los Sabores.  She specializes in the preparation of Zapotec dishes.

 

Reyna has worked with the likes of chefs Rick Bayless and Ricardo Muñoz.  Accordingly, her pedigree is beyond reproach, combining technical aspects of the culinary sciences, with lifelong experience in the modest kitchens of her mother and her family’s other matriarchs of gastronome. And today, members of the Oaxaca Bed & Breakfast Association (http://www.oaxacabedandbreakfast.org) had an opportunity to learn for themselves.

 

Pilar invited colleagues from the association to attend her cooking school, so that owners and managers of small hotels and bed & breakfast guest houses in Oaxaca, would be able to experience for themselves what Reyna can add to the vacation of any visitor to the city and its central valleys.  And for four hours, we grilled, chopped and filled, and finally indulged in the fruits of our labor, at this hands-on demonstration.

 

While we prepared a complete comida, we focused on the preparation of three distinctly different types of Zapotec-style tamales.  The complete menu consisted of:

 

1)      Tamales of mole amarillo with chicken, wrapped in large corn stalk leaf;

2)      Tamales of mole negro with chicken, in banana leaf;

3)      Tamales of mole negro with quesillo, in banana leaf;

4)      Tamales of black bean, flavored with avocado leaf, wrapped in corn husk;

5)      Salsa of tomatillo and dried Oaxacan chile

6)      Salad of organic lettuce, locally grown tomato, avocado and scallion, with cilantro and chile poblano dressing;

7)      Mango sherbet served with pecan cookie.

 

And of course, upon completing the preparation of the foregoing dishes, and throughout the comida, there were rounds of the requisite “salud,” while imbibing … Corona beer and village mezcal.  

More than  providing an opportunity for us to learn about Reyna and her ability to teach, and to experience for ourselves the exquisite flavor and ingredient combinations of Zapotec cuisine, it was one of those rare opportunities for members of the Oaxaca Bed & Breakfast Association to tell stories, laugh, and enjoy a day away from the office.

ok, so I am trying to loose 10 pounds before my best friends wedding which is July 15. I am drinking a Slim fast shake and about to start a work out routine. How to use Slimfast?

ok, so I am trying to loose 10 pounds before my best friends wedding which is July 15. I am drinking a Slim fast shake and about to start a work out routine. I drink a slim fast for breakfast then have fruit or yogurt for a snack and then for lunch I drink a slimfast shake with a sandwhich or lean cuisine meal, then dinner I have a salad or chicken breasts and veggies. Water is being dranked all day long. especially when I start to feel hungry. My question is, am I using the slimfast correctly? Has anyone tried slim fast? has it worked for you. What meal combinations have you tried with Slimfast shakes? I am open to any suggestions. I go get my dress fitting this weekend and my aim is when the dress comes back in June I will need alterations!!! :)

The answer to this is easy…You don’t use it at all. Meal replacement drinks are unhealthy and teach poor nutritional habits. The best way to go about slimming down is good old exercise and healthy eating. Not a diet…because once you come off the diet you gain the weight back and then some. You need to make a healthy lifestyle change and KEEP IT. Also, the slower you lose the weight, the more likely you are to keep it off. I live in the dorms and don’t have a knife and was wondering a good way to peel and eat an avocado without a knife

·       Water: Staying hydrated is very important to your weight loss goals. It should be an important part of your daily routine anyway; most people don’t know just how much water they lose throughout the day. The usual guideline is to drink eight glasses of water throughout the day, although you may want to drink more if your exercise intensely.

·       Complex carbs: Complex carbs like whole wheat bread are a necessary for healthy nutrition. By breaking down in slowly in your body, complex carbs help keep you full and energized for longer periods of time.

·       Good fats: Almonds, seeds, olive oil, avocados and nuts are all excellent sources of “good fat”.

You can change to a more healthy way of eating and it’s not as hard as you think, as long as you have a plan of action laid out for you.

My avocado fruit has way to big seed?

My avocado fruit has a humongous seed. I did give it nutrition that I buy at the store at the specific times, and it is avocado nutrition. The fruit look the the right size, but the seed is too big!!! What can I do to make the seed smaller, so there is more parts where I can eat?

Your avacado is typical; there is far more seed than there is fruit to eat. You can’t do anything about that; you will need to buy more avacado if you want more fruit.

1. Stay away from fat

Get rid of any visible fat from your food. As much as possible, steer clear of oily and fatty foods like French fries, fried chicken and hamburgers. Fast food meals should be limited or eliminated completely. It is important that you consume foods that come from organic or natural products, since preparation also involve less preservatives and additives that can be fattening.

When getting protein, take from healthy sources like chicken breasts, turkey, fish, tofu and non-fat milk or yogurt. You may eat red meat but only limitedly and in lean cuts. When preparing food, try to consume only those that are boiled, broiled, grilled or steamed. Limit roasted, fried or deep-fried foods. It is ideal to cut away fat from meat before it is cooked. Take off the skin from chicken after cooking to maintain the flavor without the fat. Also limit intake of processed goods, pastries and cakes.

2. About carbohydrates

When consuming carbohydrates, it is important to know that these are divided into complex and starchy. Complex carbs are good for the body since it helps in digestion and keeps you full for hours, preventing hunger pangs and food binges. Some great examples are yams, brown rice and whole wheat bread. Starchy carbs should be limited, since these can easily be converted into fat. Some starchy carbs include potatoes, white bread and cakes.

3. The good fats

Some types of food are rich in HDL or high density lipoprotein which effectively eliminates cholesterol and fat. You get to protect your heart and other internal organs as well. Some of the examples of foods with healthy fats are almonds, walnuts, tuna, avocado and olive oil.

4. Eat more fruits and vegetables

Fruits and vegetables are rich in vitamins and minerals that help slash fat, as well as assist in functions that eliminate cholesterol in the body. However, you have to be careful about their glycemic index to prevent excess weight gain. Some of the ideal fruits and vegetables include bananas, apples, green leafy vegetables, broccoli, cauliflower and asparagus.

It is also good to consume meals more frequently and in smaller volumes. Invest in a small weighing scale so you can measure the contents exactly, for faster weight loss.
