Grilling out tomorrow. So far, I am making Grilled Avocado BLT Burgers, SWEET POTATO SALAD WITH CHILI-LIME DRESSING, and STRAWBERRY AND CREAM CAKE WITH CARDAMOM SYRUP. What else could I serve? I feel like I need a third side dish or something else, hopefully something painfully simple, as these dishes are all reall complicated. Any ideas?

I think a black bean dish or dip would go great with that. Just get some canned black beans, heat them up and put some diced onions, tomato and cilantro on top of the dish. Here’s a recipe for a black bean dip that’s really good and it’s pretty easy. Have a great time, sounds like a great menu..and I’d love a recipe of your cilantro lime potato salad, it sounds wonderful!

Black Bean Dip
2 15-ounce cans black beans
2 teaspoons chopped garlic
2 tablespoons chopped fresh cilantro (or 1 T dried)
2 small tomatoes, chopped
2 teaspoons crushed red pepper (or to taste)
1 teaspoon cumin
Juice of 1 lime
1 small onion, finely chopped
Salt and pepper

In a food processor, coarsely chop the black beans, garlic, cilantro and 1 tomato. Transfer to a serving bowl.

Add the red pepper, cumin, lime juice, onion, 1 chopped tomato, and salt and pepper.

Chill, allowing the flavors to blend. Serve with tortilla chips. Makes about 3 cups.

Ingredients

1 lb. Ground beef

1 can (6 oz.) tomato paste

1/2 c. Oatmeal

3 Tbs. Finely chopped green pepper or celery

2 Tbs. Bran

2 Tbs. Wheat germ

1 sm. Onion, finely chopped

1 Tbs. Freshly chopped parsley

1 Egg, lightly beaten

1/4 Tsp. Finely chopped garlic

1/2 Tsp. Salt

1/4 Tsp. Freshly ground pepper

Chili sauce

Directions

Preheat oven to 350 degrees. Combine all loaf ingredients, using your hands. Form into loaf and place in 9 X 5 X 3 loaf pan cover with layer of chili sauce (or ketchup if desired) bake 50 minutes to 1 hour. (Do not over bake since part of the secret of fluffiness is shorter cooking time.) Serve the meat loaf sliced and hot. Serves 4. Variation: Half ground veal and half ground beef can be used for the meat loaf – lower in calories.

CHICKEN SALAD PICANTE

Ingredients

4 ea. Breasts, chicken, halves, broiler/fryer, boned, skinned

1/2 c. Dressing, bottled, ranch, fat free (works well with similar chicken salad recipes as well)

2 Tbs. Sauce, picante

1 Tsp. Chili powder, divided

1/4 Tsp. Salt

1 Tbs. Oil, vegetable

4 c. Greens, salad, mixed, torn into bite-sized pieces

1 med. Avocado, peeled, halved, pitted, cut into horizontal slices

1 med. Onion, red, thinly sliced into rings

2 med. Tomatoes, cut in 8 wedges each

2 Tbs. Cilantro, chopped, OR

2 Tbs. Parsley, chopped

Directions

In a small bowl, mix together salad dressing, picante sauce, and a 1/2 Tsp. of chili powder; set aside. Mix the remaining 1/2 Tsp. of chili powder with the salt and sprinkle the mixture over the chicken. Heat the oil to a medium-high temperature in a fry pan. Add chicken and cook, turning, about 8 minutes or until brown and fork tender. Remove the chicken to a cutting board and cut horizontally into 1/2-inch slices.  Place one-fourth of the lettuce on each of four serving plates. On each plate, arrange one sliced chicken breast half over the lettuce. Place avocado, onion, and tomatoes around the chicken. Drizzle 2 Tbs. of dressing over each salad. Sprinkle salad with cilantro or parsley, if desired (works well with many light recipes). Source: Chicken Cookery – 1994. Ingredients

3 Beaten eggs

1/2 c. Firmly packed brown sugar

1 Tbs. Honey

1 Tsp. Ground ginger

1 Tsp. Cinnamon

1 9-inch deep-dish frozen pie, shell, thawed

1 can (16 oz.) pumpkin

6 pkg. Envelopes low-calorie sweetener

1 Tsp. Nutmeg

1 1/2 c. Nonfat milk

Whipped topping

Orange peel

Directions

Preheat oven to 350 F. 2. In a medium bowl, combine all but milk.

Gradually stir in milk. Spoon mixture into pie shell and bake for 70-80 minutes or until knife inserted halfway between centre and edge comes out clean. Let cool, then garnish each slice with 2 Tbs. of whipped topping and grated orange peel.

Do you think taco dip with a layer of guacamole would be good?

I am going to try this no matter what, just wondering what you think the out come will be, or if you have tried this before.

I make my taco dip with cream cheese, sour cream and taco seasoning then lettuce, tomato, onion, and cheese.
I make guacamole with avocado, onion, tomato, fresh squeezed lime, cilantro, and garlic.

I am thinking of doing the cream cheese/sour cream/taco seasoning mixture then layer on the guacamole and then all the vegetables.

Yes!! Guacamole is soooo yummy I think it’s good on anything!

I had a Fiber One muffin for breakfast (170) and a glass of skim milk (90). For lunch I had a blueberry bagel (250) and yogurt (120). Then I had a mango (100) and a sandwhich for dinner with wheat bread, turkey and avocado (550) and a banana (100). I feel so stuffed. It comes to about 1400.

Enjoy a great salad with your own homemade dressing of honey and lime.  Refreshing and different; try it today!  This light and festive salad has a Mexican flair with the black beans, corn, and avocado.  It can be made into an entree salad by adding cubed cooked chicken.  You could also make it a fried chicken salad by slicing fried chicken breast over the top.  The dressing would be good on other salads as well.  It has a Tex-Mex appeal with the lime and cilantro.  It would be a good dressing to keep sealed in a jar in your refrigerator for use on other salads or for marinating meats.

FIESTA SALAD WITH HOMEMADE HONEY AND LIME DRESSING

1 pkg (10-oz) romaine lettuce blend (or your favorite salad blend of greens)
1 can black beans, rinsed and drained
1 pint tiny tomatoes, halved
1 pkg (10-oz)frozen whole kernel corn, microwaved and cooled
3/4 cup thinly sliced radishes
1/2 small red onion, peeled and sliced
1 ripe avocado, peeled, cored, chopped
1 cup chopped red bell pepper
1/2 cup crumbled feta cheese
Freshly ground black pepper

Put frozen corn in a microwave-safe bowl, cover and cook about 10 minutes stirring halfway through cooking. Toss corn with remaining ingredients in a large bowl just before serving. Pour Honey-Lime Dressing over the salad and serve.

HOMEMADE HONEY AND LIME DRESSING

1/4 cup fresh lime juice
1/4 cup Canola oil
1/4 cup red wine vinegar
2 tbsp honey
2 tbsp finely chopped fresh cilantro
2 tsp minced garlic

Using a wire whisk, mix all ingredients together in a small chilled bowl until well combined. Pour over salad at serving time.

This recipe serves 8 to 10 people.
