Spicey Turkey Soup

.Serves 8

This soup has the perfect balance between spicy, savory and herbal flavors. Adding the Monterey jack cheese and avocado adds creaminess. Easy soup to prepare and great idea for turkey leftovers.

Ingredients

1 tablespoon extra virgin olive oil
4 cloves garlic, chopped
1 1/2 cups chopped onion
1 (28-ounce) can diced tomatoes, with their liquid
4 cups low-sodium, gluten-free chicken broth
1 teaspoon dried oregano
1/4 teaspoon ground chipotle or cayenne pepper
1/2 teaspoon ground cumin
1/2 teaspoon black pepper
1 bay leaf
3 cups shredded cooked turkey meat (white and dark)
1 small bag white corn chips
1 bunch cilantro, chopped
1 cup shredded Monterey jack cheese
2 avocados, sliced
2 limes, cut into wedges

Method

Heat oil in a large pot over medium heat. Add garlic and onions. Cook, stirring often, 8 to 10 minutes, until onions are translucent. Stir in tomatoes, broth, oregano, ground chipotle pepper, cumin, black pepper, bay leaf and turkey. Bring to a boil, then reduce to a gentle simmer. Simmer 15 minutes to allow flavors to meld.

To serve, break corn chips (about 5 or 6 per serving) into bite-size pieces and place in bowls. Ladle soup over chips. Sprinkle with cilantro and cheese. Garnish with avocado slices and lime wedges.

Cranberry Relish

 

Ingredients

Makes 2 cups

2 cups fresh or defrosted frozen cranberries

1/4 cup diced red onion

1 large jalapeno pepper, seeded and finely chopped

2 tablespoons fresh lime juice

2 blood oranges, or navel oranges, peeled, sectioned, and cut into 1/4-inch pieces, juices reserved

2 teaspoons freshly grated ginger

1/2 cup sugar

2 stalks celery, peeled to remove strings, cut in 1/4-inch dice

1/4 cup fresh mint leaves, coarsely chopped

1/4 cup pecans, toasted, broken in pieces

Directions

Place cranberries in food processor, and pulse to chop coarsely, about five pulses. Transfer to a medium bowl.

Add onion, jalapeno, lime juice, orange sections and juice, ginger, sugar, and celery; mix gently. Refrigerate for at least 1 hour and up to 2 days. Just before serving, add mint and pecans, and toss to combine.

You can prepare a Halloween appetizer for a Halloween party. You can make this crunchy and flavored snack by using any of your favorite snack food. This snack food may include goldfish crackers, corn puff cereal, butter, cheese, bread crumbs, etc. Try out some of the amazing halloween appetizers given below.

* Asparagus Roll-ups- trim the bread slices by removing the crust and flatten them by using a rolling pin. Mix cheese and butter and spread this mixture on the bread slices. Use an asparagus spear for topping. Roll the bread around the asparagus and dip them in butter that is melted. Cut the rolls into small pieces and freeze them. When they are ready bake them in an oven for 15 minutes at 400 degrees F.

* Baby Sausage Quiches- beat cheese, butter and flour in a bowl till get smooth. Make balls and press them at the bottom and lift the sides up of the greased muffin cups. Cook sausage in a skillet. Sprinkle the sausage, chives and Swiss cheese into the muffin cups. Then beat cream, pepper, salt and eggs in another biog bowl and pour them into the shells. Bake it for half an hour at 375 degrees F.

* Guacamole Spread- use a food processor or a blender and mix 2 large ripe avocados, mayonnaise, lemon juice, chopped onion, salt, fresh vegetables, hot pepper sauce. Cover the mixture and process them till they become smooth. You can serve this mouth-watering recepies along with veggies or crackers.

* Apricot Pepper and Onion Appetizer- mix apricot preserves and pepper and onion relish in a small bowl and set them aside. Then open the tubes of the crescent dough and separate them into four rectangles by sealing the perforations. Cut the rectangle in to pieces. Fill the center of each rectangle with 1 teaspoon of the above filling. Fold the dough into half and then press the sides to make them firm. Place them on the baking sheets and bake for about 15 minutes. Allow it to cool and serve it when it is warm. The remaining filling can be served on the sides for the sake of dipping.

* Cheesy Pita Crisp- split the Pita into two rounds and cut each round into 4 triangles place them on a baking sheet and coat it with cooking spray. Then take a bowl and add garlic powder, butter, onion powder, pepper and salt and stir them ell in Parmesan cheese. Spread this mixture on the triangles and sprinkle them with cheese over them. Bake it in an oven for about 15 minutes at 400 degrees F. serve them when they are hot.

* Monster Munch- mix crackers, nuts and cereals in a jelly roll pan. Moisten it using melted butter. Sprinkle this mixture with different seasonings and stir well. Bake it in an oven for 15 minutes at 350 degrees C. cool them on the paper napkins and then store them in airtight containers.

Go for a brisk walk every day. You’ve got to get up and move around in order to train your body to burn more fat. Walking is easy and a great non-strenuous way to drop pounds fast. Casual walking around the mall isn’t going to cut it. You need to go someplace where you can walk at a fast pace for at least 30 minutes without stopping.

When it comes to building muscles, you already know that training hard will help you grow. However, if you’re serious about training, you should also be serious about your nutrition. So, what I’m going to do is share with you some food to eat to build muscles.

I’m going to outline some foods that will help you grow. I’ll categorize them by protein and carbs, which both play vital roles when building muscles.

Protein

Lean Chicken Breast. This is one of my favorites. Great protein source.

Turkey. Lean protein source. Low in fat. Great for anytime of the day.

Beef (lean burgers and steak). This is the “big daddy” of muscle building foods. Red meat has a great rep in the muscle building world. It helps increase testosterone and supplies a good amount of protein.

Tuna. Great protein source. Low in fat. And great for lunch.

Salmon. It has alot of protein and healthy fats in it. Should be eating 2-3 times a week when trying to build muscles quickly.

Cottage Cheese. This food is a slow digesting protein. Great for eating during the day or right before bed.

Eggs. Great at building muscles. So, make sure you add eggs to your meal plan. I usually eat 3 whole eggs and 3 egg whites in the morning for breakfast.

Carbohydrates

Pasta. Loaded with carbs. Great for helping build muscles. You can choose between regular pasta or whole wheat.

Brown Rice. Another food that’s loaded with carbs.

Whole wheat bread. Great with turkey, tuna, or chicken. It also has a good amount of carbs in it.

Oatmeal. Great in the morning with eggs. 2 packets (or 1 cup) provides about 40-50 grams of carbs.

Fruits (apples, bananas, oranges). Provides a good amount of carbs, as well as other health benefits.

Potatoes. Another great source of carbs. Add this with a steak and you’ve got yourself a great muscle building meal.

Bonus

Avocados. Great for increasing testosterone, which is extremely important when it comes to building muscles.

Almonds. Decent amount of protein. Great for a snack. And will also help with your testosterone.

These are some foods to eat to build muscles. Add these foods to your meal plan and you’ll definitely notice dramatic increase in your muscles.

Times are tight and the price of everything from clothing to entertainment is going up. The cost of feeding your family continues to rise, too. Every week at the grocery store, it seems like we pay a little bit more and get a little bit less. 

To help you make the most of your already tight food budget, we’ve got 5 deliciously complete dinners than you can make for your family of 4 for under $10.

Chicken Rice Bowls                                                   

4 chicken thighs – $3.57

1 cup dried rice – $.50

1 can black beans – $1.15

4 oz. shredded cheddar cheese – $.75

1 avocado, sliced – $1.00

1 jar of salsa – $1.50

Total – $8.47

Dice chicken thighs. Heat a skillet on the stove over medium heat. When hot, add 1 tablespoon canola oil. When oil is hot add chicken. Brown, seasoning with garlic salt and pepper. While chicken is cooking, boil rice according to directions. Heat beans in a small saucepan on the stove. When the rice and chicken are done, layer rice, black beans and chicken, topping with 1 oz cheddar cheese, avocado slices and salsa.

Bratwurst                                                                  

4 links Bratwurst – $4.00

1 green pepper, seeded and diced – $1.00

1 onion, sliced – $.75

4 French rolls – $1.25

Frozen French fries – $2.00

Total – $9.00 

Heat grill. Place bratwurst on grill, turning occasionally until browned on all side and cooked through. Preheat oven to 425 degrees and cook fries according to directions.

Meanwhile, heat a medium skillet over medium high heat, adding one tablespoon on oil. When hot, add green pepper and onion to skillet. Cook, stirring and turning occasionally until brown and soft. Serve bratwurst in rolls, topped with green peppers and onions and French fries on the side.  

Pasta and Italian Sausage                                        

1 pound bulk hot Italian sausage – $1.99

1 pound dried penne pasta – $1.50

1 jar tomato sauce – $2.00

Baguette – $1.00

1 head Romaine lettuce – $1.00

Total – $7.49 

Boil water in a large pan, salt and cook pasta according to package directions. Meanwhile, heat a medium saucepan over medium-high heat. When hot, add Italian sausage, breaking up into small bits. Cook until brown and cooked through. When no longer pink, drain fat. Add tomato sauce to Italian sausage, turning heat to low. Slice baguette and tear lettuce into bite sized pieces for a salad. When pasta is done, drain and serve topped with Italian sausage and sauce, with bread and salad on the side. 

Steak Fajitas                                                             

1 pound skirt steak – $4.00

Shredded Cheddar cheese – $2.00

Flour tortillas – $2.00

1 onion, sliced – $ .75

1 tomato, diced – $ .50

Shredded lettuce – $ .25

Total – $9.50 

Slice steak into ½” slices against the grain. Heat a skillet over medium heat. Add 1 tablespoon oil. When hot, add steak and onion slices. Cook, stirring occasionally. When steak is cooked through, add 1 tablespoon chili powder, 1 teaspoon garlic salt, 1 teaspoon cumin, cracked black pepper and ¼ cup water. Stir to combine, coating steak. When some of the water has cooked off, serve steak wrapped in tortillas, topped with tomato, cheese and lettuce.

Healthy eating habits?

I’m trying to eat more healthy…I just want someone’s opinion on my diet.

Breakfast: Cinnamon and Apple Oatmeal (1 packet)
1/4 Bagel with light cream cheese (I got too full to eat the entire thing)
1 cup orange juice

Lunch: 1/2 Avocado slices with salt
1 Activia mixed berry yogurt

Dinner: 1 plate pasta with meat

There’s probably too many carbs, but I love carbs! What else can I add or replace?

Ok, it doesnt look like anyone is answering your question yet(dont you just LOVE spammers!)
One thing I would mention is that the Activia is higher calorie then LIGHT AND FIT brand of yogurt(I made that switch myself) Most grocery stores carry both brands, and typically in my area light and fit is alot cheaper. (it also has NO fat) but it pretty much seems to only come in vanilla or plain, which can get boring after awhile.
the meat depends on the type of meat. the avacado is fattening, but if you arent eating it all the time, its healthier fat Im told. as far as the cream cheese goes there are alot of very low calorie options to put on bagels. like fat free yogurt and fruit. ever put a couple of berries and fruit in a blender, or mashed them up with a fork- its like substitue jam without all the sugar(thats what my pet rat gets to eat with her bagels).
and to reduce calories in juice you can always add a little bit of water to make it last a little longer, and have a little bit less calories. I dont drink water but flavored water is good so I often get a strong type of juice, like grape or orange, and ad half water to half juice, sometimes it makes it real thin to what other people like though.

I just made a steak salad for lunch with avocado slices…?

I still have half of a avocado left & would lkie to use the rest for dinner later; I don’t have any lime or lemon juice to keep it from turning brown…Can I still use it once it turns brown as long as I use it the same day? I have it kept in the fridge in a zip lock bag right now.

You should have left the seed with the one you are keeping for dinner. My boyfriend’s mother told me that the seed will keep the avocado from turning brown. Believe me she is a great mexican lady cook! The BEST!!!

2. Heat skillet with olive oil under medium-low heat.
3. Cook the garlic in the hot oil for about 5 minutes (or until slightly browned).
4. Place the prawns into the oil, increase heat to medium.
5. Season the prawn with salt and pepper.
6. Keep stirring the prawns until they start to change color.
7. Reduce heat to low.
8. Add the avocado mixture into the prawns.
9. Stir until the avocado is completely heated (takes about 2 minutes).
10. Serve with a little bit of black pepper.

Quick and Easy Butter Bean Soup

1 1/2 cups finely chopped celery
1 cup finely chopped carrots
3/4 cup finely chopped onion
3 tbsp extra-virgin olive oil
3 tbsp all-purpose flour
4 cups water
1 can (16-oz) baby butter beans
1 can (16-oz) speckled (or large) butter beans
1 can (14-oz) Italian-style diced tomatoes
1 tsp dried basil

In a large saucepan, heat oil and add celery, carrots, and onions. Cook until vegetables are soft, stirring frequently. Add flour and cook, stirring, about a minute. Gradually add the water, stirring continually until smooth. Add the beans, tomatoes, and basil to the pan and bring to a boil. Reduce heat to simmer and cook about 20 minutes, until thickened slightly. Add salt and pepper to taste, if desired.

Note: You can add a cup of diced ham when you add the beans for a ham and beans soup.

TURKEY LETTUCE WRAPS

2 large leaves of leaf lettuce
2 slices turkey bacon, cooked
6 thin slices smoked turkey breast
2 thin peeled avocado slices
2 thin tomato wedges
1 tbsp Blue Cheese salad dressing

Top the lettuce leaves evenly with the bacon, turkey slices, avocado slices and tomato wedges. Drizzle the dressing over the meat and vegetables. Roll each lettuce leaf up tightly, securing it with a toothpick, if desired.

Yield: 2 wraps

Note: Be careful with the toothpicks to prevent choking. Toothpicks should be removed before you start eating.

Monte Cristo sandwiches are famous in many nations. They are made from very aromatic and rich ingredients which help sustain energy in extreme cold and wintry weather. These sandwiches are made from turkey or ham, butter, white or brown bread, mayonnaise etc. There are different types of Monte Cristo sandwiches namely, Classic Monte Cristo, stuffed Monte Cristo, deep fried, shallow fried, eggplant, sweet mustard sauce sandwiches and many more such varieties. The classic Monte Cristo sandwich has the following ingredients;

* 4 slices of white or brown bread
* About 50 grams of cooked ham slices. (The ham is cooked in reduced sodium)

* 2 slices of Swiss cheese (reduced fat)
* ¼ cup milk (reduced fat)
* 1 egg white

Spread the mustard sauce on 1 side of the bread slice. Place ham and cheese slices over the bread slice. Spread butter on another slice of butter and put it on the ham and cheese slices to make a sandwich. Repeat the same procedure for other bread slices. Keep the sandwiches aside. In another shallow pan or bowl, mix milk and egg white properly. Coat a frying pan or a skillet with butter. Place the pan over medium flame. Place the butter on the pan and let it melt completely. The next step is to dip each sandwich in the milk and egg batter and coat it properly. Drain off the extra batter. Place the dipped sandwiches in the frying pan and fry for about 2 minutes until they are golden brown. Sprinkle powdered sugar over it and serve with favorite berry sauce.

The deep fried and the shallow fried sandwiches are also made in the same way except the frying method differs. The other types such as eggplant and sweet mustard sandwiches are made with varying ingredients. The super stuffed Monte Cristo sandwiches have following ingredients
* 8 slices smoked bacon
* 4 large eggs, beaten
* 1/4 teaspoon grated or ground nutmeg
* 1/2 teaspoon ground black pepper (coarse)
* 2 tablespoons butter
* slices white or brown bread
* 1/2 cup brown mustard
* 1/2 cup cranberry sauce (raspberry, blueberry or strawberry may also be used)
* 1/2 pound cheese
* 1 pound sliced ham
* 1 pound sliced turkey breast
* 1 1/2 cup medium maple syrup

Place a frying pan or a skillet on a medium flame. Cook the bacon and let it dry on tissue papers. Drain all the fat from the pan. Beat the eggs and add to a large bowl. Add 1 tablespoon butter and let it melt. Dip the bread slices in the egg mixture and coat both the sides very well. Place these 2 slices on the frying pan until brown. Keep them aside. Take the other 2 slices. Spread mustard, cranberry sauce, cheese on one slice. Place bacon, ham and turkey to the slice. Use a spatula to then place these two slices over the earlier egg covered slices. Press them together gently. Heat the maple syrup in a pan and generously pour it over the sandwiches. Stuffed Monte Cristo sandwich is ready. The other Monte Cristo sandwich recipes that are famous are Avocado, baked, delight, eggplant, sweet mustard and many more.

Food – male and female…avocado…..?

Do you think some foods are intrinsically female and some male? I don’t mean like grammar but avocado, right, do you know any men that like avocado? It’s a female thing, right? Like Black Cherry Yoghurt, natural yoghurt, green olives, Lambrini, lettuce. Male food is like spare ribs, pork pies, prawn vindaloo, balti pies. I know it’s a generalisation but it’s only for fun. Any other very male or female foods?
By your wonderful answers, I am starting to think that women eat food that will keep them alive for as long as possible whereas men tend to (in general) lean towards less healthy, more immediately gratifying food. Is this because cannot conceive of the next 10 years of their life or are they just thick?

Does this sound like a good recipe or a disaster?

I cut up some chicken breast and browned it in a non-stick pan with some garlic, salt, and pepper. I’m going to slice an avocado in half, scoop out the pulp, mash it up with some chopped tomatoes and a little cilantro (dried, because I don’t have fresh on hand).
I want to mix that with the chicken and spoon it into the avocado shells. Put a little shredded cheese on the top and bake it till the top is browned.

Do you think those ingredients would go good together or should I call Pizza Hut? lol
I’ve already cut up and cooked the chicken but I think I’ll do as you suggest Darren, and leave the avocado mixture uncooked.

This sounds good actually, but you may want to think twice before cooking avocado. When avocado is heated, it gets a really strange and unpleasant consistancy. It has a relatively high fat content for being a fruit, so it sort of melts and gets all weird.

My suggestion is to keep the chicken breasts whole, and pan-fry them with the garlic, etc until golden brown. Transfer them to the oven and finish cooking. Then, serve them with the mashed avocado, tomato, seasonings, cilantro and chopped onion (a basic guac) on top. Sounds delish!

Serve it with a nice salad and youve got an amazing dinner.

Fast Lunch Ideas

If you are a working man, you know how important lunch is. You can’t function without a good lunch. A good lunch is the difference between feeling great during the afternoon and feeling worn out. Many times we skip on lunch. We don’t either eat the right things, or don’t eat at all. I know several people who don’t eat any lunch at all. Especially women, they think they can skip this meal and not have to worry about it. I’m the type of person who can’t skip a meal. Maybe one of the reasons is that I can’t turn down a good meal. One thing I would suggest is that you alternate fixing each others lunch. One day you fix both of your lunches, while the next day have her fix both of them. This will give you time to do the other things that you need to do.

You can also fix your lunch before you go to bed at night. By doing this, you don’t have to rush yourself. Which, will make your day that much better. I hate having to rush in the morning. What kinds of things should you fix? Here we will go into some simple things to fix.

Tuna and Bell Pepper Pocket

3 (6-ounce) cans drained, solid white tuna (in water) ½ cup chopped bell peppers ¼ cup chopped celery ¼ cup sliced onions 8-12 lettuce leaves (preferably green) 2 medium-size sliced tomatoes (8-12 slices total) 3 tbsp. fat-free Italian dressing 1 tbsp. dried oregano 1 tbsp. black pepper 4 (6-inch) pita breads Combine tuna, green peppers, celery and onions in a bowl. In another bowl, combine dressing, black pepper and oregano, pour it over the tuna mix and stir. Refrigerate for a few hours. When serving, put 2-3 tomato slices and 2-3 lettuce leaves in each pita bread. Add tuna mix to pitas. There’s enough for 4 servings.

I love this. I don’t think there is a better easier lunch item than this.

Black Bean Salad ½ (8-ounce) can drained black beans 1 (15-ounce) can drained whole kernel corn 4 chopped green onions ½ chopped green bell pepper 3 diced tomatoes ½ avocado peeled, pitted and diced ½ (2-ounce) jar pimentos 2 tbsp. lemon juice 3 ounces fat-free Italian salad dressing ¼ tsp. garlic salt Combine Italian dressing, black beans, green onions, corn, bell pepper, avocado, pimento, tomatoes, and lemon juice in a bowl. Add and toss pepper, salt and garlic. Store in Tupperware and refrigerate. Offers up three delicious servings for that big appetite of yours.

Smoked Chicken Sandwich ½ (8-ounce) loaf sourdough bread ¼ tbsp. vinegar 2 tbsp. chopped parsley 1/8 cup low-fat mayonnaise or fat-free salad dressing ¼ cup chopped bell peppers (you can’t go wrong with bell peppers) ½ small onion thinly sliced ½ medium sized tomato sliced 8 (1-ounce) slices low-fat mozzarella cheese 2 cloves minced garlic 8 (1-ounce) slices lean chicken 1 tbsp. black pepper Slice the loaf of bread horizontally. Remove some soft bread from inside each half. Stir mayonnaise and vinegar together. Add parsley, bell peppers, black peppers, and garlic to the mix. Let stand for 15 minutes. Layer the bottom of the loaf with 4 slices of chicken and cheese, then layer with half of the onions and half of the tomatoes. Spread half of the mayonnaise concoction and repeat the entire process from the start with the remaining ingredients. Close the sandwich with the second bread shell and chill until it’s ready to serve. When serving, cut loaf into 3 wedges (secure loaf with wooden sticks for a better cut). Makes 3 servings. There you have some easy lunch ideas.

General Tips

1. Keep your refrigerator at the right temperature. It should be kept between 38 and 40 F. to keep your foods as fresh as possible without freezing them.

2. Keep your eye on expiration dates when you shop.

3. Do not store highly perishable foods in the refrigerator or freezer door. They are more prone to temperature fluctuation.

4. Moisture promotes rotting and mold. Wipe vegetables and fruits dry before storing and avoid storing in plastic bags.

Fresh Fruits and Vegetables

Vegetables and fruits give off a gas called ethylene as they ripen. The ethylene sets off a chain reaction that causes the release of more ethylene, causing the food to ripen further. When fruits and vegetables are exposed to ethylene, they ripen faster. Some fruits and vegetables give off more ethylene than others – and some of them are more sensitive to ethylene than others.

1. Ethylene producers include apricots, avocados, bananas, cantaloupes, honeydew melons, kiwis, mangoes, nectarines, papayas, peaches, pears, plums, and tomatoes.

2. Fruits and vegetables that are sensitive to the effects of ethylene include: apples, broccoli, carrots, cucumbers, eggplants, green beans, lettuces and other greens, potatoes, summer squash, and watermelons.

3. To keep fresh fruits and vegetables fresh longer, do not store any of the former group n the same drawers as those in the latter group.

4. Store fruits and vegetables in the warmest part of your fridge to preserve flavor.

5. Remove produce from plastic bags before storing. The bags trap the ethylene close to the fruit so that it ripens faster.

6.Wash produce and then dry well before storing. Moisture speeds rotting.

Meats and Eggs

1. Keep fresh meats refrigerated between 38-40 F.

2. Keep meat in original wrapping in refrigerator if you will be using it within two days.

3. Wrap meat in foil or freezer paper before freezing.

4. Make sure that there is plenty of air circulation around meat products in your refrigerator.

5. Store eggs pointed side down.

6. Wrap smoked meats like ham or bacon in a vinegar-soaked cloth.

7. Cool cooked meats quickly and completely before placing them in refrigerator.

Bread and Cereal Products

1. Store fresh bread in a cool, dark, dry place like a cupboard or breadbox.

2. Close the waxed paper inner bag of breakfast cereals tightly to preserve freshness. Better yet, transfer the cereal into a zipper lock plastic bag and put it back in the box.

3. Freeze bread that will not be used within a week. If you freeze artisan breads pre-sliced, you can just take a slice when you need it.

4. Keep soft cookies soft by storing them in a cookie jar or airtight container with a slice of bread.

5. Cut slices from loaf cakes like banana bread and pound cake from the middle instead of the end. After slicing, push the two ends together to reform the ‘loaf’. You don’t leave a cut end to get stale that way.

6. To keep cake moist, store it with half an apple in the container.

Dairy Products and Cheese

1. Store milk in its original container.

2. Do not store milk in the door where temperature is warmer.

3. Put milk back in refrigerator immediately after using.

4. Wrap cheese in waxed paper or plastic, then store in deli drawer.

5. Do not store ice cream in the freezer door. Keep it in the main part of the freezer.

6. Place a sheet of plastic wrap or wax paper directly on the surface of the ice cream before storing. It will keep fresh longer.

Miscellaneous

1. Store coffee in an airtight, opaque container to preserver flavor and freshness.

Making Maki Sushi is easy. The steps are very basic and easy to follow.

Maki is a famous and favorite Japanese dish. It can be any kind of sushi rolled with rice and nori (also known as seaweed) inside. “Maki” in Japanese means “roll.”

There are many kinds of maki, depending on the filling used. For example, there is California maki. This is salmon and mango rolled in rice and seaweed. Kappa maki is cucumber rolled in rice. And tekka maki is tuna fish rolled in rice.

Uramaki is more complex. Only an expert chef can do it to perfection. The easier ones to make are temaki. Temaki is often served in social gatherings at home.

There are several maki sushi according to thickness of the roll. Hosomaki is the most common and is made of thin rolls. By thin, it means the rolls are slender, with small strips of every ingredient inside. Hosamaki is cut to small sizes before serving.

Thicker rolls are called futomaki. These are thick because of the many ingredients inside. Thick roll can measure 1 to 1 ½ inches in diameter. Most futomaki are made of vegetables like radish and cucumber. Some have eggs also. Like hosamaki, futomaki is also commonly cut to small pieces before serving. However, in big festivals, it is served in whole uncut rolls.

Next, there is also the uramaki, wherein the rice is outside the roll. And temaki is a cone-shaped sushi rice roll.

When making maki, remember to freeze raw fish or seafood first below 4oF to kill any possible pathogens or parasites that may be harmful when consumed.

In making a maki sushi, one should have a sharp knife, and bamboo mat. A rice cooker is optional. It just makes it easier to cook rice. There is a special sushi knife with only one sharpened edge. It is advisable to use this when you can buy one, instead of using an ordinary kitchen knife.

Maki Sushi Recipe

Ingredients:
Sashimi-grade fish or sushi
Nori (thin sheet of seaweed)
Wasabi
Vegetables or other fillings (e.g. asparagus, avocado, cucumber)
Short-grained rice with sticky consistency
Vinegar rice
Gari (thinly sliced ginger roots)
Soy sauce

First make the sushi rice. Prepare the vinegar rice. Combine it with heated salt and sugar. Cook rice, making sure it will have a sticky consistency. It is the suitable type of rice for spreading on the nori.

Lay out the bamboo mat and place a plastic wrap on top. Lay out the nori, with the shinier side facing down. Slightly wet your hands and take a handful of rice. Spread it evenly and thinly on the nori. Leave a margin of half inch on all sides of the nori. Put the other ingredients in the middle.

Next, hold the two ends of the bamboo mat and roll it away from you. Make sure that the food tightens as you roll. Don’t roll too tightly though or the fillings will fall out.

Unfold the bamboo carefully, making sure the rolled food does not break. Place the rolled sushi in a cutting board and slice it evenly to several pieces. Serve it with soy sauce dip on the side.

For as long as I’ve been researching food and nutrition it never ceases to amaze me when folks act surprised by some of my choices for the best fat burning foods that really help reverse weight gain and promote sound health.

What is a good way to eat avocados?

I want to introduce them to my family, but how do I use them? Do you know any good recipies?

I love avocados!!! I make these things at home all the time:

- Tomato/ bacon/ avocado sammie.
- Curried chicken salad with mango chutney and avocado slices: take chicken, mayo and curry powder and combine. Spread mango chutney on a pita, add chicken and top with avo’s.
- Avo and tuna: mix a can of drained tuna with soy sauce and sesame oil. Put on toast points and add sliced avos.
- Avocado ice cream: 3 avos, 3 cups milk, 1 cup heavy cream, 3/4 cup honey, 1 teaspoon salt, juice of half a lemon. Blend in blender (add heavy cream last) and make according to your ice cream maker.
- Avo smothie: 1 banana, half an avo, 1 cup milk, sugar to taste. Add ice if you like.
-Quesadilla: between 2 tortillas: cheddar, green onions, sliced tomatoes, sliced avos, cilantro leaves, season with cumin. Serve with sour cream and salsa.
-Omlette: fill an omlette with ham, cheddar, avos and salsa.
-Salad: grilled salmon, cubed avo, red onion, cilantro, lemon juice, tomato. Serve over greens.
-Appetizer: Tomato paste, avo slices and goat cheese on toast. I use anchovies too sometimes but thats weird to most people… but I like it!
-Sammie: Avo, cream cheese, smoked samon.

I hope you like some of these! I love avos and I really do make all this quite often. Feel free to edit any of these things as these are only rough guidelines and ideas!!!

Does any 1 know a good chicken tortilla soup (easy recipe) without using avocados or too many veggies?

You can just leave out the avocado if called for in any recipe, and cut back on veggies, too. (you’re gonna need *some* for flavor, though!)

Chicken Tortilla Soup, Slow-Cooker

1 onion, chopped
1/2 small red bell pepper, chopped
1 jalapeño pepper, seeded and minced
3 cups chopped cooked chicken
6 cups chicken broth
1 (14.5-ounce) can petite diced tomatoes
1 (15.25-ounce) can corn
1 (10-ounce) can diced tomatoes and green chilies
1 tablespoon chili powder
2 teaspoons ground cumin
1/2 teaspoon salt
Vegetable oil
1 (11.5-ounce) package corn tortillas, cut into 1/2-inch strips
1 teaspoon salt
Garnish: shredded cheese, sour cream, avocado slices

Combine remaining ingredients except garnishes in a 5-quart slow cooker. Cook on Low for 8 hours.

In a Dutch oven, pour vegetable oil to a depth of 1/2 inch. Heat oil to 350° over high heat on stovetop.
Fry tortilla strips, in batches, for 2 minutes, or until golden brown. Drain on paper towels. Sprinkle with salt; set aside.

Top each serving with tortilla strips, cheese, sour cream, and avocado, if desired.

CHICKEN TORTILLA SOUP

1 large onion, chopped
2 Tbsp veg. oil
2 cloves chopped garlic
1 (4 oz.) can green chilies and juice
2 (15 oz) cans stewed tomatoes
2 (15 oz) cans chicken broth
2 tsp. worcestershire sauce
1¼ teaspoon hot sauce
2 chicken bouillon cubes
1 tsp. each salt, pepper, cumin, chili powder, and sugar
1½ cups water
1 cup (or more) chopped cooked chicken meat

Saute’ one chopped onion in 2 tablespoons of oil. Add the rest of the ingredients. Simmer for 45 minutes to an hour.

To serve, crush tortilla chip in your soup bowl. Top with soup, cheddar cheese, and slices of avocado.

What to Avoid

Fruit juices, though they contain vitamins, can take away children’s appetites so that they will not be hungry at mealtimes. Beware of this problem and cut back on juices.

The toddler years are full of discovery in the food realm. Make sure your child is presented with healthy foods daily, and he will learn to eat a more balanced diet and be stronger because of it.

Any pot of natural yoghurt.

Lunch

Jacket Potato
Using tuna for the topping (canned in water) not in oil. Side dish of salad.

Avocado and Prawn salad
Must be fresh avocado. Serve with prawns, salad and lemon juice.

Grilled Fresh Fish

Tuna and prawns with noodles

Gently fry a selection of vegetables such as onions, mushrooms, peppers, courgette and leek in a little olive oil. When lightly browned, add a handful of prawns. Cook for a few minutes, and then add canned tomatoes, tomato puree, black pepper and tuna canned in water. Bring to the boil and simmer until the sauce thickens. Serve with rice noodles.

Drink only water of fresh juices.

What can be added to avocado, besides lemon or lime juice, that will keep it fresh and not turn brown?

The reason I ask this is that I have no lemon or lime at the moment. Will vinegar work?

There is a trick, if you don’t have lemon or lime (which are natural ant-oxidants). If you are using avocado like in “Guacamole” which is basically mashed avocado… put the pitt (seed) in your dish, it helps keep the flesh from turning brown.
If you are just using it sliced in a salad, your salad dressing (especially vinagrette) will do the trick, just don’t make your salad too early, or add the avocado slices at the last minute.

1 1/2 tablespoons olive oil
1/2 teaspoon chopped garlic
1/2 pound peeled and deveined prawns
1 teaspoon salt
1 pinch ground black pepper, to taste

Directions:

1. Mash the following together into a bowl:

- avocados
- sugar
- parsley
- lemon zest
- lemon juice

2. Heat skillet with olive oil under medium-low heat.
3. Cook the garlic in the hot oil for about 5 minutes (or until slightly browned).
4. Place the prawns into the oil, increase heat to medium.
5. Season the prawn with salt and pepper.
6. Keep stirring the prawns until they start to change color.
7. Reduce heat to low.
8. Add the avocado mixture into the prawns.
9. Stir until the avocado is completely heated (takes about 2 minutes).
10. Serve with a little bit of black pepper.

And that is it, a perfect dish to spice up your next dinner party!

To help you make the most of your already tight food budget, we’ve got 5 deliciously complete dinners than you can make for your family of 4 for under $10.

Chicken Rice Bowls                                                   

4 chicken thighs – $3.57

1 cup dried rice – $.50

1 can black beans – $1.15

4 oz. shredded cheddar cheese – $.75

1 avocado, sliced – $1.00

1 jar of salsa – $1.50

Total – $8.47

Dice chicken thighs. Heat a skillet on the stove over medium heat. When hot, add 1 tablespoon canola oil. When oil is hot add chicken. Brown, seasoning with garlic salt and pepper. While chicken is cooking, boil rice according to directions. Heat beans in a small saucepan on the stove. When the rice and chicken are done, layer rice, black beans and chicken, topping with 1 oz cheddar cheese, avocado slices and salsa.

Bratwurst                                                                  

4 links Bratwurst – $4.00

1 green pepper, seeded and diced – $1.00

1 onion, sliced – $.75

4 French rolls – $1.25

Frozen French fries – $2.00

Total – $9.00 

Heat grill. Place bratwurst on grill, turning occasionally until browned on all side and cooked through. Preheat oven to 425 degrees and cook fries according to directions.

Meanwhile, heat a medium skillet over medium high heat, adding one tablespoon on oil. When hot, add green pepper and onion to skillet. Cook, stirring and turning occasionally until brown and soft. Serve bratwurst in rolls, topped with green peppers and onions and French fries on the side.  

Pasta and Italian Sausage                                        

1 pound bulk hot Italian sausage – $1.99

1 pound dried penne pasta – $1.50

1 jar tomato sauce – $2.00

Baguette – $1.00

1 head Romaine lettuce – $1.00

Total – $7.49 

Boil water in a large pan, salt and cook pasta according to package directions. Meanwhile, heat a medium saucepan over medium-high heat. When hot, add Italian sausage, breaking up into small bits. Cook until brown and cooked through. When no longer pink, drain fat. Add tomato sauce to Italian sausage, turning heat to low. Slice baguette and tear lettuce into bite sized pieces for a salad. When pasta is done, drain and serve topped with Italian sausage and sauce, with bread and salad on the side. 

Steak Fajitas                                                             

1 pound skirt steak – $4.00

Shredded Cheddar cheese – $2.00

Flour tortillas – $2.00

1 onion, sliced – $ .75

1 tomato, diced – $ .50

Shredded lettuce – $ .25

Total – $9.50 

Slice steak into ½” slices against the grain. Heat a skillet over medium heat. Add 1 tablespoon oil. When hot, add steak and onion slices. Cook, stirring occasionally. When steak is cooked through, add 1 tablespoon chili powder, 1 teaspoon garlic salt, 1 teaspoon cumin, cracked black pepper and ¼ cup water. Stir to combine, coating steak. When some of the water has cooked off, serve steak wrapped in tortillas, topped with tomato, cheese and lettuce.

Does any 1 know a good chicken tortilla soup (easy recipe) without using avocados or too many veggies?

You can just leave out the avocado if called for in any recipe, and cut back on veggies, too. (you’re gonna need *some* for flavor, though!)

Chicken Tortilla Soup, Slow-Cooker

1 onion, chopped
1/2 small red bell pepper, chopped
1 jalapeño pepper, seeded and minced
3 cups chopped cooked chicken
6 cups chicken broth
1 (14.5-ounce) can petite diced tomatoes
1 (15.25-ounce) can corn
1 (10-ounce) can diced tomatoes and green chilies
1 tablespoon chili powder
2 teaspoons ground cumin
1/2 teaspoon salt
Vegetable oil
1 (11.5-ounce) package corn tortillas, cut into 1/2-inch strips
1 teaspoon salt
Garnish: shredded cheese, sour cream, avocado slices

Combine remaining ingredients except garnishes in a 5-quart slow cooker. Cook on Low for 8 hours.

In a Dutch oven, pour vegetable oil to a depth of 1/2 inch. Heat oil to 350° over high heat on stovetop.
Fry tortilla strips, in batches, for 2 minutes, or until golden brown. Drain on paper towels. Sprinkle with salt; set aside.

Top each serving with tortilla strips, cheese, sour cream, and avocado, if desired.

CHICKEN TORTILLA SOUP

1 large onion, chopped
2 Tbsp veg. oil
2 cloves chopped garlic
1 (4 oz.) can green chilies and juice
2 (15 oz) cans stewed tomatoes
2 (15 oz) cans chicken broth
2 tsp. worcestershire sauce
1¼ teaspoon hot sauce
2 chicken bouillon cubes
1 tsp. each salt, pepper, cumin, chili powder, and sugar
1½ cups water
1 cup (or more) chopped cooked chicken meat

Saute’ one chopped onion in 2 tablespoons of oil. Add the rest of the ingredients. Simmer for 45 minutes to an hour.

To serve, crush tortilla chip in your soup bowl. Top with soup, cheddar cheese, and slices of avocado.

Though it most often uses beef, it is usually complemented with other meats including chicken, steak, and goat. The meat is fired up in a traditional manner, and most Columbian recipes will add a side salad and some bread to make the meal more traditional.
