4 leaves of green or red leaf lettuce (optional)

In a large saucepan, place chicken with 4 cups salted water. Bring to a boil. Put off the heat, cover and set aside for 15 minutes until the temperature reaches 160°F.

Peel the grapefruit and catch the juice using a bowl. Cut the grapefruit into segments and drop them in the bowl. Add the radish, basil, salt and avocado. Mix gently to avoid crushing the avocado pieces.

Discard the liquid while draining the chicken. Cut crosswise in ½ inch slices. The grapefruit is cut into four portions and add a quarter of chicken to each. Drizzle the juice on top of the chicken slices. Garnish with additional basil and serve with lettuce leaves as desired.

You can also eat this recipe with rice.

Bacon Stuffed Avocados

  • 8 slices crisp bacon, crumbled.
  • 4 medium avocados, ripe and unpeeled.

  • ½ cup of butter.
  • ¼ cup of brown sugar.
  • ¼ cup of white wine vinegar.
  • ¼ cup of garlic puree.
  • 1 tablespoon of soy sauce.

Slice the avocados in half, then remove pits and brush with lemon juice. Fill the avocado with bacon.

Get out a small sauce pan and over medium heat stir together the lemon juice, butter, brown sugar, vinegar, garlic and soy sauce. Bring the mixture to a boil, then allow to cool slightly. Pour over the bacon stuffed avocados and serve.

Thai Shrimp Kabobs With Hot Ginger Sauce
MARINADE
1/2 cup canola oil or peanut oil
1/2 cup soy sauce
2 tablespoons lemon juice
2 teaspoons grated fresh ginger
4 cloves garlic, minced
HOT GINGER SAUCE
1/3 cup apricot preserves
1-4 tablespoon soy sauce (start w/ 1 and keep adding until to your taste)
1/4 cup lemon juice
1/2 teaspoon grated fresh ginger
1 teaspoon cornstarch
1 tablespoon orange juice or water
# ombine marinade ingredients (oil through garlic) in a ceramic or glass bowl.
# Stir in shrimp, cover and refrigerate between 3 hours and overnight.
# Thread shrimp on skewers and grill just until opaque (about 5 minutes).
# SAUCE:.
# In a small saucepan, combine apricot preserves, soy sauce, lemon juice and 1/2 tsp grated ginger; bring to a boil.
# Dissolve cornstarch in orange juice and add to apricot mixture.
# Stir just until sauce thickens.
# Serve hot with shrimp.

*Add chillies and garlic
*Saute for 2 minutes and set aside

*Heat beans in a separate pan or in the microwave

*Spoon them evenly in tostada shells

*Add the lettuce, tomatoes, fried tofu with chillies and garlic

*Sprinkle cheese on the top

Tostada with Avocado and Cheese

Ingredients

4 8-inch corn tortillas for tostada shells
1 1/2 tbsp Olive oil
1 1/2 tbsp Vinegar
1 cup  lettuce, shredded
1 can Red Salsa
1/4 can  jalapeños, sliced
6 tbsp ripe avocado
1/4 cup Crumbled goat cheese or feta or shredded Monterrey Jack or Cheddar
12 Olives
1 can Refried beans
salt and pepper

Direction

*Mashed the avocados

*Heat re-fried beans in pan or microwave

*First layer: Spoon bean evenly on the tostada shells

*Second layer: Spoon avocado on the first layer

* Add in lettuce, jalapeños, and salsa over the avocado

*Season with salt and pepper

*Sprinkle with cheese and a splash olive oil

Spicy Bean and Feta Cheese Tostada

Ingredients

1 28 ounce can vegetarian baked beans
1 cup chopped onion
1/2 tsp chili powder
1/4 tsp ground cumin
1 tbsp olive oil
4 8-inch corn tortillas for tostada shells
1/2 cup crumbled feta cheese
1/2 cup chopped fresh tomatoes
1/4 cup chopped olives
3 tbsp chopped fresh cilantro


Direction

* In a pan heat oil and saute onions

* Seasoned it with chili powere and cumin

*Add beans and saute them all together

*In a bowl, mix together tomatoes, olives, cilantro and cheese.

*Heat tostada shells

* Spread bean mixture and cheese mixture on the tostada shell

* Sprinkle more cheese if desired

Does anybody know any good avocado-containing salad recipes?

I’ve been using avocados for guacamole and as sushi filling, but really would like to make some salad with it. Thank you for your recipes!

I kinda make this version of a chicken cajun cobb salad. I love avocado also. It is great in salad.
2 chicken breasts that I cook in non stick skillet and I sprinkle plenty of cajun seasoning on both sides.
I bag of Romaine or better yet spring greens. (I never use plain iceberg lettuce.)
1 tomato diced up
a few thin slices of red onion (I use most of an onion)
1 avocado or even 2
1 cup of cheddar cheese ( I use sharp cheddar)
Croutons ( I make my own by grilling crusty bread with butter and cajun seasoning on both sides and let sit a few minutes)
Put your greens on a platter and start putting your other ingredients in rows on top of the greens. I like either a fresh made ranch (I make the buttermilk version of Hidden Valley only)
or a good poppyseed dressing. A red french would work ok too.
This will serve a few people and it tastes great.

We have Spanish-born Bernadino de Sahagun to thank for the detailed culinary history of the Aztec culture. His extensive writings documented every food common to the culture. This is an excerpt from Sahagun’s writings about the food vendors in the large Aztec markets:

“He sells foods, sauces, hot sauces, fried [food], olla-cooked, juices, sauces of juices, shredded [food] with chile, with squash seeds, with tomatoes, with smoke chile, with hot chile, with yellow chile, with mild red chile sauce, yellow chile sauce, sauce of smoked chile, heated sauce, he sells toasted beans, cooked beans, mushroom sauce, sauce of small squash, sauce of large tomatoes, sauce of ordinary tomatoes, sauce of various kinds of sour herbs, avocado sauce. (Sahagun, translated 1950 -1982).

Ingredients Then and Now

The paragraph above refers to many of the ingredients in our modern-day salsas.

Large tomatoes – We believe this references is to a large red tomato similar to what we eat to day.

Ordinary tomatoes – most likely this reference is to the tomatillo or tomate verde.

Smoked chiles – The chipotle or smoked jalapeno was a staple in the Aztec diet.

Avocado – cultivated by the Aztecs the avocado was an important source of fat and protein and was used in a sauce similar to what we call guacamole.

Two Delicious Salsa Recipes:

2 c fresh plum tomato, diced

1 c fresh green tomato, diced

1/2 c fresh green bell pepper, diced

1/4 c fresh purple onion, chopped.

1 tbsp jalapeno pepper, finely chopped

1 tbsp fresh cilantro, finely chopped

1 clove fresh garlic, minced

1/4 tsp salt.

1/8 tsp coarsely ground pepper.

2 tbsp fresh lime juice

1 tbsp olive oil.

Directions:

Combine all ingredients in a bowl. Stir well. Serve at room temperature or chilled. Serve with corn or flour tortilla wedges, poultry, or fish.

Yield: 3 cups (approx 6 calories per tbsp).

Mango Salsa

2 medium ripe mangoes

1 small cucumber, peeled, diced (it says seeded, but I’ve never bothered)

1 ripe tomato

juice of 1 lime (lemon works, too!)

pinch of salt

1/2 – 1 small fresh chile pepper, minced, or Tobasco or other hot pepper

sauce to taste (I have always used Tobasco)

1 Tablespoon chopped, fresh cilantro (It says optional, but I don’t really

think so)

Peel and chop the mangoes. In a large bowl, mix together the mangoes,

cucumber, tomato, lime juice, salt, chile or tabasco, and cilantro. Let

salsa sit for 10 minutes to allow the flavors to blend before serving. Mango

salsa keeps refrigerated for 2 or 3 days.

Facial Mask

This facial mask is useful for dry skin. Mash half avocado and apply it leisurely on your face. Keep it for 15 minutes and then rinse it off with warm water.

Make a paste by mixing 1/4 peeled & smashed avocado, 1 egg white, 2 tbsp. oatmeal and 1 tsp lemon juice. Apply this paste on your hand and leave it for 20 minutes. Rinse it with warm water and pat it dry. You would be thrilled by the results by using it regularly.

Facial Scrub

You would need 2 tbsp. flax seeds, 1/2 mashed banana and 1/2 avocado peel. Use a small bowl to mix flax seeds and banana. Scoop the banana and flax seed by using avocado peel. Massage this scoop on your face in circular motion, slowly and gently. Rinse it with warm water.

Firstly I would like to state that I am diabetic and I find it very difficult to create a diabetic diet plan and find foods that are good for me to eat. However after I bought a couple of eBooks and did a lot of research I found the information I was looking for and now I am going to share it with you.

The recommended daily calories for someone with diabetes is usually around 1200-1800 calories and consists of 50%-60% carbohydrates 12%-20% protein and not more than 30% fats. Now that is just a basic outline of what your daily intake should be I will go in to more detail below.

Some must haves for people with diabetes are Alpha-lipoic acid this is like a vitamin and it helps enhance the glucose uptake and improves diabetes nerves damage.

Secondly we have Omega 3 which helps to protect against the hardening of arteries.

The last one I would like to recommend is artificial sweeteners obviously everyone who suffers from diabetes knows that sugar should be kept to a low level in your diabetic diet plan so you can use alternatives such as aspartame and saccharin.

Foods that diabetics should avoid are high fat foods this is a big no no as well as foods with a lot of sodium. As well as this you should restrict the amount of alcohol you intake if you can just do not drink alcohol at all as this can cause health problems like liver damage and increase the risk of heart disease.

Avocado’s can be hard to find and/or a little pricey if living in a northern climate, so here are some recipes that use avocado oil instead.

Ingredients: 1 cup coarsely chopped onion 1-1/2 Tbsp fresh ginger, chopped or grated 1 tsp olive oil or virgin coconut oil 1-1/2 tsp red curry powder 1 19 oz can chickpeas, rinsed and drained 1 14 oz can diced tomatoes with liquid 1 10 oz bag spinach 1/2 cup water 1/4 tsp salt (optional)

Directions: Put the ginger and onion in a food blender/mixer until it is minced. Heat oil gently in large skillet over medium high heat. Add onion mixture and curry. Sauté 3 minutes. Add chickpeas and tomatoes; simmer for 2 minutes. Stir in spinach, water and salt. Cook another minute or until spinach wilts.

2 – Avocado Fruit Salad Number of serving: 8 Preparation time: 10 minutes

Ingredients:

1/2 ripe avocado, seeded and peeled (1/2 sliced into 8 portions, 1/2″ cubed) 1-1/2 Tbsp olive oil 2 Tbsp raspberry vinegar 1 tsp grated lime peel 1 Tbsp fresh lime juice 1 Tbsp fresh chopped basil leaves 1/2 tsp dry mustard 1/4 tsp salt 1/4 tsp pepper 1 10 oz package mixed baby greens 4 kiwi, peeled and sliced in half rounds 4 grapefruit 2 cups sliced strawberries 2 star fruits, sliced

Directions: Salad Dressing – In a small bowl, whisk together remaining ingredients, set aside. Salad – In a large salad bowl, combine baby greens, kiwi, grapefruit, strawberries and star fruit. Pour on dressing and toss to coat. Top with avocado slices.

3 – Very Veggie Salad Number of Servings: 4 Preparation time: 15 minutes

Ingredients: 4 cups raw spinach 4 cups romaine lettuce 2 cups chopped red, yellow, orange bell pepper 2 cups cherry tomatoes 1 cup chopped broccoli 1 cup chopped cauliflower 1 cup sliced yellow squash 1 cup sliced zucchini 2 cups sliced cucumber 2 cups chopped baby carrots

Directions: Wash all of the vegetables and mix them together in a large mixing bowl. Top this colorful meal with a nonfat or low-fat dressing of your choice

I’ve ehard of people putting mayo in their hair and that it helped making their har feels moother and shinnier. I was wondering, what are your home-made recipes for your hair?

I was thinking of whisking 2 eggs and adding 1/4 a cup of olive oil in the mix and massage it through my hair.

I also heard of girls using a small jar of mayo and half an avocado mushed together and massaging through their hairs.

The Best Home Remedies for Rescuing Dry Hair:

 Beat up on an Egg: Separate the white of an egg from the yolk, and whip the white thoroughly. Then add 1 tablespoon of water to the yolk and blend until the mixture is creamy. Next, mix the white and yolk together. Wet your hair with warm water, remove the excess moisture, and apply the egg mixture to your scalp with your fingertips. Keep applying the mixture until it is used up.  Massage gently until the froth is worked into your scalp, and then rinse the hair with cool water.  Continue to rinse preferably in the kitchen sink until all of the egg is washed away.

Go for the Mayo: Heat up one half cup of mayonnaise until it becomes an oily, white goo and apply to dry, unwashed hair. Cover your hair with a plastic bag and leave it on for at least 15 minutes. Then, rinse and shampoo thoroughly, preferably in the kitchen sink.

Mix up a Tropical Treat: Mash one over-ripe banana (the blacker, the better) with a mushy, rotten avocado. Massage this exotic puree into your hair and leave on for at least 15 minutes before washing out…in the kitchen sink!

Grab a Cold One: For your HAIR, silly.  Beer can give your dry hair a healthy sheen. Before you blow-dry or style, use a pump bottle to spray your hubby’s favorite brew onto your hair. The beer will leave your hair shiny and sleek and its odor will disappear quickly.

In addition to using these home remedies regularly to avoid dry hair, try the
following preventative measures:

1) Avoid overshampooing. Shampooing can wash away the hair’s protective oils, so try washing less often and use a mild shampoo labeled “for dry or damaged hair.”  Proceed to step 2!

2) Condition regularly. Conditioners protect the hair’s cuticle layer from splitting from the shaft. Pick a conditioner that works well for your hair and use it after every shampoo.  Try one that’s good for “frizz”.

3) Wear a hat. Too much exposure to wind and sun can leave hair thirsty. Cover up when it’s blustery and cold, or hot and dry.

4) Trim off split ends. The biggest problem caused by dry hair is split ends. Schedule a trim every six to eight weeks to keep fraying ends under control.

5) Ease up on the heat. Heat (in the form of blow dryers, as well as straightening and curling irons) can quickly dry out hair. Let your hair air dry occasionally. Try using plastic cylinder rollers to straighten hair by wrapping slightly moist hair under and around rollers for about 10 minutes. For curling, try using sponge rollers overnight or sleeping with moist braids.

6) Don’t swim without a cap. Use a rubber cap to protect your hair from the damaging effects of chlorine. If you must forgo a cap, rub a spoonful of olive oil into your hair before diving in.

7) Deep condition hair after it’s exposed to salty or chlorinated water. This one is a no-brainer!

Chicken Avacado Pizza

INGREDIENTS
2 avocados – peeled, pitted and diced
1 tablespoon chopped fresh cilantro
1 tablespoon fresh lime juice, or to taste
salt to taste
1 clove garlic, peeled
4 (7 inch) pre-baked pizza crusts
1 tablespoon olive oil
1 cup chopped cooked chicken breast meat
1 cup cherry tomatoes, quartered
1 cup shredded Monterey Jack cheese
1 pinch cayenne pepper

DIRECTIONS
Preheat your oven’s broiler. If you have a pizza stone, place it in the oven while it preheats.
In a food processor, combine the avocados and cilantro. Puree while adding lime juice and salt to taste. Cover, and set aside.
Slice the garlic clove in half, and rub the cut side onto the tops of the pizza crusts for flavor. Brush both sides of the crusts with olive oil. Spread the avocado mixture thickly over the top of each crust, then arrange chicken and tomatoes on top. Sprinkle with cheese, and season lightly with cayenne pepper. Place pizzas on a baking sheet if you do not have a pizza stone.
Broil for about 5 minutes in the preheated oven, or until the cheese has just melted and the crust is lightly toasted

    5 avocados
    3-4 bananas, cut into small pieces(it depends on how sweet the bananas are)
    4-5 tablespoons sugar
    2 lemons, cut into half
    Directions
    1Cut the avocados into half and remove the skin and seed.
    2In a bowl, put the avocados and bananas and mash them up (but not too much).
    3Add sugar and squeeze the lemon juice.

    Dips are a great snack to have around. They work great for snacks for the kids, for the family, for parties, for friends or simply for ourself. I like to make a bunch of dips and freeze some of them so that I can pull them out when necessary. Most dips can easily be made in the blender or in a food processor. Below are some great dips that are easy to make and easier to eat. I personally love to throw all of the ingredients into my Magic Bullet blender and press on.

    Salsa

    3 cups tomatoes chopped
    ½ cup green or red peppers
    ½ cup red onion
    1 tablespoon fresh garlic
    ¼ cup lime juice
    ½ cup fresh cilantro
    ½ tsp. ground cumin
    ½ tsp. ground coriander
    Pinch of salt

    Either dice all ingredients and mix or toss everything in the food processor and blend.

    Edamame-Ginger Dip

    8 ounces frozen edamame
    ¼ cup water
    1 tablespoon tahini
    2 tablespoons low sodium soy sauce or braggs
    1 tablespoon fresh ginger
    1 tablespoon rice vinegar
    1 garlic clove
    Pinch of salt

    Cook the edamame then put everything in food processor. Chill in fridge for 1 hour.

    Guacamole

    2 avocados
    ¼ cup cream cheese or plain yogurt
    2 tablespoons onion
    2 tablespoons cilantro
    ¼ cup chopped tomato
    1 tablespoon lime juice
    1 garlic clove
    Pinch of salt and pepper

    Place everything in food processor and blend. May want to chill it for half an hour before serving.

    Yummy Feta Dip

    ½ pound of feta cheese
    2 garlic cloves
    ¼ cup milk (I use rice milk)
    3 tablespoons extra virgin olive oil
    Pinch of black pepper

    Crumble the feta into the food blender and add remaining ingredients. Make sure everything is chopped into fine pieces and blend until smooth. Chill in refrigerator for at least an hour. This dip needs to be eaten within three days so as not to spoil.

    Hopefully you can get as much enjoyment out of these dips as I do. They are all extremely simple and are always a hit at parties. I personally love to snack on them in between meals. It is nice to have good healthy snacks handy and ready to eat. Happy blending and enjoy.

    Avocados ok to use on bleached hair??

    ok – I have bleached hair, and recently was reading through some of my Tia’s hair mask recipe’s and found one that involves using Avocados{ Take a half of a overriped avocado and put it in the blender and thn take the pulp and apply to your hair evenly and leave on for a hour}
    now my frend said i shuldnt use it as a hair mask 1) cuz 2marrow I’m getting my hair rebleached 2) cuz she sayz ithat the avocado has certain acids in it that would react to my hair and dye it???? I just want to kow if that’s true and if the hair mask is safe to use???

    For Avocado facial mask, mash 1 ripe avocado. For dry skin add 1 tsp of avocado oil. Mix well; apply the mask to face and throat area and chill out. Place a towel dipped in hot water over face firmly to remove the mask. Next splash your face with the toner mixed with a drop of avocado oil.

    For dry and wrinkled skin, blend 4 drops of frankincense, 2 drops each of rose and neroli oils and 20 ml of avocado oil. This blend is good for rejuvenation, induces relaxation and sleep if used at bed time.

    Beet juice separating from homemade organic lip gloss?

    I’ve made my own lip gloss for awhile now, beeswax, avocado or sweet almond oil, vit. e oil and flavour with essential oils like cinnamon bark oil, peppermint etc. Now I’m trying to make a lip stain, using reduced beet juice. I’ve read tons of recipes where people do the same – but I’m having a problem with the beeswax and beet juice separating when cooled, leaving a chunk of beeswax on top, and liquid beet juice below.
    Any suggestions for what I can reduce the beets in that will mix with the beexwax/oil?

    I’ve been making skin care products for almost ten years, and it sounds like the problem you’re having is that you’ve introduced a water phase into your oil phase (oil phases include waxes). To get the two to blend takes some trial and error with temperature, emulsifiers, and blending.

    First, the water phase (your beet juice) and the oil phase (everything else you listed) need to be heated separately. There are some guideline temperatures to follow, but I’ve never used them, I just use intuition and I’ve never had a problem. But, having them both similar temperatures is important.

    Add the water phase slowly into the oil phase and blend. A stick blender works great for this. You may not be using one already, since its not necessary for oil products, but it is needed to blend oils and waters.

    Beeswax is kind of an emulsifier, but it might not be enough to blend the two phases. Borax can be used, but personally I like soy lecithin. You just need a small amount, no more than 3% of the whole product.

    I’ve never made tinted anything, but I’ve read about beet powder. If you can get your hands on this, it might eliminate the problem all together. From what I’ve read, it’s just powdered beets, and you’d just add it straight into the oil while you’re heating it. My guess would be that it would dye the oil and there’d be nothing to separate out.

    Facial Mask for Dry Skin
    1/2 avocado
    1 teaspoon almond oil (Note if allergic to nuts use different oil such as jojoba oil or olive oil). Even a vegetable oil in your cupboard will do.)
    Mash avocado and then add almond oil or oil of your choice. Apply to face, avoiding the eye area, and let set for 15 minutes. Rinse with warm water then cool water. Follow with toner and moisturizer.

    Avocado Honey Face Mask – for dry skin
    2 tablespoons of avocado
    2 tablespoons honey
    1 egg yolk
    Mash the avocado, add the honey and egg. Mix until thoroughly blended. Apply to face avoiding the eye area. Let set 10 minutes then rise with warm water then cool water. Follow with toner and moisturizer.

    Avocado Mask for Oily Skin
    1 avocado, mash
    1 egg white
    1 tsp. lemon juice
    Place all ingredients into a blender and blend until you get a mixture. Apply to a clean face with fingertips on the oiliest part of the face (T-zone). Let dry for 20 minutes. Rinse with warm water then cool water, follow with toner and moisturizer.

    Avocado’s can be hard to find and/or a little pricey if living in a northern climate, so here are some recipes that use avocado oil instead.

    Dry Skin Cleansing Cream
    1/2 oz. Beeswax
    1 oz. Lanolin
    2 oz. Almond Oil
    1 oz. Avocado Oil
    1 oz. Grapeseed Oil
    2 drops Clary-Sage Essential Oil
    2 drops Lemon Essential Oil
    3 oz. Spring Water
    Using a double boiler, melt beeswax, lanolin, and oils. Stir well. When melted, take off heat and add essential oils, then water. Wisk until cool.

    1/2 cup sliced avocado
    1 tsp. lemon juice
    3 cups baby spinach leaves
    1 small blood orange or naval orange, peeled, cut into sections
    1/4 cup KRAFT CATALINA Dressing
    3 Tbsp. orange juice
    2 Tbsp. PLANTERS Pecan Halves, toasted

    TOSS avocado and lemon juice in medium bowl. Add spinach, orange sections, dressing and orange juice; toss lightly.
    SPOON onto 2 serving plates.
    SPRINKLE with pecans just before serving.

    Mediterranean Salad with Feta Cheese

    Prep Time: 15 min
    Total Time: 15 min
    Makes: 4 servings, about 2 cups each

    4 cups mixed salad greens
    1 cup chopped plum tomatoes
    1 cup coarsely chopped pitted kalamata olives
    1 medium avocado, peeled, pitted and chopped
    1 pkg. (4 oz.) ATHENOS Traditional Crumbled Feta Cheese
    3/4 cup canned chickpeas (garbanzo beans), drained, rinsed
    1/2 cup thin red onion slices
    1/2 cup KRAFT Balsamic Vinaigrette Dressing

    TOSS all ingredients except vinaigrette in large bowl; cover.
    REFRIGERATE until ready to serve.
    ADD vinaigrette; toss to coat.
