What to do with prawns and avocado?

I have some beautiful cooked king prawns and avocado. Can some one give me a recipe for them. I would like to serve them together. This can be a cold or hot meal. Doesnt matter which. Thanks.

how about a very old recipe which was so popular in the 60's, very easy

halve your avocado [this serves 2] place your cooked prawns on the avocado and then coat with either Thousand Island dressing [which is he easiest] or a seafood dressing

still delicious and still one of my favourites

For My Mother's lastbirthday I made a entree of thinly sliced avocado and alternated with a cooked prawn on the plate, served with lemon slices

it is rather difficult to do a lot of recipies with cooked prawns, they usually use green ones but you may find these helpful

obviously you are an Aussie, why not peel and clean the prawns and put into a salad with avocato, you should use Iceberg Lettuce for this and put some sliced capsicum to add colout

3 Day Detox Diet

Is a 3 day detox diet for you? If you are like me and perhaps over do it with junk food. Drink too much caffeine and perhaps over indulge with alcohol, why  not try a 3 day detox diet. Yes this will be a great challenge to your system but it is something you can do and it may change your life.

You are not going to have to starve yourself and if you follow the plan properly you will not even be hungry. You will though crave for things such as coffee and your favourite junk food but remember this is only for 3 days.

Now for food you can eat for this 3 day detox diet you are not going to be restricted to fruit. You are also allowed to eat potatoes and fresh fish. Remember though you have to keep any from any other foods.

To make things easier for you I will list 3 detox diet recipes for breakfast, lunch and dinner.

Breakfast

Porridge
Porridge must be made with water and not milk. Add toppings with foods such as bananas, yoghurt and raisins.

Muesli
Must not contain any added sugar

Natural Yoghurt
Any pot of natural yoghurt.

Lunch

Jacket Potato
Using tuna for the topping (canned in water) not in oil. Side dish of salad.

Avocado and Prawn salad
Must be fresh avocado. Serve with prawns, salad and lemon juice.

Grilled Fresh Fish
Any fresh fish grilled. Serve with Jacket Potato or salad

Dinner

Chinese Vegetable Stir Fry

Stir fry a selection of vegetables such as spring onions, mushrooms, bamboo shoots and bean sprouts in a little olive oil. Serve with brown rice.

Baked Salmon Fillet

Salmon fillet served with a jacket potato and steamed / boiled vegetables.

Tuna and prawns with noodles

Gently fry a selection of vegetables such as onions, mushrooms, peppers, courgette and leek in a little olive oil. When lightly browned, add a handful of prawns. Cook for a few minutes, and then add canned tomatoes, tomato puree, black pepper and tuna canned in water. Bring to the boil and simmer until the sauce thickens. Serve with rice noodles.

Drinks

Drink only water of fresh juices.

Avocado recipe that isn't salad or guacamole?

I have 10 medium avocados which will ripen at the same time. I'd like to make something creative with them other than a guac, with a salad or as a condiment to a main course.

Using half of an avocado for a salad bowl, fill with your own version of shrimp salad. One half avocado with shrimp salad served on lettuce is basically one serving.

Always great in a sandwich or wrap with tuna, chicken, turkey or shrimp.

Stuffed Avocado Chicken with a light breading of macadamia nuts. Fry and finish cooking in oven.

Chipotle Avocado Corn Chowder

Ingredients
2 1/2 cups organic plain soy milk
2 1/2 cups frozen organic white and/or yellow corn, defrosted
1/4 cup organic silken tofu
1 large ripe avocado, peeled and diced
3-4 canned chipotle peppers, drained and rinsed
1/4 teaspoon sea salt
black pepper to taste

Directions:

Combine the soymilk, tofu, peppers, 2 cups of the corn, and 3/4 of the avocado, salt, and pepper in a blender or food processor. Puree until smooth. Add the remaining corn and avocado. Pour into a pot and heat until warm throughout.

Avocado Shrimp Bisque

INGREDIENTS
3 avocados
1 (14.5 ounce) can chicken broth
2 cups milk
1 teaspoon lemon juice
2 teaspoons minced onion
1/2 pound cooked fresh shrimp
1/8 teaspoon salt
1/8 teaspoon ground black pepper

DIRECTIONS
Cut avocados in half. Discard pits. Spoon meat into a small bowl.
Chop cooked shrimp.
In a medium saucepan, combine avocado, chicken broth, whole milk, lemon juice, and chopped onion. Heat slowly to boiling, stirring frequently. Add chopped shrimp, along with salt and pepper. Heat through, but do not boil. Remove from heat. Adjust seasonings to taste. May be served hot or cold.

Pasta with Avocado and Tomato

Ingredients
1/2 package spaghetti
2 fresh tomatoes, cut up in cubes
1 avocado, cut up in cubes
3 garlic cloves, minced
1/4 cup olive oil
parmesan cheese, optional

Directions:

Cook pasta as directed and drain. Place all ingredients in a bowl and stir. Serve.

Serves: 3 or 4

Pasta with Avocado and Pecans

500 g large shell pasta
2 tablespoons olive oil
2 garlic cloves, chopped
1 red chile, deseeded and finely chopped
3 sprigs fresh rosemary, leaves only
1 large red capsicum, cut into chunks
1 large avocado, chopped
1 cup pecans, chopped
salt & fresh ground pepper

Directions
1. Cook pasta until just tender. Drain.
2. Heat 1 tbs oil in large pan.
3. Add garlic, chilli, rosemary and capsicum. Cook 3 minutes.
4. Add cooked pasta, avocado, pecans and remaining oil.
5. Toss to combine.
6. Season and serve immediately.

Shrimp and Garlic

INGREDIENTS (Nutrition)
2 pounds cooked medium shrimp, peeled and deveined without tail
1 green bell pepper, finely chopped
1 red bell pepper, finely chopped
5 cloves garlic, minced
1 sweet onion, diced
chopped fresh cilantro
1 avocado - peeled, pitted and diced
salt and pepper to taste
1/2 cup olive oil
chili pepper flakes

DIRECTIONS
Place shrimp in a large mixing bowl with red and green bell peppers, garlic, onion, cilantro, and avocado. Drizzle with olive oil, and season with salt and pepper. Cover, and refrigerate for at least 1 hour to allow flavors to develop. Serve chilled.

Palta con Crema de Salmon

4 ripe avocados
2 tbsp. lemon juice
4 oz. cooked or smoked salmon, cut in small pieces
1 green pepper, seeded and chopped
2 tbsp. mayonnaise
1 dash Tabasco sauce
Salt and pepper
3/4 cup heavy cream
Lettuce leaves and toasts to serve

Directions:
Cut the avocados in half and remove seed. Scoop out the flesh and mash with the lemon juice. Reserve empty skins. Add the salmon, green pepper, mayonnaise, Tabasco sauce, salt and pepper to mashed avocados. Mix well.

In a bowl, lightly whip the cream and fold into the mixture. Fill the avocado skins with the mixture and refrigerate. Serve with lettuce leaves and toasts.

Salmon con Salsa de Aguacate

4 Medium Salmon Steak
1 Small Onion -- sliced
Pepper -- to taste
3/4 Cup Dry Red Wine
1 Large Avocado
2 Medium Green Onion -- chopped
1/2 Cup Sour Cream
1 Tablespoon Lemon Juice
2 Teaspoons Dry Sherry
1/2 Teaspoon Cayenne
Salt And Pepper -- to taste
1 Lemon Lemon Wedges

Directions Place steaks in large pan, add onion, pepper and wine. Add water to cover, cover, simmer for 10 minutes or until fish is flaky and done. Peel and mash avocado. Add remaining ingredients and beat until creamy. Do not puree in food processor or it will become mush. Spoon over fish and garnish with lemon.

Chili is one of those great dishes that can be served in tons of different ways and goes good with many delicious side dishes. But if you’re thinking about serving chili the next time you have friends over for dinner or to watch the big game or when the weather starts getting cooler, here are some great ideas you might want to use.

Making Your Chili Even Better

Even if you already make the best chili on your block or at your tailgate parties, you could spice it up with some toppings. Of course, you’ll find some of the traditional items on the list: shredded cheeses, sour cream, oyster crackers or crumbled tortilla shells (choose the ones with a hint of lime for an nice touch), saltine crackers, or even hot sauce.

But those are a little bit basic. If you’re talking about advanced chili topping for the chili connoisseur, then you’ll want to shop around in your produce department or farmer’s market. Adding scallions, green onions, cilantro, or avocado can give your chili a little color and extra taste. A dollop of guacamole instead of sour cream (or with sour cream) can also be scrumptious, especially if you make it homemade. Not Just for Bowls

Chili isn’t soup so it doesn’t have to be served alone in a bowl with a spoon. Instead, get creative with how you serve this dish. You can use Fritos for dipping or pour the chili on top of a baked potato, French fries, pasta (some people even add spaghetti or macaroni pasta to their chili), rice, taco shells, hamburgers or hot dogs, cornbread, or even scrambled eggs.

Chili goes good with almost any food but make sure to account for the potential messiness. Always have extra napkins.

Great Side Dishes

When you’re serving chili, it’s definitely hearty enough to be a main dish. And while some people like to eat their chili by itself, having some complementary side dishes can enhance the dish’s flavor immensely. Cornbread is a delicious and traditional addition to chili. If you’re trying to give your meal a Tex-Mex flavor, you could make Mexican cornbread with peppers, some shredded Colby/Jack cheese, and some kernel corn or if you want to make it spicier you can cut up pieces of jalapeno to add into the cornbread mix.

Black bean and corn salad is another choice. The salad, which is served cold or at room temperature, includes black beans, cubed cheeses, roasted corn, green onions, bell peppers, picante sauce, herbs, olive oil, and a few other tasty items. You can also toss in other items you love, such as avocados.

Another idea is a Southwest Vegetable salad that includes lettuce, colorful red peppers, cucumbers, tomatoes, onion, cilantro, and some toasted pumpkin seeds. This dish has just as much color as flavor and has a very delicious flavor especially when enjoyed along with a bowl of chili.

Does anyone have a recipe for cold pasta salad?

I just want a good meal that is cold and no shrimp or avocado please (please understand I am really not trying to be picky) and we have a lot of pasta of all kinds.
And keep in mind I love cooking and am only 13( my parents very nicely support my cooking passion so they wouldn't hasitate to bye ingredients).

Even my kids love this pasta, but my husband always picks out the olives. LOL!!

SPAGHETTI SALAD

1 lb. thin spaghetti
1 lg. green pepper, diced
2 lg. tomatoes, diced
1 onion, diced
1 can black pitted olives, sliced
1 (18 oz.) bottle Italian dressing
1 jar McCormick salad supreme seasoning (do not substitute this seasoning)

Cook spaghetti; drain and rinse with cold water. Mix spaghetti, vegetables, olives and salad dressing.

Hypothyroidism is the disease in which, the thyroid gland is less active and so produces less hormone called thyroxin. Thyroxin hormone is an important factor for body’s anabolism and catabolism combine known as metabolism. Patients with hypothyroidism often get confuse what to eat and what not to as they are given the list of 'contraindicated’ foods in their diet by their dieticians and doctors.

It is not that a person with hypothyroidism will not have any recipes. Here are some of the recipes those are mouthwatering and still good for the diseased condition.

The Magic Pasta

Those who are pasta lovers, they can enjoy this dish with great pleasure. All you need is to follow the below method,

Ingredients

3 cloves of smashed and minced garlic 3 large ripe tomatoes Anchovy paste ¼ extra virgin olive oil Salt and pepper (as per your requirement) Whole-wheat pasta Fresh chopped holy basil Little pecorino cheese Chili flakes

Method:

Make thick slice of tomatoes and put a small dab of anchovy paste on each slice. Top it up with a bit of garlic and pinch of salt and pepper. Now place in glass oven dish. Pour olive oil over the top and bake in 350-degree oven for about ½ hour. Cook pasta until al dente and drain it. Take off the tomato stuff and empty into the empty pot. Put pasta in and toss to coat and the dish is finished when you top the entire material with basil and little fresh pecorino cheese. For spice lovers, put a pinch of chili flakes for seasoning.

Scrumptious salad

Ingredients

1 tsp grated orange peel 2 oranges, peeled and well sliced (seedless) 20 oz unsweetened pineapple chunks ½ cup of sour cream (strictly fat-free) 1 tbsp brown sugar 1 grapefruit (peeled and sliced finely) ¼ tsp grated ginger 1/8 tsp ground nutmeg ¼ cup chopped and toasted pecans 6 cups of torn leaf lettuce Grilled chicken breast (chopped and optional) 2 tbsp milk (strictly fat free) 1 avocado (peeled and sliced)

Method

Combine the oranges, pineapple, and grapefruit into a large bowl. Cover them all and place it into the refrigerator. In another bowl, take sour cream, milk, brown sugar, orange peel. Add ginger and nutmeg. Cover the entire mixture and place this too into the refrigerator.

Let them be in the condition for about one hour.

Divide lettuce and avocado that they can serve in six salads plates. Decorate fruit over the lettuce. Drizzle salad with dressings. You can simply sprinkle with nuts or for non-vegetarians add chicken to it.

These recipes are good to have, as they are rich in Vitamins and minerals that rejuvenate the body. However, it is always advisable for the patient with hypothyroidism to consult dietician before they jump into any newer dish.

When I first learned about the raw food diet, it took me years to figure out how to do it properly. Then it took me even more years - making mistakes and compromising my health - until I started experiencing the benefits I was looking for from the start! Let's face it, if you're going to bother changing your diet at all, there's got to be a reason for doing it. I would bet you want to improve your health and energy, right? But why take years to get those results, when you can get them in months or even weeks? Here are some of the things that I've found can help you get faster results from your raw food diet.

  1. Incorporate Fitness: Until you reach the point where your body fat is at an optimal level and your fitness "above average", you probably won't get all the results you're looking for even with an ideal diet. Fit people not only digest better, the entire process of nutrition is improved with improved fitness. This means assimilation will be better, blood sugar will be more under control, and much more besides. To start improving your fitness, you have to identify your areas of weakness and work on improving these first.

  2. Address Emotional Issues: Emotions are an integral part of your nutrition & health. You've probably had the experience of hearing a piece of bad news and suddenly losing your appetite. This shows that emotions are an integral part of how your body processes food. It's an essential part of your health. Often people jump into a raw-food diet, hoping that it will help them "clear emotional problems", when in fact it puts these problems right in their face and they can't deal with it!. Be aware and ready to feel and face your emotions. Equip yourself with whatever tools are necessary to get over emotional baggage - including self-improvement seminars, tapes, and group support.

  3. Cleanse: One of the best ways to accelerate your health success is to go on some sort of cleanse. A cleanse should be easy to do, while giving you results in terms of increased energy, weight release (if necessary), and increased vitality and health.

    My favorite cleanses are:

  • Green Cleanse: consuming only green smoothies and fruit for 5 to 10 days or longer.

  • Fruit Cleanse: consuming only mono meals of fruit for 3 to 7 days or longer.

  • Low Fat Cleanse: consuming only fruits and vegetables without any fat (avocados, oils, etc.) for 3 to 7 days or longer.

While it's possible to do a cleanse on your own, it's best if you have someone to coach and support you in the process.

  • Find Raw Friends:
    Feeling alone and isolated can kill your success with the raw diet! It's very important to find at least one “buddy” who can support and encourage you on this path. With the Internet, it's possible to connect with more people than ever.

  • Get a Coach and a System:
    Besides lack of social support, the reason why most people don't succeed with a
    raw-food program
    is that they don't have anybody coaching them personally and showing them a system that works for incorporating all of
    the different elements of a healthy lifestyle
    . Unless you think you can do it on your own, you need someone to show you a system that works!

    Make no mistake about it, you can either take 2 months to put all of the pieces of a healthy raw lifestyle together, or you can take 2 years or 20 years! Do yourself a favor and choose the shortest route to success.

    I have spent a good amount of my time on raw food forums over the past couple of years. It is a great way to learn about eating raw and to gather information from others who are thriving on the diet.

    While visiting these forums, I have noticed a problem that is expressed over and over again by various members. Many people complain that they find it too difficult to stick to a raw food diet. They find themselves extremely hungry and experiencing cravings for cooked dishes on a regular basis.

    And I'm not talking about brand new raw foodists. I'm talking about people who have been attempting a raw food diet for years and still can't seem to stick with it!

    So what's the problem? Why is it that such a vast majority of raw foodists fail on a raw food diet?

    Not enough calories, Too much fat

    In general, the raw foodists I'm talking about are consuming lots of greens and vegetables, avocados, nuts, oils, dehydrated mixtures like flax seed crackers, some vinegars, and dried fruit.

    Even though the raw foodists described above are eating large amounts of greens and other vegetables, these foods do not offer a substantial amount of calories.

    Here's an example...

    *Typical Salad without Overt Fats*

    A large salad of 1 pound of romaine lettuce, 1 medium red bell pepper, and one medium cucumber is only 153 calories. All of that food has less calories than just two bananas!

    This is a problem because the average person needs between 2000-2500 calories a day. To eat that much food from romaine lettuce, you would need to eat 25 pounds (about 50 heads) of lettuce per day! This is completely impractical, not to mention rather unpleasant. My jaw aches just thinking about it!

    We've now established that it's nearly impossible to get enough calories from vegetables. While salads like this are high in volume, the satiation is short lived because the caloric needs are not being met.

    So where do these raw foodists get their calories from?

    Avocados, raw nuts and seeds, and cold-pressed olive oils. To be precise, fat. These fatty foods are used to make dehydrated dishes like "raw" crackers, breads, and "mock" pizzas. They are also eaten on their own or put atop salads.

    Let's return to the salad example...

    *Typical Salad with Overt Fats*

    1 head of romaine, 1 medium bell pepper, and one medium cucumber is 153 calories. Now, add just one medium avocado and one tablespoon of olive oil. That takes the calories up to 561 calories!

    The avocado and oil alone provide 2/3 of the total calories in this dish. Not only that, but the addition of the avocado and oil took the fat content from 10% to a staggering 61% of fat!

    As you can see, it only takes a small amount of these foods (fatty fruits, nuts and seeds, and oils) to exceed your needed calories and fat content for the day.

    Again, this is just one meal. Many raw foodists have two salads during their day and often times these are even more fat laden than the example I have shown above. This does not even consider the popular complex, dehydrated recipes that are mostly comprised of high-fat nuts and seeds.

    With this knowledge in mind, is it surprising that the average raw foodist consumes a whopping 60% of his or her calories from fat everyday? How many times have you come across people who claim to eat several avocados a day and handfuls of nuts in just one sitting? Maybe this isn't surprising, but it's certainly unhealthy.

    What's the Alternative?

    While greens and vegetable fruits are very important in a healthy raw diet, they simply do not provide the necessary calories to fill you up and combat cooked cravings. However, you do not have to get your calories from low-volume fatty foods.

    You are not destined for raw food failure.

    There is another way...

    *Sweet fruit*

    By eating substantial amounts of whole, raw, simple, delicious fruits, you will feel completely satiated and will no longer suffer from cooked food cravings. You will also be getting the absolute best nutrition available and fueling your body right!

    And it's so easy to get started! If you still eat a cooked diet, simply replace your breakfast with as much fruit as you can eat and move on from there. If you already eat raw, just replace the majority of the raw veggies and fats you eat with sweet fruit.

    If you are having a hard time getting enough calories via whole fruit, try blending them into tasty smoothies!

    So put down the avocado, pick up an apple, and start succeeding on a raw diet today!

    What is a good deep conditioner recipe?

    I know about avocado, egg, cream, and all sorts of things that work, but I really want a recipe. Not a complicated one like something with jojoba oil (what the hell is that?) Just something simple and potent.

    The history of Jewish home cooking is as long as Mel Brook's History of the World.  Still, warm feeling arise in me every time I think about Friday mornings with my Polish grandma. Together, we used to cook her famous chicken soup. Until this very day, I see my self as a young boy, standing beside her in the kitchen.     EASY AVOCADO-CRAB DIP

     1 large avocado

    1 tbsp fresh lemon juice

    1 thin slice of onion

    1 tsp Worcestershire sauce

    1 pkg (8-oz) cream cheese, cut into cubes and softened

    1/4 cup sour cream

    1/4 tsp salt

    1 can (7 1/2-oz) crab meat, drained, flaked, and cartilage removed

    To prepare the avocado, halve, seed, peel, and cut into cubes.  Place the prepared avocado, lemon juice, onion, and Worcestershire sauce into a blender container or food processor and blend until smooth.  Add the cream cheese, sour cream and salt to the mixture and blend again until combined.  Remove the mixture to a bowl and stir in the crab meat.  Chill until serving time.  Serve with assorted whole-wheat crackers.

    Sushi without rice?

    Does anyone know the recipe for sushi, that doesnt use rice in it? i think it might use avocado..i'm not sure i saw it on a commercial on footnetwork..i checked there sight but no luck! Its not Sashimi so if anyone could help me that would be awsoomme! thankks
    I know its not "traditional" sushi..could someone just please tell me if they know the recipe?! great.

    I've had sushi that was created out of paper thin (uncooked) cucumber, in place of rice. The cucumber is cut in approx. 3 to 4" in length, with the skin removed. With alot of patience & a very sharp knife and skill, the sushi chef thinly shaves the cucumber in a spiral effect as if creating a piece of transparent paper out of the vegetable. The cucumber sheet is placed on the sushi mat, then other sushi ingredients are placed on it before its rolled into a sushi ("maki") roll.

    I've also had sushi rolls with the use of that transparent rice paper sheet (available in the Asian markets, in the noodles section) & seaweed (fresh and dried sheets).

    Fresh seaweed sheets is another alternative (very very hard to find as it's such a specialty). May be found in Japanese specialty markets.

    Other items can be :

    Dried seaweed sheets
    Shiso leaves
    Fried tofu pouches

    Do you know some recipes to use Artichokes, Leeks, red chicory and or Broccoli in my food? easy to prepare?

    I've heard all those are so healty, but i am not used to them, or others like eggplant, Brussels sprout, etc.

    I always use lettuce, spinach, carrots, tomatoes, avocado, you know the most usual vegetables.

    Try these

    ASPARAGUS, LEEK & POTATO SOUP

    1/2 stick unsalted butter
    3 lg. leeks, use all of white part & 1 inch of green, chopped
    1/2 tsp. dried thyme, crumbled
    1 bay leaf
    6 c. chicken stock
    1 1/2 lbs. sm. red potatoes, quartered
    1 lb. asparagus, steamed & cut into 1 inch pieces

    Melt butter over low heat. Add leeks, thyme and bay leaf. Cover and cook until leeks are soft. Mix in stock and potatoes and bring to boil. Reduce heat, cover and simmer until potatoes are tender. Remove bay leaf. Puree mixture in blender or food processor. Season to taste with salt and pepper. Add asparagus and serve.

    BROCCOLI - LEEK SOUP

    1 1/2 lbs. fresh broccoli
    1/2 c. sliced celery
    1/8 tsp. pepper
    1 bay leaf
    3 tsp. butter
    2 tsp. flour
    1 leek (8 oz.)
    1/2 tsp. salt
    1/8 tsp. nutmeg
    2 cans (13 3/4 oz.) chicken broth
    2 c. half & half

    Trim and split each stalk of broccoli lengthwise into halves. Trim leek, cut off roots and green stems, cut into 1/2 inch slices. In 6 quart pot put broccoli, leek, celery, salt and pepper, nutmeg and bay leaf. Add water to chicken broth to make 4 cups. Bring to boil and simmer covered until tender (30 minutes).
    Drain. Reserve broth, puree vegetables in blender. In 6 quart pot melt butter, remove from heat and blend in flour. Gradually add broth, stirring. Heat until boils, stirring. Add vegetables and half and half. Stir until soup is hot (5 minutes).

    You probably know by now what detoxification is and the ways that it can be done. A detox diet provides the simplest way to detoxifying yourself. The process is easy and simple, juice all ingredients and add distilled water. You can also add lemon juice for better taste.

    And now for lunch, try the Alkalising RAW Soup. All you need are 1 avocado, 2 spring onions, 1/2 red or green pepper, 1 cucumber, 2 handfuls of spinach, 1/2 clove of garlic, 100 ml of light vegetable Bouillon, lemon or lime juice and Bragg Liquid Aminos for added taste. Just like our vegetable juice, the recipe is simple and easy to do. Blend the avocado and stock to form a light paste. Add other ingredients and blend. And then you can start eating!

    Our dinner treat is Warm Broccoli Soup. All you need is 1/2 avocado, 6-8 broccoli heads, 1/3 red onion, 1 celery stick, a big handful of spinach, inch of root ginger, cumin and bragg liquid amino for added taste. Lightly steam the broccoli for 5-6 minutes. After steaming, blend all the ingredients together and add garlic and pepper to taste. This is perfect for a cold winter night.

    I have to be honest.  This is one question that REALLY gets my goat.  Whenever I hear someone attacking the raw diet because it’s too “boring,” I go crazy!

    Really, I hulk out!

    I’ve been following a low-fat raw vegan diet for almost 2 years now.  I can honestly say, without any reservations, that there is absolutely NOTHING boring about a raw food diet!

    *Deep Breath*  Okay, I’m calm now.

    Let me explain why a raw food diet is totally NOT boring.

    Variety

    The variety of fruits, vegetables, nuts and seeds that exist is astounding.  You have apples, grapes, oranges, bananas, peaches, pears, cantaloupe, romaine, celery, cucumber, avocado...and I’m just alluding to what is available in your local grocery store!

    In fact, I can almost guarantee you that raw foodists eat *more* variety than ANYONE on a standard American diet...or any other diet for that matter.

    This is because most people tend to eat just a handful of dishes that become their staples.  And these dishes are usually very similar.

    If you eat meat, your meals will generally center around a protein, with some starchy vegetable and maybe greens along side.  If you’re from the Southern States, your greens are cooked to death in butter and everything gets a nice heapin’ helping of beef gravy smothered on top. ;)

    If you are vegetarian or vegan, the focus is usually on whole grains or legumes with vegetables.  And of course, everyone has his or her favorite dessert.

    But when you live on a fruit-based diet, you have to adapt what you are eating to what you can find in your area.  Just because you have a few favorite fruits does not mean that they will always be available.

    I would gladly eat nothing but mangoes for the rest of my life, but I can’t because they are not always in season!

    Where’s the Proof?

    Still skeptical that a raw diet is really that varied?  Here’s a list of several of the different varieties of fruits, vegetables, nuts and seeds that I eat in a given year:

    AND I didn’t even include the different varieties of fruit within each species.  For instance, there are Navel and Valencia oranges, red and green grapes, the Fuji apples and the Gala apples, Red Haven and White Nectar peaches, etc.

    All of this is found conventionally at my local supermarkets in Tennessee.  Of course, if you live somewhere tropical or have access to exotic markets, you have a whole different spectrum of fruits to choose from:

    o    Chocolate Sapote
    o    Custard Apple
    o    Durian
    o    Jackfruit
    o    Litchi
    o    Longan
    o    Mamey Sapote
    o    Mangosteen
    o    Rambutan
    o    Sapodilla
    o    Soursop

    There’s even a peanut butter fruit that has the taste AND texture of peanut butter!

    How can a diet that’s full of so many different smells, tastes, and textures be boring?

    Quite simply, it cannot.

    Raw Recipes

    If you *still* aren’t convinced that a raw diet isn’t boring, you probably haven’t considered all the different raw vegan recipes that you can make.

    And I’m not talking about fatty dehydrated conglomerations that are made to mimic the flavor and textures of cooked dishes.  I’m referring to simple, delicious, healthy meals that contain few ingredients and take literally minutes to put together.

    There are fruit smoothies, green smoothies, fruit soups, vegetable soups, fruit salads, savory salads, fruit puddings, dips, salsas, and even fruit ice creams!

    You could literally take just a few different healthy raw ingredients and have a completely different dish for every meal for a whole week!

    Now how in the world can a diet like *this* be boring?

    Quite simply, it cannot.

    Now that the categories have been established, here are some rules of combining them in order for you to avoid fermentation in the intestines, indigestion, water retention and toxicity. Sweet fruits are to be eaten with other varieties of sweet fruits only or with sub-acid fruits. Don’t eat acid fruit with anything other than celery and lettuce. Avocadoes and olives should be eaten with non-starchy vegetables. Melons should be eaten alone or not eaten at all. These are combinations that you should try. But there are a few combinations that you should try to avoid like starch and acid (tomato and potato), protein and protein (avocadoes and nuts), sweets and starch (maple syrup and rice). Think about these combinations when you are developing your own raw food recipes.

    Raw food diets are not all about fruits and vegetables. Organic foods can also be included in the diet. Organic cheese is very nutritious and can be included in raw food diets because it does not involve a cooking process that destroys enzymes. You should make sure that the organic cheese you buy is organic, and not a scam. The process that is followed by farmers to obtain organic cheese consists of letting nature take its natural course, from harvesting the milk from the cows and letting it coagulate with no help from additional catalytic agents.     They are ridiculously cheap right now, and I'd like to do something with them other than just eat them as is or make guacamole. What is your favorite way to use avocados?

    Avocado Lobster Rolls

    1 lb Avocado, diced
    2 Cups Coarsely chopped cooked lobster meat*
    3 Tbsp Finely chopped sun-dried tomato (packed in olive oil)
    3 Tbsp Finely chopped shallot
    1 ½ Tbsp Finely chopped garlic
    2 Tbsp Fresh lime juice
    ½ tsp Salt
    ¼ tsp Freshly ground black pepper
    1 Egg, beaten
    12 Egg roll wrappers
    Olive oil - as needed

    Dipping sauce - Recipe follows
    Lime slices - for garnish, optional
    Cilantro sprigs - for garnish, optional
    *Coarsely chopped, poached sea scallops can be substituted for lobster meat.

    Gently fold together avocado and next 7 ingredients; reserve.

    Brush edges of 1 egg roll wrapper with egg. Put a scant 1/3 cup filling 1 inch down the edge of the wrapper. Fold in sides; brush sides with egg. Roll. Seal tightly. Refrigerate on a parchment-lined sheet pan dusted with cornstarch, covered, for at least 45 minutes. Rolls can be made up to 8 hours ahead of service.

    Shallow fry 1 roll in hot olive oil, turning frequently, until golden brown, about 3 minutes. Serve with 3 tablespoons dipping sauce; garnish with lime slices and cilantro sprigs.

    Dipping Sauce
    In a blender, combine 4 ounces peeled, seeded, and coarsely chopped Roma tomatoes, 3/4 cup chopped cilantro, 2/3 cup rice vinegar, 2/3 cup soy sauce, 2/3 cup fresh lime juice, 2 tablespoons finely chopped garlic and 1-1/2 tablespoons finely chopped fresh ginger; puree. With machine running, drizzle in 1/2 cup olive oil. Reserve. Yield: 3 Cups.

    Here's a change from french fries as a side to a burger:

    Beer-Battered Fried Avocado Wedges with Salsa

    1 cup lager beer or ale
    1 cup all-purpose flour
    1-1/2 tsp paprika
    2 cloves garlic, chopped finely
    2 avocados
    Vegetable oil as needed for deep frying
    Salt as needed
    1 cup purchased salsa

    To make beer batter, whisk together beer, flour, paprika, and garlic until well blended. Let stand at least 2 hours. Peel avocados; cut each into 6 wedges.

    Dredge 6 wedges in reserved beer batter. Deep fry in hot oil until golden about 3 minutes. Repeat with remaining wedges. Serve wedges with salsa.

    Avocado and avocado oil offers so many benefits when used in your skin products. Did you know that avocado contains vitamins A, B1, B2 and D, lecithin, potassium as well as vitamin E. In addition to the vitamins it contains proteins and more than 20% essential fatty acids (amino acids). It is a sought after skin care ingredient because it has so much to offer.

    Avocados are used in anti-aging products because of its nourishing and hydrating abilities. The Department of Food Engineering and Biotechnology, Technion Israel Institute of Technology in 1991 found that avocado oil significantly increases collagen in the skin which is why it is commonly found in antiaging products. Furthermore because of its deep penetration into the skin it is a perfect ingredient to combat dry skin. For those that suffer with eczema or psoriasis avocado offers healing properties that will relive dryness. Both avocado and avocado oil is gentle and well tolerated by those with sensitive skin.

    In addition to its moisturizing and healing properties, it is also high in sterolins, AKA plant steroids, which are reported to diminish age spots and heal scars.

    Below are a few avocado skin care recipes:

    Facial Mask for Dry Skin
    1/2 avocado
    1 teaspoon almond oil (Note if allergic to nuts use different oil such as jojoba oil or olive oil). Even a vegetable oil in your cupboard will do.)
    Mash avocado and then add almond oil or oil of your choice. Apply to face, avoiding the eye area, and let set for 15 minutes. Rinse with warm water then cool water. Follow with toner and moisturizer.

    Avocado Honey Face Mask - for dry skin
    2 tablespoons of avocado
    2 tablespoons honey
    1 egg yolk
    Mash the avocado, add the honey and egg. Mix until thoroughly blended. Apply to face avoiding the eye area. Let set 10 minutes then rise with warm water then cool water. Follow with toner and moisturizer.

    Avocado Mask for Oily Skin
    1 avocado, mash
    1 egg white
    1 tsp. lemon juice
    Place all ingredients into a blender and blend until you get a mixture. Apply to a clean face with fingertips on the oiliest part of the face (T-zone). Let dry for 20 minutes. Rinse with warm water then cool water, follow with toner and moisturizer.

    Avocado's can be hard to find and/or a little pricey if living in a northern climate, so here are some recipes that use avocado oil instead.

    Dry Skin Cleansing Cream
    1/2 oz. Beeswax
    1 oz. Lanolin
    2 oz. Almond Oil
    1 oz. Avocado Oil
    1 oz. Grapeseed Oil
    2 drops Clary-Sage Essential Oil
    2 drops Lemon Essential Oil
    3 oz. Spring Water
    Using a double boiler, melt beeswax, lanolin, and oils. Stir well. When melted, take off heat and add essential oils, then water. Wisk until cool.

    1 pkg. large flour tortillas (10)
    2 (8 oz.) Philadelphia cream cheese, presoftened
    1 c. Colby cheese
    1 c. Monterey Jack cheese
    1 c. turkey breast, chopped
    Shredded lettuce
    Diced onions
    Diced olives

    Butter flour tortillas with softened cream cheese. Sprinkle ingredients one at a time down center of tortilla. Roll tortilla tight, sealing edges with cream cheese to prevent crumbling. Refrigerate for 1 hour. Slice into bite sized pieces. Use salsa or favorite sauce for dipping sushi.

    What are some good pita recipes?!?!?

    I bought some pitas at the supermarket and thought I could turn it into a healthy meal. The bag shows a picture of a pita with chicken and veggies in it.

    Got any ideas? I prefer something with chicken, veggies are good, cheese is good...maybe some avocado! Yummm! Oh, and I have a sandwich maker, so I guess I could kinda grill it up too.

    I dont wanna throw just anything I see in there...I want it to be really good! Got any ideas? :o )

    2 honey-roasted skinless, boneless chicken breast halves
    1 white pita bread
    2 cups shredded lettuce
    1 large onion, chopped
    1/2 cup shredded Cheddar cheese
    1/2 cup mayonnaise
    1/2 cup ketchup
    1/2 cup chili sauce
    1 dash hot pepper sauce
    1 teaspoon lemon juice
    1/4 teaspoon ground black pepper

    :

    DIRECTIONS
    Preheat oven to 250 degrees F (120 degrees C).
    Heat pita breads in preheated oven for about 5 minutes, or until slightly browned.
    Meanwhile, in a large bowl combine the chicken, lettuce, onion, cheese, mayonnaise, ketchup, chili sauce, hot pepper sauce, lemon juice and ground black pepper. Mix well. (Note: If making this for kids, you may want to exclude chili sauce and hot pepper sauce.)
    Slice hot pita breads around the edges to form pockets; fill bread pockets with chicken mixture. Serve hot.

    Generally, salsa has been a staple in any occasion such as dinner parties and family reunions as it has been paired time and time again with different types of chips but usually corn chips.  Serving salsa has been so popular to serve in gatherings due to the fact that it's easy to prepare and at the same time, it's easy to eat and enjoy while talking to your friends, relatives and to others who are in the party.

    Corn and Tomato Salsa

    1 cup fresh corn kernels (from 2 small ears) or frozen, thawed

    1 large tomato, seeded, chopped

    2/3 cup chopped red onion

    ½ cup chopped fresh cilantro

    2 tablespoons olive oil

    1 tablespoon fresh lemon juice

    ½ to 1 jalapeno chili, seeded, minced

    1 avocado, pitted peeled, chopped

    Fresh cilantro sprigs

    Mix all ingredients together in a large bowl, cover and chill before serving.

    Corn and tomato salsa goes well with grilled steaks like rib eye and porterhouse as the corn in the salsa mixes well with the beef.  Its taste gives a new dimension of flavor to the beef.  On the other hand, the mango and tomato salsa where a recipe of this side dish is shown below goes well with crispy coated fried shrimp.

    Tomato and Mango Salsa

    1 small mango

    1 large tomato, seeded and chopped

    1/3 cup chopped onion

    ¼ cup minced fresh cilantro

    1 small jalapeno pepper, seeded and finely chopped

    2 tablespoons lime juice

    Carefully peel skin from mango sections attached to the seed.  Slice flesh from seed and chop it to measure 1-1/2 cups.  Combine ingredients in small bowl and refrigerate for 2 hours.

    Now that you know which salsa to serve with what dishes, you can serve them in whatever gathering you may have to make it a more lively and memorable occasion.

    Flour
    2 sheets frozen puff pastry, thawed
    1 egg yolk
    1 Tbsp water
    2 small, ripe Hass avocados, peeled, seeded, thinly sliced
    2 small, ripe red pears, cored, seeded, thinly sliced
    Juice of one lemon
    1 cup crumbled
    Gorgonzola cheese
    Honey dispensed from squeeze bottle

    Directions:

    Preheat oven to 400 degrees, lightly coat baking sheet with cooking spray.

    Lightly flour cutting surface and cut 1 1/2-inch round circles from pastry sheet (each sheet makes 24 pieces). Place on prepared baking sheet one inch apart. Whisk egg yolk and water in small bowl to create an egg wash; brush mixture over each pastry round.

    Bake for 15 minutes until tops of rounds are puffed and golden brown. Transfer rounds to wire rack to cool. (Pastry rounds may be baked in advance and kept in airtight container at room temperature, for up to two days.)

    Gently split each puffed round with sharp knife to create a small pocket. Place a slice of avocado atop a slice of pear, and sprinkle lightly with lemon juice. Place slices on bottom of pastry, and top with 1/2 tsp of crumbled cheese. Loosely close pastry pockets and place on serving tray. Squeeze honey bottle about 12 inches above platter, drizzle a bit of honey on each pastry and serve immediately.

    Serving Size: Makes 48 Appetizers

    and for the main course, how about duck, which is a nice change from ham, pork and roast beef? Try this recipe for Honey-Thyme Duck Breasts With Roasted Root Vegetables

    1 head garlic
    3 medium carrots, peeled and cut into 2-inch pieces
    2 medium parsnips, peeled and cut into 2-inch pieces
    4 small potatoes, halved
    8 small shallots, unpeeled
    1 tablespoon olive oil
    8 sprigs thyme, divided
    Salt and black pepper
    4 White Pekin duck breast halves (6 ounces each)
    3 tablespoons honey
    1 tablespoon red wine vinegar
    1/2 cup chicken broth, homemade or low-sodium
    1 teaspoon chopped thyme

    Directions:

    Preheat oven to 425 F. Cut top off top third of garlic head; wrap garlic in aluminum foil. Bake about 45 minutes or until soft; cool and squeeze out pulp (there should be about 1 tablespoon). Set aside. In ovenproof baking dish, toss carrots, parsnips, potatoes and shallots with olive oil, 4 of the thyme sprigs and 1/4 teaspoon each salt and pepper. Add about 1/2 cup water. Roast in 425 F about 1 hour or until vegetables are tender and lightly browned; set aside.

    With sharp knife, score skin side of duck breasts in a series of parallel cuts 3/4 inch apart, without cutting into meat. Make a second series of parallel cuts perpendicular to the first to form a crosshatch pattern. Season breasts with salt and pepper. Place breasts skin side down in heavy nonstick skillet large enough to hold them comfortably in one layer; do not crowd. Cook over medium heat about 8 minutes or until fat runs out and skin is golden-brown and crisp. (Some breasts may brown more quickly than others; remove each breast as it is done.)

    Transfer breasts to baking dish or another skillet, skin side down, and finish cooking in oven about 8 minutes for rare, 10 minutes for medium-rare and 12 minutes for medium, turning breasts onto flesh side after 6 minutes. Let breasts rest 3 to 4 minutes before slicing.

    While breasts are in the oven, pour off fat from skillet breasts were browned in. Add honey and cook over medium heat, stirring, until honey turns golden-brown. Add vinegar; simmer until syrupy. Add broth, chopped thyme and garlic pulp; simmer, whisking occasionally, until sauce thickens slightly. Keep warm over low heat.

    Divide vegetables equally among 4 plates, discarding thyme sprigs. Cut each breast crosswise on a slight angle into 4 to 5 slices about 1/2-inch thick; fan 1 breast on each plate around vegetables. Spoon sauce over breasts, dividing it equally. Garnish each plate with a thyme sprig.

    Prep time: 10 minutes - Cook time: 1 hour

    Serving Size: Makes 4 Servings

    Nutritional Information: Per Serving: 497 calories; 11 g fat; 131 mg cholesterol; 298 mg sodium; 61 g carbohydrate; 6 g fiber; 40 g protein.

    Simple Recipes for Skin Care

    Puffed Eyes

    Cut avocado into slices and place it under each eye and relax with it for next 20 minutes. The changes would be remarkable.

    Eye Cream

    Make an eye cream by mixing 5 drops of almond oil in 3 ripe slices of avocado. Blend this mixture and dab it around your eyes. Keep it for five minutes then rinse.

    Another method of making the eye cream is by using 1/4 cup avocado oil with 1/4 cup aloe vera gel. You could also use apricot kernel, grape seed or sesame oil.

    Facial Mask

    This facial mask is useful for dry skin. Mash half avocado and apply it leisurely on your face. Keep it for 15 minutes and then rinse it off with warm water.

    Make a paste of ½ ripe avocado mixed with 1 tsp vegetable oil. Apply this paste on a washed and clean face. Leave it for 15 to 20 minutes. Rinse it with warm water. This masque is very good for dry skin.

    Smooth and Beautiful Hands

    Make a paste by mixing 1/4 peeled & smashed avocado, 1 egg white, 2 tbsp. oatmeal and 1 tsp lemon juice. Apply this paste on your hand and leave it for 20 minutes. Rinse it with warm water and pat it dry. You would be thrilled by the results by using it regularly.

    Facial Scrub

    You would need 2 tbsp. flax seeds, 1/2 mashed banana and 1/2 avocado peel. Use a small bowl to mix flax seeds and banana. Scoop the banana and flax seed by using avocado peel. Massage this scoop on your face in circular motion, slowly and gently. Rinse it with warm water.

    When the weekend comes, you are going to want to try something new.  One of my favorite restaurants is the Cheesecake Factory. Cheesecake Factory restaurant recipes are delicious! I have been scouring the internet recently for the best Cheesecake Factory Restaurant recipes. After doing some extensive research, here are several amazing Cheesecake Factory Restaurant recipes.

    Cheesecake Factory Oreo Cheesecake
    Filling:
    1 1/2 pound cream cheese
    1 cup sugar
    5 large eggs
    1/4 teaspoon salt
    2 teaspoon vanilla
    1/4 cup flour
    8 ounces sour cream
    5 Oreo cookies (coarsely chopped for the batter)
    10 coarsely chopped Oreo cookies for the topping

    Crust
    1 1/2 cup Oreo cookie crumbs (about 25 Oreo cookies finely chopped)
    2 tablespoon melted butter
    93 spring form pan (buttered on bottom and sides)

    1. Mix melted butter with Oreo crumbs and press in the bottom of the spring pan and 1 1/23 up the sides, set aside.
    2.All Ingredients must be at room temperature before beginning. Beat cream cheese with a mixer on low until fluffy.
    3. Slowly add sugar and continue beating cream cheese until mixed well.
    4. Add eggs one at a time and continue to beat until blended.
    5. Measure the vanilla, salt and flour, pour into cream cheese and egg mixture and beat until smooth. Add the sour cream and beat.
    6. Stir in the coarsely chopped oreo cookies with a spoon.
    7. Pour cream cheese into the spring pan and place the nine coarsely chopped Oreo Cookies on to of the cream mixture.
    8. Place pan on the top rack and in the middle of a preheated oven at 325 degrees F and bake for one hour and 15 minutes.
    9. After that time, keep oven door open and let the cheese cake stay in the oven for one hour. Remove from oven and let cool enough to place in the refrigerator for 24 hours.

    Cheesecake Factory Pasta Da Vinci
    1(1lb)box penne pasta
    2 tablespoons olive oil
    3 large boneless skinless chicken breasts, diced
    1 large red onion, finely chopped
    1(4ounce)can sliced mushrooms, drainedor
    1/2 cup rehydratedshiitake mushrooms
    2 tablespoons mincedgarlic
    1 cup madeira wine
    1 cup heavy cream
    1/2 cup sour cream
    1-2 tablespoon butter

    Directions
    1. Cook pasta according to package directions. Place cooked and drained pasta in separate bowl.
    2. Heat oil in skillet and saute chicken, onion, mushrooms, and garlic.Remove from skillet;set aside. Add wine to same skillet and simmer over medium heat until liquid is reduced by two-thirds. Add heavy cream and sour cream and heat through.
    3. Remove from heat and swirl in butter. Toss with pasta.

    Cheesecake Factory Vanilla Bean Cheesecake
    1 envelope plus 1 1/2 teaspoons unflavored gelatin
    1/4 teaspoon salt
    1/3 cup cold water
    1 1/2 cups milk
    6 egg yolks
    1 1/2 teaspoons vanilla extract
    3/4 cup sugar
    1 1/2 cups heavy cream, whipped

    1. Soften the gelatin in cold water and set aside for later use.
    2. Beat the egg yolks in the top of a double boiler until light and lemon colored. Gradually beat in the sugar. Add the salt.
    3. Scald the milk and gradually stir it into the egg mixture. Cook over hot, not boiling, water until thickened, stirring constantly.
    4. Blend in the softened gelatin and vanilla. Chill until the mixture begins to thicken, stirring occasionally to prevent a crust from forming on the surface.
    5. Fold in the whipped cream and spread cream mixture onto cheesecake.
    Chill until firm.
    6. Garnish with lightly sweetened whipped cream.

    Cheesecake Factory Avocado Egg Rolls
    2-4 servings
    30 mins prep time
    Egg Rolls
    1 large avocado, peeled, pitted, & diced
    2 tablespoons sun-dried tomatoes, chopped
    1 tablespoon finely chopped red onions
    1/2 teaspoon fresh cilantro, chopped
    1 dash salt
    4 egg roll wraps (can also use won ton wraps)
    1 egg, beaten
    Oil for deep-frying
    Dipping Sauce
    1/4 cup olive oil
    4 teaspoons white vinegar
    1 teaspoon balsamic vinegar
    1/2 teaspoon tamarind pulp
    1/2 cup honey (I use slightly less)
    1 pinch turmeric
    1/2 cup chopped cashews
    2/3 cup fresh cilantro
    2 garlic cloves
    2 green onions
    1 tablespoon sugar
    1 teaspoon freshly ground black pepper
    1 teaspoon ground cumin

    Dipping Sauce
    1. Combine vinegars, honey, tamarind, and saffron in a microwave safe bowl. Stir until tamarind is dissolved completely.
    2. Microwave for 1 minute.
    3. Using a blender, Puree tamarind mixture, cashews, cilantro, garlic, onions, sugar, pepper, and cumin.
    4. Pour mixture into a bowl and stir in oil.
    5. Cover and refrigerate until ready to use.

    Egg Rolls
    1. Stir together avocado, tomatoes, onion, cilantro, and salt.
    2. Distribute filling evenly on the center of each egg roll wrapper.
    3. Fold one corner up, 1/4 of the way over the filling.
    4. Brush the remaining corners and edges with beaten egg, roll up the left and right side, then fold top corner over all and press to seal.
    5. Repeat with the remaining wrappers.
    6. Deep-fry the egg rolls in 375 degree oil for 3-4 minutes, or until browned.
    7. Drain on paper towels.
    8. Slice egg rolls diagonally in half and serve with the prepared dipping sauce.
