Does anyone have a recipe for cold pasta salad?

I just want a good meal that is cold and no shrimp or avocado please (please understand I am really not trying to be picky) and we have a lot of pasta of all kinds.
And keep in mind I love cooking and am only 13( my parents very nicely support my cooking passion so they wouldn’t hasitate to bye ingredients).

Even my kids love this pasta, but my husband always picks out the olives. LOL!!

SPAGHETTI SALAD

1 lb. thin spaghetti
1 lg. green pepper, diced
2 lg. tomatoes, diced
1 onion, diced
1 can black pitted olives, sliced
1 (18 oz.) bottle Italian dressing
1 jar McCormick salad supreme seasoning (do not substitute this seasoning)

Cook spaghetti; drain and rinse with cold water. Mix spaghetti, vegetables, olives and salad dressing.

It is not that a person with hypothyroidism will not have any recipes. Here are some of the recipes those are mouthwatering and still good for the diseased condition.

The Magic Pasta

Those who are pasta lovers, they can enjoy this dish with great pleasure. All you need is to follow the below method,

Ingredients

3 cloves of smashed and minced garlic 3 large ripe tomatoes Anchovy paste ¼ extra virgin olive oil Salt and pepper (as per your requirement) Whole-wheat pasta Fresh chopped holy basil Little pecorino cheese Chili flakes

Method:

Make thick slice of tomatoes and put a small dab of anchovy paste on each slice. Top it up with a bit of garlic and pinch of salt and pepper. Now place in glass oven dish. Pour olive oil over the top and bake in 350-degree oven for about ½ hour. Cook pasta until al dente and drain it. Take off the tomato stuff and empty into the empty pot. Put pasta in and toss to coat and the dish is finished when you top the entire material with basil and little fresh pecorino cheese. For spice lovers, put a pinch of chili flakes for seasoning.

Scrumptious salad

Ingredients

1 tsp grated orange peel 2 oranges, peeled and well sliced (seedless) 20 oz unsweetened pineapple chunks ½ cup of sour cream (strictly fat-free) 1 tbsp brown sugar 1 grapefruit (peeled and sliced finely) ¼ tsp grated ginger 1/8 tsp ground nutmeg ¼ cup chopped and toasted pecans 6 cups of torn leaf lettuce Grilled chicken breast (chopped and optional) 2 tbsp milk (strictly fat free) 1 avocado (peeled and sliced)

Method

Combine the oranges, pineapple, and grapefruit into a large bowl. Cover them all and place it into the refrigerator. In another bowl, take sour cream, milk, brown sugar, orange peel. Add ginger and nutmeg. Cover the entire mixture and place this too into the refrigerator.

Let them be in the condition for about one hour.

Divide lettuce and avocado that they can serve in six salads plates. Decorate fruit over the lettuce. Drizzle salad with dressings. You can simply sprinkle with nuts or for non-vegetarians add chicken to it.

These recipes are good to have, as they are rich in Vitamins and minerals that rejuvenate the body. However, it is always advisable for the patient with hypothyroidism to consult dietician before they jump into any newer dish.

Insulin is the hormone responsible for the control of blood sugar (glucose) and is manufactured by the pancreas. People who have type 1 diabetes produce very little (or even none) of this hormone. As a result, they must take regular injections of insulin in order to function normally.

Type 2 diabetes on the other hand is where the body produces insulin normally but the insulin doesn’t work in the body as it should so greater amounts of insulin are required. The body is said to be ‘resistant’ to insulin.

This article explains how insulin resistance (IR) is characterised by an inability of the body cells to bind insulin and allow nutrients to flow into the cells.

As a result, elevated levels of glucose remain in the bloodstream, leading to many serious health issues. Over time, it may result in blindness, peripheral neuropathy (damaged blood vessels and nerves in fingers and toes that may require amputation) and coronary heart disease to name a few.

IR is a symptom of several diseases including type 2 diabetes, poly-cystic ovarian syndrome and obesity. It also appears to occur in people who use certain medications like antidepressants.

Why insulin is produced

When you consume a food containing carbohydrate, your blood sugar (blood glucose) increases. Depending on the amount eaten, the type of carbohydrate eaten and what has been eaten with it, insulin will be secreted from the pancreas. Insulin then binds with receptors on cell membranes and allows glucose (and other nutrients) to flow into the cells.

Over many years, the insulin receptors get bombarded with insulin and become de-sensitised to it’s action. This is the same mechanism by which a regular coffee drinker becomes de-sensitised to caffeine and requires greater amounts to get the same ‘hit’. Someone with insulin resistance requires more and more insulin to drive the nutrients into the cells.

It is interesting to note that in the past, type 2 diabetes was also called adult-onset diabetes because it took many years for the cells to become de-sensitised to insulin. Unfortunately though, IR and type 2 diabetes are now becoming prevalent in children so the term adult-onset is no longer used.

The causes of Insulin Resistance:

High intake of high-density or refined carbohydrates.

Concentrated sources of carbohydrates like sugars, bread, pasta, cereals, rice, pastries, etc. all cause a dramatic rise in blood sugar leading to insulin secretion and over time, IR.

High intakes of saturated and trans-fatty acids.

All of your body cells have membranes made of phospholipids, part of which comes from the fats we consume. A high intake of saturated and trans-fatty acids results in the cell membranes becoming less permeable, which makes the passage of nutrients across the cell membrane more difficult.

Nutrient deficiencies.

The body has a requirement for a whole range of nutrients: minerals, vitamins, amino acids and fatty acids. These nutrients have numerous functions in the body. Several minerals are involved in the transport of nutrients across cell membranes. These include: chromium, selenium and vanadium. A deficiency of any of these minerals impairs this function, resulting in IR.

Lack of exercise.

Any type of exercise involves muscular contraction, which means fuel is required by the muscle cells of the body. Furthermore, the transport of fuel into the cells means that the permeability of the cell membranes must improve for this to occur. A lack of exercise results in cell permeability staying the same or, over time, decreasing. This leads to IR.

Preventing insulin resistance:

Overcoming IR requires incorporating lifestyle habits that are the exact opposite of the causes. This means following a diet that is low in high-density and refined carbohydrates and high in natural (low-to-medium density) carbohydrates.

Replacing your existing fat/ oil intake with unsaturated (’healthy’) fats can make your cell membranes more permeable, which means nutrients can flow into the cells easier and wastes can flow out of the cells easier. Good sources of ‘healthy’ fats include: olive oil, fish oil, flax seed oil, avocadoes, nuts and seeds.

Selecting foods that are high in the minerals (chromium, selenium and vanadium) involved in nutrient transport through cell membranes is beneficial. These include foods like oysters, whole-grain cereals, fish and shellfish, raw onion, potatoes, egg yolk, beef, broccoli, nuts/ seeds, parsley and garlic.

Supplementing your diet with the previously mentioned minerals can also be beneficial in improving insulin sensitivity. There are also other nutrients that nutritional science has discovered that can dramatically improve insulin sensitivity.

These include: alpha lipoic acid (ALA), 4-hydroxyisoleucine (an extract from fenugreek seed), corosolic acid (from Banaba Leaf), Gymnema Sylvestre and extracts from cinnamon. [NOTE: Chromium, ALA, Gymnema Sylvestre and 4-hydroxyisoleucine are found in GI Factor ]

Finally, incorporating exercise into your lifestyle can reverse IR by increasing cell permeability. Find the type or types of exercise you enjoy doing and can see yourself doing long term. Make a commitment to perform it on a regular basis and get moving!

Most disease common in civilised societies are reversible through lifestyle choices. You are now at a cross-road with two possible paths to follow. One path will lead you to a life of fun, energy, passion and health. The other to a rapid physical decline, lethargy, reduced quality of life and an early death… The choice is yours.

FLUFFY LIGHT MEAT LOAF

Ingredients

1 lb. Ground beef

1 can (6 oz.) tomato paste

1/2 c. Oatmeal

3 Tbs. Finely chopped green pepper or celery

2 Tbs. Bran

2 Tbs. Wheat germ

1 sm. Onion, finely chopped

1 Tbs. Freshly chopped parsley

1 Egg, lightly beaten

1/4 Tsp. Finely chopped garlic

1/2 Tsp. Salt

1/4 Tsp. Freshly ground pepper

Chili sauce

Directions

Preheat oven to 350 degrees. Combine all loaf ingredients, using your hands. Form into loaf and place in 9 X 5 X 3 loaf pan cover with layer of chili sauce (or ketchup if desired) bake 50 minutes to 1 hour. (Do not over bake since part of the secret of fluffiness is shorter cooking time.) Serve the meat loaf sliced and hot. Serves 4. Variation: Half ground veal and half ground beef can be used for the meat loaf – lower in calories.

CHICKEN SALAD PICANTE

Ingredients

4 ea. Breasts, chicken, halves, broiler/fryer, boned, skinned

1/2 c. Dressing, bottled, ranch, fat free (works well with similar chicken salad recipes as well)

2 Tbs. Sauce, picante

1 Tsp. Chili powder, divided

1/4 Tsp. Salt

1 Tbs. Oil, vegetable

4 c. Greens, salad, mixed, torn into bite-sized pieces

1 med. Avocado, peeled, halved, pitted, cut into horizontal slices

1 med. Onion, red, thinly sliced into rings

2 med. Tomatoes, cut in 8 wedges each

2 Tbs. Cilantro, chopped, OR

2 Tbs. Parsley, chopped

Directions

In a small bowl, mix together salad dressing, picante sauce, and a 1/2 Tsp. of chili powder; set aside. Mix the remaining 1/2 Tsp. of chili powder with the salt and sprinkle the mixture over the chicken. Heat the oil to a medium-high temperature in a fry pan. Add chicken and cook, turning, about 8 minutes or until brown and fork tender. Remove the chicken to a cutting board and cut horizontally into 1/2-inch slices.  Place one-fourth of the lettuce on each of four serving plates. On each plate, arrange one sliced chicken breast half over the lettuce. Place avocado, onion, and tomatoes around the chicken. Drizzle 2 Tbs. of dressing over each salad. Sprinkle salad with cilantro or parsley, if desired (works well with many light recipes). Source: Chicken Cookery – 1994. LIGHT PUMPKIN PIE

Ingredients

3 Beaten eggs

1/2 c. Firmly packed brown sugar

1 Tbs. Honey

1 Tsp. Ground ginger

1 Tsp. Cinnamon

1 9-inch deep-dish frozen pie, shell, thawed

1 can (16 oz.) pumpkin

6 pkg. Envelopes low-calorie sweetener

1 Tsp. Nutmeg

1 1/2 c. Nonfat milk

Whipped topping

Orange peel

Directions

Preheat oven to 350 F. 2. In a medium bowl, combine all but milk.

Gradually stir in milk. Spoon mixture into pie shell and bake for 70-80 minutes or until knife inserted halfway between centre and edge comes out clean. Let cool, then garnish each slice with 2 Tbs. of whipped topping and grated orange peel.

First, since it is raining so hard in Puerto Rico, I am listening to Judy Garland sing:
“Singing in the rain.”

1) Start with 3/4 of a large avocado which is ready to be eaten. (They never tell you when they are ready but you know.) Take the seed out.

2) Add Estagan Vinegar and Betys Spanish Olive Oil and about 8 peanuts. (At any point feel free to substitute what you have at hand.)

3) Add curry, dill weed, nutmeg, and grind in pepper.

4) Stir and enjoy with your friends and/or lovely family. Cool, isn’t it, Beave??!!

Ok, I admit I don’t know much about avocado! Am I supposed to peel it then steam it and then puree it for my 7 month old, or can I just scoop the insides out and feed it to her uncooked. Do I mix it with anything or is it okay to be eaten on its own?
