How can I keep my guacamole fresh?
I make guacamole. I scoop out an avocado, add onions, salt, a hot pepper, lime juice, cumin, dried cilantro, and tomatoes. It's great, but no matter what I do I can't keep it in the fridge longer than 12 hours before it starts to turn brown and... well, it doesn't smell so fresh either. I've tried adding more and more lime juice as a preservative, to the point that the last batch was distinctly limey, but still it turned brown. Am I adding something I shouldn't? Am I not adding something I should? I generally store it in the fridge in a small tupperware container; I can't think what else to store it in but maybe that's a problem, too. Help!
I love my guacamole- so I have had this problem. Lime juice is great- and you want to dip your utensils you use on the avocados in lime juice or some lemon juice that has been added to water. This will help keep oxidation away.
Thats for the prep- this is the base you have to start with to keep it green.
As for storage- simple trick. Use your tupperware- but...before you put the lid on place some good plastic wrap, or waxed paper over the tupperware bowl and press down over the surface of the guac- do this every time you get some out- smooth the surface back over and place directly on the surface- being sure to get air bubbles out.
Then lid as normal.
A plain tupperware bowl will still have air in it- no matter what. The wax paper, or plastic wrap keeps the guac seperate from the air trapped inside.
